  1. I had a diagnosis of an autoimmune disease that was pretty awful, basically I hurt in every joint, sometimes even my ribs. Giving up gluten and adopting a paleo diet I eliminated all those symptoms and got off the meds. Basically I don't eat any grains, legumes or dairy, although I cheat on the legume restriction a bit. I eat a lot spices, coconut milk...
  2. Yeah, sounds like blood sugar to me too. I don't have those issues when I eat a meal with plenty of fat and protein and limited carbs. There's a reason our ancestors ate bacon and eggs for breakfast.
  3. I think with kosher chickens they don't use any plumping solutions.
  4. Maybe you have a fructose intolerance. Meat is good stuff. It just isn't very fashionable right now.
  5. I think the CC happens when it's harvested and stored. It might get stored in an area where wheat is stored or shipped in containers that contained wheat last shipment, that sort of thing. Overall I feel better giving up grains entirely. Might be something you should consider.
  6. I hear ranges going from .50 - 1.0 gram per kg of body weight (probably even more). Vegans tend to defend the low end of the range, body builders and low carbers defend the upper range. I go for about .8 - 1.0 per kg of desired body weight (not actual).
  7. I find it's always best to get copies of the test yourself because doctors don't tell you stuff fairly often. Even my cat's vet! Grrrr... So kudos to the OP for being so smart as to get the test results. I also agree that eating as few manufactured foods as possible is best. Whole foods that aren't coming down an assembly line is healthiest, not...
  8. Check out all the studies and stuff in The Gluten File (in my signature). Good luck! I hope you can convince her.
  9. I'd be suspicious of something new you've added to her diet to replace gluten containing foods. Could you back off on the manufactured products and stick to whole, natural foods like meat, fish, veggies, fruit?
  10. Just as an aside, you can be slender and have type 2 diabetes also. It isn't all that rare actually.
  11. Glad you find Paleo works for you. It does for me too, had a lot of issues clear up on the diet. *cheers* IMHO, probiotics are vastly overhyped. I've tried many and never had a single one do anything for me.
  12. There's another post on another forum about Rice Dream that might be of interest: Open Original Shared Link Here's a direct link: Open Original Shared Link For some reason, I have to click somewhere in the page before it actually loads, so if you see a blank screen on that link, just click the page and it should reload.
  13. Nothing creates more cravings than caving into them. Seriously you just need to stop eating the stuff you crave. If it helps, make substitutes using non-caloric sweeteners (loads of them out there nowadays, many very natural options). I used to make sugar free cheesecakes and use nuts for the crust. I can point you to a cooking forum specially for low...
  14. I found that coffee was irritating to my gut. I'd been a big coffee drinker for 30 years and finally cut it out and had a lot of issues with my GI tract clear up.
  15. I think most of us realize that we do have to stay gluten free for our lives. I suspect people who go back on it are going to be ok for awhile but the damage will accumulate and eventually cause noticeable problems.
  16. A lot of people intolerant of gluten also have issues with dairy. It's probably a good idea to at some point eliminate dairy for a couple of weeks and see if it makes a difference in your health.
  17. I don't eat much "factory food" but perhaps you've got some other intolerances? I found quite a few things irritate my symptoms like: nuts, coffee, maybe soy, possibly dairy, chocolate. Lots of people find corn problematic.
  18. I have an acquaintance who lost her asthma when she gave up dairy. I think these things are often related!
  19. Get more protein and fat at breakfast. I'd have a few slices of bacon with those eggs. Cereal is a lousy thing to eat. Just makes your blood sugar skyrocket and the resulting insulin response will leave you hungry shortly.
  20. Not sure about all those tests but I believe IGG means you're having a response to gluten. It may not be Celiac disease but you're creating autobodies to it. Many of us are in that boat and just find we're a hell of a lot healthier without gluten in the diet.
  21. It depends on what you eat, a low carb diet can be pretty low in undigested residue. If you don't feel bloated or uncomfortable then you're fine if you don't go everyday.
  22. I controll my blood sugar with a low carb diet. You might want to check out Dr. Bernstein's book: Open Original Shared Link I know a lot of people controlling their BG with diets like his, my own included.
  23. I went gluten-free without a formal diagnosis and would do it again in a heart beat. I feel so much better. Honestly, I think people make FAR too much fuss and drama over going gluten-free, especially doctors. I mean, you'd think it was like removing an eyeball or something. It isn't that hard to do once you put your mind to it and the payoff can...
  24. Personally I feel like eliminating all the possible problems is the best way to go, that's why I follow a Paleo like diet. No grains, no dairy, no legumes. That removes pretty much all the top food allergens except eggs. If things continue I try to eliminate more and see what it was that was bugging my gut. For instance, looks like seeds and nuts are...
  25. I think it was Michael Pollan that pointed out that beef turns water and sunshine (aka grass) into protein. Unfortunately our current animal husbandry practices are kind of awful. But our agricultural practices aren't so hot either. All that grain requires a lot of fertilizer, which runs off into the water and eventually the ocean and that causes over...
