Given the reaction you had, if this was the first time recently you'd had any soy, I would encourage you avoid the soy for now, and go to your doctor (or an allergist if you can self-refer) and get tested for allergies. This would be caused by an allergy, not an intolerance (like celiac), and given the reaction, is *not* something you want to 'test' at home...
  2. I'm only Gluten-free Casein-free. I try to limit soy, and I limit corn (particularly chips...), and I limit sugars, but don't eliminate it completely. Mostly I just eat healthy, as it seems silly not to (and less tasty ).
  3. If he's quite certain it's DH, then no, sticking to the diet is all you need to do. (Well, reduce your iodine intake until it goes away - iodine is part of the chemical reaction in the skin that causes DH.)
  4. Yep, I think you've doomed yourself with the "not even a trace". A restaurant kitchen is simply not that sterile of a place, and they're being honest in response to your request that they can't give you anything that certain.
  5. Yep, I won't share a beverage with him if he has any after eating something with gluten. I'm sure coworkers think it's weird when I go up to his desk, and ask "Is your gatorade safe?" with a hand motion of going to pick it up, but backwash exists, and his breakfast is a granola bar!

  10. I get dizziness/brain fog in 15-30 minutes, intestinal cramping/some pain in 4-8 hours, intestinal noises and diarhhea in 8-12 hours or so. Fatigue sets in within a day or so. This is approximate for me, and it can vary.
