  3. Lots of work and first harvests from the community garden has influenced the menu this week --- Roasted radishes (who knew?!), indian carrot salad, and curried red mustard greens & kidney beans with jasmine rice. Getting in pink / purple carrots this week too!

  5. According to their site, you can cancel by the end of the month to not receive the following month's shipment (and all future shipments). It does not sound like there is a required minimum number of months. The FAQ page also says that you can skip a month if you're traveling. Sounds flexible.

  9. I made a MEATZA. Like pizza, but with seasoned ground beef instead of crust. Bake until cooked, drain off the grease, add toppings and cook until melty. Umm, yeah, nobody really liked this. You have to be a serious carnivore to eat MEATZA and enjoy it. My husband (carnivore) thought it was delicious on a bun -- like a strange hamburger -- but 3/5 of the house...
  10. Haven't been on in a while -- accidental glutening (evil creamed corn!) & return of horrible dh rash have had me feeling pretty like a bad parent. Hopefully we are on the rebound. Tonight was chicken parmesan with just a little dab of sauce. Crusted the chicken with Glutino garlic & parmesan bagel chip crumbs -- each box has a huge amount of crumbs...

  12. Dinner tonight was pork chops, carrots boiled in chicken broth, baked beans, rice & gravy. Yum! Everyone ate the gluten-free gravy with no complaints! Love having my whole family gluten-free so my daughter doesn't have to worry about what to eat at home. She gets enough to worry about everywhere else!

  14. We love the gluten free Pamela's pancakes. My girls want me to make 'snowmen' with them and we sprinkle them with a little powdered sugar. Maybe snowmen with bacon skis? I like little individual items rather than messy plates at that age, so I would definitely skip the syrup. Maybe even roll them around a bacon or sausage and close it with a toothpick? ...
  15. Friday night is pizza night. Bacon smells good in the oven -- as soon as it's ready everyone will fix their own pizza how they like it. I better get in there and chop some veggies!We are using the Pamela's gluten-free bread mix - pizza crust recipe on the back. I'll edit it with a photo when they're out!   16. Lol, Dinner was great too, but I was def more excited about the cupcakes. Dinner was make your own taco salad bar -- all toppings on the counter and everyone puts what they want - taco meat, lettuce, tortilla chips, assorted veggies & cheeses, salsa, dressing. A favorite, for sure!
  17. We made some delicious Strawberry cupcakes by modifying the Betty Crocker gluten-free cake mix. I used 1 box of mix, 1 stick of softened butter, some vanilla, a 10 oz container of strawberry Greek yogurt, about 1/3 packet of strawberry jello, 3 eggs, and about 1/4 cup or a little more of chopped fresh strawberries.   18. A typical lunch box for us consists of two fruits - usually a banana and a buddy orange, yogurt, a piece of turkey, a juice box, and a bag of potato chips. Sometimes she wants a Lara bar or a mozzerella stick. Sometimes we put in carrots & ranch or cut celery.
  19. I really like the Bob's Red Mill gluten free bread recipe that's on the bread mix box. It has a slightly sweeter taste, so it's delicious toasted for breakfast. I also like the Udi's multigrain, but it's $6 a loaf, so probably cheaper to find a good recipe.
  20. How can you tell if your body is just taking a long time to heal or if you need to eliminate other foods? I made some chicken last night coated in corn starch (very good - from gluten-free pinterest board), pan fried in coconut oil and my daughter has been "glutened" since about an hour after we ate it. She's feeling terrible and so am I for not knowing how...
  21. My 9 year old daughter has had this horrible DH rash for 5 years. After 6 weeks gluten free with drastically reduced iodine, it looks totally clear today! I know it could flare up at any moment, but I'm thankful for today.

  23. I understand your substitutions and have a few suggestions. The first is that every recipe that I have tried with coconut flour actually needs much more liquid than the recipe calls for. Like up to a cup more (!!) Maybe it's because of the minimally processed coconut flour that I am using, but it soaks up the liquid and will become VERY dry without a lot...
  24. Here's our action plan so far. Remove dairy / replace with almond milk or rice milk. Drastically reduce sugar - we have replaced it with local honey, but trying to continue to cut out more. Add daily tablet form acidophilous, kefir smoothie (says its over 99% lactose free), and water kefir for probiotics. (I had not heard that kefir can cause problems...
