I think saturated fats are horribly maligned. Can you eat dairy products? It is easy to get fats and calories if you include whole milk dairy products like Greek yogurt (oh god, I miss that), cheese, etc. Give the Greek Yogurt a try if you can find it, it is amazing stuff. The greeks eat it with honey. -
I think it takes me 5 minutes to prepare my breakfast & lunch for work. I've got it down to a science. I eat my breaky at work too.

Didn't you post almost this exact same thing a couple months back? Don't blame it on your lack of official diagnosis, there's plenty of people with the official diagnosis that have the same issues. At least you get some good strong signals that what you're doing is hurting you, some of us don't get that until we've really gone way overboard. -
How about buying some good sausages and just microwaving one in the morning? Hardly counts as cooking. I get some from Trader Joe's, chicken/turkey/garlic sausage. Short and sweet ingredient list. It's hard to stay paleo unless you want to consume uncooked or powdered eggs in a smoothie. To me, cleaning up the blender is more work than microwaving...

I would imagine casein has it's own antibodies, like eggs, yeast, soy and everything else. So if you're looking for a specific antibody it is a reaction to that protein, not some other protein. -
There's probably an element of withdrawl symptoms from gluten (and dairy) since they break down into opiod like peptides. Give it a couple of weeks, you should start feeling better very soon.

I just started my sour dough using kefir and coconut flour with a bit of corn starch for the bacteria to eat. I'll let you know how it comes out, I think it has to sit awhile. -

Lots of people have gone gluten free after having failed blood tests, and felt MUCH better. Obvious to us, if not doctors, that the blood tests are defective. Cows are geared towards digesting grasses. Grains give them a really acidic stomach so they have to keep them on antibiotics so they don't die of horrible stomach infections. So no, having 4 stomachs doesn't help out a cow being fed grain. :\ -

You can't kill gluten because it isn't alive to begin with. About the best you can do is disassemble it into smaller bits (molecularily speaking) or wash it down the drain. The way we "use" proteins in our bodies is we have these enzymes that shear them to bits and eventually they're torn down into amino acids. It's really not possible to emulate that... -

Sorry: On restrospect, not new research, old research no one seems to have read. I think parents figured this out LONG before doctors and researchers. Kudos to you bright folks! You don't need a Dr's diagnosis. That's just emotional wishy-washiness which other people will pick up on unless you're firm. Simply take a firm stance and say "NO! I do not eat wheat. I have celiacs". Glare if you need to. The husband will most likely come along as long if you're resolute. And remind me of all this resolve when I have visitors coming... -

Start slowly! Your body needs to gear up to produce the proper enzymes to digest the meat. Might take a couple of weeks to adapt. I was once vegetarian, had horrible problems with blood sugar. Would probably be diabetic by now if I'd kept it up. I'm finding the Paleo diet is doing me a lot of good. -
Another thing they do is pay doctors to talk to other doctors, at an expensive lunch or whatever. There are a bunch of spondyarthropathies (ones that cause fusing). You really need a better rhuemy. There's at least one sort that is connected to food poisoning. I think I'm discovering I'm a hypoglycemic. I just bought a glucose monitor out of curiousity. I eat a very low GI diet (no starches and sugars except maybe a couple times a month). I just tested myself after getting home from work and my glucose level was 58! I had 1 oz of almonds about 90 minutes before. I don't get the classic symptoms of hypoglycemia...
