  1. I hope that all of our members in the Gulf Region remain safe from Gustav. Hitting at a Category 4 (more than Katrina) the storm serge will overtop the levies. Storms like these can move one heck of a lot of water.

    I've been through a Category 2 direct hit and it is truly is terrifying. I can't fathom a Cat 4.

    It is important for those following a gluten-free diet to incorporate the latest valid scientific information into their diets. Under current Australian food law,

    glucose, glucose syrup and caramel colour are "gluten-free",

    even if derived from wheat, as the wheat is so highly processed,

    there is no gluten detected.

    Glucose, glucose syrup, caramel and similar ingredients have no detectable gluten, even if derived from wheat.

    Accuracy of "Gluten-Free" Labels

    The legal definition of the phrase "gluten-free" varies from country to country.     Australian standards reserve the "gluten free" label for foods with less than 5 parts per million of gluten, as this is the smallest amount currently detectable.

    It would seem that under present US law sources must be stated ie. Glucose Syrup (from Wheat)

    That however doesn't necessarily mean it contains sufficient levels of gluten to be harmful ie. < 5PPM

    .

    I don't know if this helps to explain the situation, or just makes it more complicated.

  4. Also, forgot to add, I am Vitamin D deficiant, and have a lung nodule, but not one doc can tell me why. Could the vitamin D, be because of celiac?

    Celiac Disease has over 200 symptoms and deficiencies plays a big role. Enterolabs cannot diagnose Celiac, but the can tell you if you have sensitivities to certain foods. I have not used them, so I don't recommend them.

    I would request the pathology report from your colon and endoscopy. Many people here can help you interpret them.

    These are the test that should be ordered for Celiac:

    Anti-gliadin antibodies (AGA) both IgA and IgG

    Anti-endomysial antibodies (EMA) - IgA

    Anti-tissue transglutaminase antibodies (tTG) - IgA

    Total IgA level.

  5. hi, My husband was just diagnosed with celiac desease. I am trying to read these labels, some are confusing, some I can handle. For example: I called the Ragu company they make spagetti sauce the label shows all natural ingredients, but does not say it is gluten free. Should I believe them when they tell me it is gluten free or should I look strictly for gluten free labeling? If anyone has an answer I would appreciate the help.

    A gluten free label means that there is no gluten added. There is no guarantee that anything is 100% unless you grow you own food. The US is working on a standard for labeling gluten free, but until then you should contact the companies. If you are looking for foods labeled gluten free, although they are more plentiful today, I am afraid you might starve to death.

    Wheat, by law, if an ingredient, must be listed in the ingredient listing or in the allergen statement. Rye, barley and malt can hide in names such as "natural flavors" and "spices".

  6. Celiac Disease is covered under the Americans With Disability Act Open Original Shared Link , specifically in regards to discrimination and equal rights for the employed.

    You may deduct a portion of your gluten free spending, but it is cumbersome in it's paperwork and realizes minimum relief: https://www.celiac.com/categories/Celiac-Di...Deduction-Info/

    It is not considered a non- functioning disability because of it's "cure" is strictly dietary. Therefore, Celiac Disease is not subject to disability benefits.

    The diet does not have to be expensive and the good people here can show you how to work it.

    That's how I was when I started here, just bones.

    Your recovery will depend on the extent of damage you have had. And, that will depend on whether you have an intolerance, allergy or Celiac.

    The diet can be very complex, especially in the beginning. Keep things simple as meats, seafood, rice, potatoes, fresh veggies and fruit. Check your meds, shampoo and lotions.

    It is recommended not to begin the diet until all testing is complete. It will increase inaccuracy in testing.

  8. I use my Triumph Dining Cards when I order and I usually get steamed veggies and chicken. Steamed Rice will be fine and you can add your own gluten free soy sauce.

    It's not wonderful, but it works.
