I am also a fan of Jovial's gluten-free pastas, especially their tagliatelle, but they are not easy to find. What are these magical crackers that everyone is speaking of?   14. I would also add that bone broth would be a good thing for you to be drinking - lots of minerals, very healing for the gut, and gelatin for tissue repair. You can make it with chicken if you are adverse to red meat bones. Just be sure to include some feet. Sounds crazy but it's very tasty! It's not hard to make if you have a crock pot. Time and patience...

  17. Oh I am sure I am being OVERLY cautious/nervous/persnickety That may fade in time (the anxiety goes away, right? Right? ) but it's what makes me comfortable right now. Luckily, there are plenty of grocery options in my city!

If I travel it will either be to stay at a place with a kitchen (bringing my own utensils and cutting boards). I used to buy all my nuts at TJ's - now those nuts look positively manky. Re: flax seeds: grind 'em up and add them to baked goods or on top of porridge.
  22. This! This! This! My biopsies and blood tests were all negative, but there is no way, no how I will EVER want to eat gluten anything, ever again. (Just check out my pictures in the DH photo bank, page 7 and you'll know why). I suspect all my tests were negative because I was gluten "light" for several years beforehand, on account of living with someone...

So, this guy is a total spazz but actually does a pretty good job of explaining the autoimmune response to gluten (or, gliadin, as it were) But, here's the thing: if eating gluten makes you feel bad and avoiding it makes you feel better, I think it best to avoid it, whether or not you fully understand the difference between allergy or autoimmunity...
