Good thing about having a walmart is if it is a walmart with groceries you should be able to find enough to feed yourself half decently. Much safer than a fast food place with no gluten-free menu. If it is not a super walmart and just a regular, you still should be able to find enough snacky type items to fill your belly. Or of course, tote your own. ... -
Intermittent leave with FMLA is the way to go. Contact your HR dept ASAP and ask them for the forms you need and if you are FMLA eligible. They won't pay you for the days off, but it will protect your job so when you get better it is still there.

Bobs red mill has gluten-free corn meal and gluten-free corn flour (fine ground). I use those. I know there are others out there, but due to possible CC, I would definitely pick one up that is labeled gluten-free and tested by the company. -

Karen and SMRI said it before I could! If you have a ton of trouble, broth is very easy to make, and you can freeze it in ice cube trays and pop out just what you need. Generally, people who have had bad damage from untreated Celiac do not absorb what they need from their food, and that can lead to low weight. That may burn out the motor if you give it too much of a workload. All of the kitchenaid mixers are rated for how many cups of flour they can deal with at a time for thick stuff like bread making. Please note that not all lentils are contaminated in processing, and when not adulterated, lentils are a gluten-free food. As in anything, shared equipment can lead to contamination, whether it is frozen veggies, baked goods, anything really, and you can find plenty of sources that are safe.
