There are a lot of false negatives but I don't think false positives are possible. Some of us are having luck with the SCD diet in getting to the bottom of ongoing bowel issues. You might give it a look over (link in my signature). I am also intolerant of milk products. -

You should go see a rhuemy. You might have a type of arthritis trigger by a bacterial infection, like food poisoning. They're called a "reactive arthritis". There are arthritises caused by autoimmune disease, but they're closely linked gluten intolerance. Anyway, I really recommend anyone have arthritis in many joints go see a rhuematologist... -

If it doesn't go away, get to a good rheumatologist. I found out I have another autoimmune disease which affects my joints. They've got some pretty good treatments now, so suffering in silence isn't necessary. -

Well, this is probably an idea that most would reject out-of-hand but I find a diet that doesn't include a lot of starchy, manufactured stuff is relatively inexpensive and very healthy. I eat meat, veggies, fruits, nuts, eggs, that sort of thing. -

I'm also intolerant of a lot of foods. Surprisingly humans haven't been eating grains for all that long. Only a few thousand years in some areas. So, what did humans eat before grains and convience foods came along? Fruits, vegetables, meat, maybe eggs and nuts. If you're doing the testing keep eating gluten. Not eating gluten will skew the results so you might get a false negative. Some of us opt out of all the testing and just try a gluten-free diet. My doctors accepted the results of that as proof that I am sensitive to gluten. -

Going without dairy is tough. I gave it up on Jan 1, 2006. After a farewell ice cream orgy. I had the feeling of loss too, even worse than with gluten. However, I'm adjusting! I'm finding great new recipes for meat and veggies and stuff that don't include starches or gluten or dairy. I found a great cookbook and I'm looking forward to using it... -

I used to eat Greek yogurt on Atkins, it is very low carb. But you'd want to wait until after the first 2 weeks. I know what you mean, CMCM, I'm active on a low carb forum and there are all these people saying, "My IBS and arthritis cleared up because of low carb". Heh! I don't believe you can really count on enzyme supplements you ingest will get to where they need to be to help break down the stuff you're eating. Even if they do manage to survive to get to the place in your GI tract they need to be, they might get there ahead or just after your food does. It's like trying to jump onto a bobsled! -

Basically it is a couple of cups of non-starchy veggies per day (I eat more than that though because salad greens have virtually no carbs). And then foods like meats, eggs, low-carb diary (if you can handle it), fruits can be berries (no sugar). That's for the first two weeks, keeping carbs at 20g per day. For pizza I used to use this recipe during my low-carb days, it was fantastic and I never missed the crust. It had all the flavors I loved best. I kind of doubt they'd do that sort of study on humans, at least intentionally, since it is kind of like wondering how much poison you can give someone without making them really, really sick. Instead, wouldn't you do things like rat/mice studies?
