  1. And sometimes we have problems that are independent of celiac disease. I have migraines, that became an issue two years *after* going gluten free, and appear to be unrelated to celiac (or any other food trigger I can identify).   4. are you getting enough fat/fiber/protein? what you list there, aside from the cottage cheese, looks like it's probably pretty high in sugar and not too helpful to balanced blood sugar levels... that'll keep you hungry and snacking.
  5. To be fair, I would probably give similar, albeit caveated, advice. I would probably also tell someone "It's not that serious, as long as you make sure to avoid all gluten." We can't tell you if lactase (the enzyme that is the main 'ingredient' in lactaid pills/drops) will help because we can't tell if the problem you have is with lactose (the milk sugar) and not producing enough of the enzyme internally to break it down, or if the problem is an intolerance to casein (the milk protein) and your immune system reacting to that...
  8. Growing up, I wasn't gluten free at all, but didn't know, for 15 years!, that some people used wheat flour for gravy. We *ALWAYS* used cornstarch. Always make a slurry first, and then use what you like - cornstarch, rice flour, or another flour. Some types won't work well - potato flour? I think? or it's the potato starch? I'd have to check a cookbook...

  10. hannahsue, I would *highly* encourage you and your husband to get counseling. this isn't about you not feeling well, or whining; this is about him not having control. it screams it. you two need to learn how to communicate and work together.

    I just complete my snacks into mini-meals - veggies have hummus, apples have peanut butter, tortilla chips have chunky salsa w/ beans. Small amounts of other types of things work well too - asian chicken salad, bean salad, chicken soup, etc.
  12. It's possible to have celiac *AND* have foods bother your stomach. Though, if it's 30 minutes after eating a banana, chances are it's not purely *stomach* pain - it's at least moving on past the stomach.
  13. I think it's good to have all this information. If I know that a product is supposed to be gluten-free, but people have reacted to it, I'm going to approach it differently than if no one has ever reacted to it, than if I have no information on it. It's all useful information in it's nuances.

  15. You need to get ahold of the lab (or have your doctor do so) to find out what the reference ranges are. Without those, you can't really interpret the results.

  17. I'm also very undecided on enterolab, and despite inconclusive blood tests and no biopsy, I haven't used their tests. I did a dietary challenge, got sick when I ate gluten after a month gluten free, and decided that was my answer. That was sufficient for me - and my doctor. So that's that. Do what you need to do.   18. When you say "stomach pain" *WHERE* do you mean? The stomach is actually in the rib cage, fairly far above the belly button. So, in the middle of your abdomen, around the belly button or below it, is really intestinal pain. I definitely do get that - not as bad as what you describe, but bad enough at times. Usually not shards-of-glass, but it's happened...

First, is the identification of the gluten sensitivity genes by the Enterolab test. Those weren't tested for by a regular, 'mainstream' lab. I think it's also important to consider that there isn't necessarily a right answer, so what may seem like arguing to one person, who's expecting one black and white answer, may actually be good discussion to others. Not to mention the fact that it can be very, very difficult to determine what is arguing and what is friendly discussion via just written online...

  23. What was on the beef? How was it cooked? Did you have *anything* else within four hours? Did you swallow much air with it? Lots of questions here.
  24. It is NOT rude to not make yourself sick. If I can't find something at a place that won't make me sick - and no place can GUARANTEE no contamination risks - then I'll not eat. I may bring something with me, but more often I'll eat ahead, as that's easier. I'm going out with friends to socialize, not just to get sustenance.
