  1. I ditto the suggestion of Mayo because they have a renowned specialist there. I think his name is Dr. Murray At the very least, you could call and ask them for a referral to a good celiac doctor in the cities. Oh - If you do go to Rochester, be sure and check out that Gluten Free Cupboard the previous poster mentioned. They are just a little teeny store...
  2. I had to chuckle at your opening line. It reminded me of the confessional as a young catholic girl. The same thing happened to my daughter who is 40. She was at a business meeting luncheon and they sat a plate of mouth watering pasta in front of her. Her intent was just to eat the salad. But she said, "Mom, I just couldn't help myself, I was starving...
  3. I know that you are looking for a recipe for a really good chocolate cake; but, I couldn't help myself...I just had to throw this in. I have been cooking gluten free almost 20 years and was constantly trying to come up with the perfect chocolate cake. A few years ago, I happened upon the Namaste Chocolate Cake Mix. This has got to be the most delicious...
  4. I had some leftover peach pie filling that wouldn't all fit in the pie so decided to try these cheese danish and W-O-W were they ever great. Everyone (gluten free and not) snarfed them right up. While it looks like quite a few ingredients, its really fast. I love the 'combine all ingredients' with no special steps. Thanks for posting- and everyone...
  5. I'm not sure what Larabars are like, but I make a really easy mock "Special K Bar" that is a huge hit at our house. 3 cups of gluten-free cereal (I use a combinatin rice crispy cereal and rice crunchems and corn crunchems or whatever cereal I have on hand) processed a few seconds in food processor to crumble 1/2 c sugar 1/2 c light corn syrup 1/c c...
  6. We all know that microwaving regular buns and bread makes them softer and fresher tasting, even if several days old. But when it comes to Gluten Free items, I read recently that its really a necessity unless they are fresh out of the oven. Apparently, after cooling and sitting, even if in plastic bags, the Xanthum Gum 'sets up' causing a more dry texture...
  7. As JennyC said above, I use Laurie's bread recipe to make my hamburger buns; or Anna's Bread Mix works well too, although a little more spendy. To speed things up and make it easy for me, I have muffin top pans. Since the dough is so sticky, I take an ice cream and deposit a rounded ball of dough in each depression. Then, with a moistened hand I gently...
  8. I'll be shopping for a new stove/oven soon and wonder if anyone has any input info on a convection oven. My husband seems to think it would be best for gluten free baking (like he would know) I do a terrific amount of baking so I wouldn't mind going the extra $ if convection would be better. Kay
  9. One of my favorite things to do when planning a trip is to make "canned bread". You need the wide mouthed canning jars so the bread will slide out easily. Wash and sterilize canning jars, lids and rings. Spray jars with cooking spray. Leave lids and rings in boiling water. Make your favorite bread recipe and fill jars 1/2 full, let rise and bake...
  10. If you want something REALLY great and quick with apples and cinnamon, you've got to try these Apple Spice Muffins: Peel, core and chop 4 apples and toss with cinnamon and sugar to taste; and set aside. Prepare a Namaste Vanilla Cake mix per directions on bag; Stir in apple mixture, spoon into muffin pans and bake. I add some chopped pecans or walnuts...
  11. Here's a really cool one. It tastes terrific and so easy...only three ingredients. Cook l package of Tinkyada Fetuccini only until ala dente, and drain Add 1 jar of Ragu Alfredo Sauce Add 1 bag of California Blend Veggies, thawed and chopped fine Toss lightly and bake in oven until heated through. You can always add pieces of chicken if you...
  12. In addition to keeping your gluten free bread safe in the toaster, you can also use these bags to make a hot sandwich in th toaster too..like toasted ham and cheese, etc; or to heat up pizza without it getting soggy like in the mocrowave.
  13. I have the 250 watt white KitchenAide with 4 1/2 quart bowl and tilt top, which I think is the bottom of the line; and I purchased it at Walmart for $165. I know several have mentioned buying higher wattage, but mine has done a terrific job on anything I've tried and I use it every single day. It has a permanent home on my countertop because I want to make...
  14. I just received a call from a Retirement/Nursing Home (someone had given them my name and number) asking if I could bring them a Brand Name Gluten Free Product List right away as one of their residents who had been very sick has just been diagnosed with celiac; and they need to shop for her. I had a copy, but can't put my hands on it at the moment. Could...
  15. Whenever I make a pie, I save my scraps. I crumble them up with my fingers into small pea size pieces; and then freeze in a tupperware container. I just keep adding to it whenever I make a pie. Then when I need a crumb topping for something, I just grab a handful of my crumbs and toss them with a little brown sugar (& cinnamon if desired) and walla...
  16. Does anyone have a good recipe for puff pastry? There are so many things I'd like to make with it but haven't been able to locate a recipe. Thanks. Kay
  17. Hi Sweetfudge- So sorry its taken me so long to respond, but I've been away from the forum for a while. To answer your question, I started this little gift basket business mostly to fill a need rather than create an income; as I already have a full time job. With so many celiacs in my family, this gluten-free thing has become quite an avocation for me...
  18. Yes, my daughter's test was negative when she tested 3-4 years ago; and she tested 'off the charts' positive just last month. She went through a severe career crisis and some financial difficulty which I assume was her trigger.

    ARCHIVED Cedar Rapids, Iowa

Just thought I'd jump in here to let you know that Mary Greeley Medical Center in Ames, Iowa will do a celiac panel blood test for $20.00 with no doctor's referral. Perhaps if she can obtain a positive blood test, the doctor wouldn't be so resistent to ordering the biopsy. (or if she had a positive blood test maybe the medical center would refer her) ...
  20. I have a question regarding a post I made today. I asked the question if anyone knew if Lame Advertisement were gluten free because a celiac friend of our asked me to inquire. When the post came up[ the words Lame Advertisement were replaced with "Lame Advertisement". Can you tell me why.. or what I did wrong? Thanks
  21. An elderly celiac friend of ours who is very good about his gluten free diet continues to have problems with the big D and cannot seem to pin down his problem. He takes Shaklee "over 50" Multiple Vitamins. I believe its vita gold or something like that. Does anyone know if Lame Advertisement are gluten free? Thanks.
  22. My husband is the celiac at our house; and he gets that horrible debiltating brain fog if he accidently consumes anything with MSG or TBHQ, which are additives in a lot of foods. He said its just like someone turned his switch off. I couldn't believe it the other day when he said he read on the internet that 'frozen fish' contains the highest amounts...
  23. Hi to all you Girl Scout Cookie Lovers: I have a small Gluten Free Gift Basket Business and most of the favored requests of my customers are items that are not commercially availabe to their recipients; and that they really miss alot. This time of year, Girl Scout Thin Mints is a real popular item and I have developed the following recipe that turns...
  24. Crushed Gluten Free corn flakes, with some cinnamon and sugar added make great crumbs, I use it all the time for my cheesecakes and no one can tell the difference. I've also used crushed chocolate sandwich cookies (Kinnetoo's or Midel) to make a chocolate crumb crust for a cheese cake.m That is terrific. Kay
  25. I use Watkins Products chicken and beef flavored soup/broth powders for this. Watkins responded to my inquiry email stating that these products are definitely gluten free. I really like them and my very, very sensitive celiac husband gets along fine when I use them. As for baby formula, I once was out of powdered milk, but had a grandbaby's formula...
