  1. I don't understand the sense of entitlement about eating in restaurants. It's a place of business, not a public park. If you think it's unfair to be barred from bringing your own food in, is the "No shirt, no shoes, no service" policy out of line?

    I also don't understand why anyone would threaten restaurant personnel with legal action or projectile vomiting when you eat restaurant-prepared food at your own risk.

    I like this common sense.

    wasn't the best either, sore throat and fever. There must be something going around, her father even got hot last night.

    Now we know why parents are screaming for better education for our kids!

  3. Hi! Almost two years ago, I was horribly sick. I had a few blood tests taken & my celiac blood test came back positive. I immediately went gluten-free & didn't get any other tests. I felt amazingly better once i started eating gluten-free, & every time some gluten accidentally slipped in i would get major D, cramping, and i would just feel terrible. Around November i found out that some tacos i ate a few days before had gluten in them. But i had no reaction. A few weeks ago I got up enough courage to try some gluten...i have no idea why. But i really felt like a powdered donut. I ate one tiny powdered donut...no reaction. I ate a package of 5 powdered donuts...no reaction. Throughout the last few weeks I have ate pizza, sandwiches, lasgana, lots & lots of donuts, & poptarts and I have had NO reaction. It's actually amazing me. I feel great, & i've had no symptoms whatsoever. But I just think its so weird! Can Celiac go away just as fast as it started? Any ideas? Did i ever really have Celiac? :huh:

    I have been gluten free for over 2 and 1/2 years. I do not react now (from certain cc over the past year). I consider myself in remission. It would take repeated glutenings over an unknown period of time for me to react.

    With that said, I am certain that whatever gluten that I would consume would be doing damage to my intestines. A build-up of that damage could put me back to where I was at my sickest. I choose not to take that road.

    Celiac does not go away, it can go into remission with a complete gluten free diet. Cherish your health and stop the gluten. :)

  4. So I moved out of my apartment, my gluten-free sanctuary Dec. 15. I have been at the mercy of highways, family, and friends since then. This is my first major travel endeavor since going gluten-free. I recalled from my food science class that vinegar's acidic nature destroyed proteins, which may or may not be beneficial in cooking depending on what you want to make..blah blah blah. If it can dissolve egg proteins, why not gluten??? Because really all you need is to break one little amino acid off that chain and we can eat the stuff no problemo.

    Long story short it's been working fantastically for me. Pour some vinegar in a skillet, I can eat out of it. Pour some vinegar on silverware, I can eat off it. (User beware: rinse it off it clean water first unless you want a surprise in your mouth.)

    I'm curious if anyone else has tried this. Does it work or not work for you? I feel I should consult with fellow gluten-free people before I recommend this to anyone.

    And please, of course, don't gluten something then vinegar it...I don't want anyone getting sick off of this. But if you're traveling or a situation arises, try it...be sure to use a clean paper towel to smear the vinegar around. Make sure the dishes are otherwise clean; I'm fairly certain you can't pour vinegar on large bread particles to make them gluten-free you know...still take precautions. I also haven't tried it on anything wooden, I hear those are bears to try to clean.

    Pop me some opinions!!

  5. I just read that cheese was not gluten free!! I was diagnosed 2 years ago and I sometimes get symptoms I do not know what I ate to bring them on. I thought only processed cheese, like Velveeta or Merkts' or Cheese Whiz had gluten. Does a block of Chedder Cheese or Monterey Jack really have gluten? Maybe that is where my mysterious symptoms have been coming from! Please help....

    Cheese does not contain gluten. Only a few blue cheeses have bread mold starters. Kraft is a great company that will list all forms of gluten clearly (as in wheat, malt, ryle, barley). If it's not in the ingredients, not there.

    Some processed cheese may have gluten and I am not familiar with the ingredients of the brands that you mentioned.

    Where did you read that cheese has gluten?

  6. Yes, the Celiac Disease Foundation is doing great work in this area.

    I have been a member of the CDF and also serve as a local contact. Through membership you are sent a great newsletter with the current publication material, restaurants, product news, chef's corner, book reviews, helping others, food label undates, etc.... I reference their newsletter quite often here. There ongoing goal is to get information into the doctors offices, healthfood stores and markets.

  7. Hey Everyone!

    I've been gluten free now since summer and I'm happy to say I have been feeling quite a bit better. I have good days and bad days but the bad days are now alot less.

    I have noticed that I still have really bad anxiety at times. The last couple times I was on a plane I have had panic attacks and my anxiety has been insane. I am not scared of flying, I have never had a problem with flying before. But, for some reason now that I have Celiac I can't handle being on a plane.

    I want to go on another trip at the end of January but I know I can't unless I get some sort of medication. I'm going to go to the Doctors but they haven't been much help to me since I've been diagnosed so I thought I would come here first and see if any of you have had the same problem and if something has helped you.

    I am glad that you feel that you are doing better on the gluten free diet. I think as you continue you will feel better and your anxiety will slowly fade. The odd thing about anxiety is that the the fear of being anxious will cause the anxiety. Perhaps a minor relaxant may be helpful.

    I had the same reaction to bridges. We live in a land with many bridges. We have high ones, skinny ones, low ones and long ones. I had to put my head down (not driving :unsure: ) and I could feel my heart race and my palms sweat. I think a lot of it had to do with my husband multi-tasking at the highest point of the bridge. Ugg :(

    My bridge anxiety has faded and it's almost gone. Don't know why.

    Regarding airplanes. I am married to an airline pilot and he wants to get back to his family just as much as his passengers do. His butt is on that airplane too. You will be safe. :)

    There is no master list of gluten free products because the ingredients change so frequently. The key to success is to learn to read labels.

    Dairy is absorbed on the tips of the villi. If you have flattened, burnt villi or destroyed it can't absorb and will pass through as if gluten. Some healing is recommended before you re-introduce dairy. If you see no improvement on the gluten free diet, try to cut our dairy for a short time and see if you have any improvement.

  9. Your chili looks good. But, the longer you have been gluten free, your reaction time may be delayed. Although everyone is different. Are you sure it was the chili? (I know Campbell's Tomato US is gluten free, not sure about Canadian Campbell's)

  10. Now that I think about it, I think the opioid peptides actually come from the gluten itself. They end up going through the intestinal wall and crossing the blood brain barrier. (I obviously need to learn more about this. lol) Let me see if I can find the article I read...

    Okay, got it.

    However, perhaps when we eat things that are poison to our bodies it's reaction to pain and/or danger is to be expected? I have read about how people who lack the enzymes to digest certain sugars can become addicted to them because of the release of endorphins, which can be addictive.

    Also, some people (especially people who can't absorb the nutrients from their food?) have low levels of norepinephrine (not to mentioned other neurotransmitters) because the proteins we eat contain amino acids that are precursers to neurotransmitters such as dopamine, norepinephrine, and seratonin. I've got a chart in my photobucket about how low levels of these things can cause addictions and other symptoms.

    So yeah, a lot of food containing gluten are also starchy. Cravings for bread or pasta (among other things, as you can see) could be the result of malabsorbtion.

    Now, having said all that, I've read that many people go through a week or so of withdrawals when they stop consuming foods they're intolerant to. Taking certain supplements can help with this. When I stopped eating gluten for a week and a half as an experiment, I didn't go through any type of withdrawal, but I was taking some of the supplements listed in that chart as well as L-glutamine and a good multivitamin. The one that seems to help me the most is DLPA (listed in the chart as DL-phenylalanine).
