  1. even than three years ago! just to echo what Richard is saying, as we transition *into* having a definition for "gluten free", you're going to notice CYA statements that say things like "our products have less than 20ppm gluten" (or whatever the level is set at for what "gluten free" means, and we've already had the discussion as to why it is not legally...
  2. It's vital to determine if this is actually a change in anything they're doing, or a change in the wording due to the requirement of a definition of gluten free. Saying that they comply with 20ppm is not the same as saying they *have* 20ppm in their products. They more than likely haven't changed a darn thing (costs for that would be very high), but merely...
  3. chances are, the stiff neck is causing the headache. many chronic headaches are caused by the muscles in the neck, which connect to the head. so, bad cervical alignment, posture, and stress which causes excess and/or prolonged neck tension all contribute to headaches. (I get these, in addition to migraines, and they are often horrid.) but food intolerances...
  4. both the mold or the ozone could be making you feel worse. if you have asthma, the ozone generating machine is a NO-NO-NO-NO! but the mold can make anyone sick, and given the smell, there's a pretty decent chance. where to go with that? talk to your doctor, and if it's not a tiny company, talk to HR or safety. if it's a tiny company... you can consider...
  5. it wasn't premade patties that had breadcrumbs added - it was just a package of ground beef I saw in the meat counter. I checked it, saw it had ingredients, which included wheat. (and promptly recoiled in horror!) totally easy to accidentally pick that up because you *don't* expect an ingredient list on a 1.x pound package of "ground beef".
  6. lunch meat sliced at the deli counter, however, is *very* prone to contamination. there are some lunch meats that are NOT gluten free. and, actually, you can buy hamburger meat at the store that has breadcrumbs already in it for making hamburgers. (saw it on a business trip once.) heck, even self-basting turkeys aren't a safe option.
  7. Most bacon does not contain gluten (I think the McDonalds one does??). But you still need to check *anything* that you consume.

(un?)fortunately, we have blackberries growing out the wazoo behind our house, so I can pick pounds of them come late summer. but trying to keep them *out* of the yard is the challenge. we have two cherry trees (that we can't harvest cherries from, because it's too tall and the birds get them first), and in theory four plum trees, but I haven't seen...
  9. and try to determine if you're lactose intolerant. distended abdomen and lots of gas are very classic signs of lactose intolerance.
  10. it's true, sometimes you do just have to know. when my blood tests were inconclusive, I did a dietary challenge - vital wheat gluten (I had it around for baking), in yogurt. it was disgusting, and I felt horrid for the next week. but man, do I know!
  11. that reminds me - I never see muffin recipes (or any baking recipe) *describe* the consistency. I once asked my MIL to teach me how to make her banana muffins (before I was gluten-free), and she tried to describe it, then just said, "wait 'til you're here, so I can show you the consistency, because it's different from other muffins", and that really was...
  12. perhaps they need more moisture (fats, in particular). muffin batter should be pretty darn thin, in comparison to bread batter, for instance.

  14. The Carlson's one is the same that I've got - I have the liquid, because I'm supposed to take 6-8g per day!!! (inflammation) They, and Spectrum, don't list their oils as soy free, because of the vit E, I believe. The cod liver oil is fine for omega-3's. If you're looking for anti-inflammatory purposes, there's supposed to be a 2:1 EPA:DHA ratio...
  15. garlic juice? no no no. fresh garlic, crushed. there's really no substitute for fresh, I'm afraid. I know it's a pain, but there it is. I don't think the rice cooker will get hot enough to fry the onions, but you can just cook it in a regular pan, sautee the onions there (heck, caramelizing them could be tasty too, but I'm hardly ever brave enough...
  16. we just planted a bunch of strawberries in our garden today! while my absolute favorite way to eat strawberries is straight up, cool from the fridge, dipping them in chocolate pudding is good too.
  17. Is it the vitamin E source that you're worried about? The Open Original Shared Link fish oil doesn't list any soy. Same thing with Carlson Labs. But I don't think you're going to find fish oil w/o vitamin E... (It's the preservative they tend to use...)

  20. have you tried any of the following? almond milk (I use almond breeze) rice milk (not rice dream, but trader joe's makes a good one) hemp milk (a couple companies make it) dari-free (potato based)
  21. to replace the cheese, I use mashed avocado. it works great in a vegetable lasagna. (the recipe is on my 'as promised, a few recipes' post.) I've served it to lots of non-gluten-free people, and while it's not what you originally expect out of lasagna, they all like it. what about chili or soup or stew or stir fry? all easy, one pot dishes.
  22. the IgA test can tell you anything if they didn't have a total IgA taken as well. a nontrivial portion of celiacs are IgA deficient. I'd either ask for *full* testing, or try the diet and see how it goes.
  23. we did 2.5 weeks on kauaii. oh yeah!!! no resort, just bed and breakfasts. a little hiking, a lot of snorkeling, and just randomly walking around and taking it easy. I'd been told they 'operate on a different time scale', and man do they, and we quite enjoyed it. (all except getting sick on the catamaran ride out for a snorkelling trip. the helicopter...

I know there's a soy free milk alternative out there... as for rice, there are two things I'd suggest. one is letting your tastebuds adapt to less strongly flavored food. yes - they will. second, is pairing the rice with veggies (cooked) and meats that provide...
  25. croissant or strawberry shortcake (the light, fluffy kind). or anything from phyllo, really. oh, and oatmeal. nothing tastes the same as steel cut oatmeal! (I think I react to it.)
