  3. We have used Daiya shredded cheese substitutes for months and never had a problem yet... or at least anything that we have noticed. We'll keep using it. My son is dairy free (and has a nut allergy) and it's the only way he can have his pizza or mac n cheese now a days. I like it sprinkled onto an egg bake or in tacos.

  10. I don't think there is any real way to know if you were consuming enough gluten, by eating gluten-light, to have a positive celiac test. People produce autoantibodies at different rates so it would be tough to predict. I would guess that you are probably eating enough, especially since you have been increasing your gluten consumption to at least 2 servings...

  15. My fatigue hasn't really improved yet, no. I think I have something else causing it though, and my thyroid mess are not ideal yet. Synthroid has helped my constipation, my hair thinning and my skin is a bit less dry.... It is a slow one treat.

  17. I think the IgA is just one aspect of an active immune system, i believe it concerns areas of the body that has mucus like the intestinal tract and lungs.   19. I honestly haven't used any others, I found this one and stayed. I am a member of other forums for other health issues I have but they are not (unfortunately) as helpful or supportive in their areas as this site is for celiacs. IMHO. I think I'll look at the sites you mentioned though.
  20. I have a Vitamix that could shred a hockey puck to dust. It's my favourite kitchen "power tool". They are very expensive but they last decades. Great for smoothies, soups, food processing and making flours.

  22. My FT4 an FT3 were at the bottom 20% of my lab's normal range when I was first diagnosed hypo because of a TSH of 14 or so. I am now, 8 months later, on 125 mcg. Synthroid and my TSH at 3 something and my Free T's have moved up to the bottom 30% of my lab's normal reference range. My free T's have always been "normal" as has my TPO Ab. Only my TSH and symptoms...

  25. Blood tests are recognized as the most accurate around here. I believe that the medical community does not put much stock in stool or saliva tests.
