  1. Oh yeah... you can do all sorts of things with it... I did one where I chopped up some dried cranberries a bit and mixed it in with the brownie. I coated another version in coconut flakes, though after having tried real coconut, next time, I'll just blend some fresh coconut meat in with the cocoa and dates. I added a bunch of coarsely chopped almonds...
  2. What are you eating? If you're eating most of your calories from meat and cheese or the like, or low-fiber foods, you don't produce as much stool - there's less insoluble stuff for your body to get rid of. As for the weight gain... yeah... that eating too much thing will do it every time. ;-) (I say that in sympathy - 10lbs this year from a stressful...

  4. I use real maple syrup (can't stand the fake stuff... who needs "high-fructose corn syrup"!), but if quantity is an issue, maybe you could try using fruit jam instead (don't need as much to get quite a big flavor) on the pancakes. That's what I really use, if any is available!

  10. Oils are fine, as is the apple sauce substitution. Nut oils (like macadamia nut in chocolate cookies) can add interesting flavors as well. Stick with canola if you don't want to add flavor.
  11. I'm sorry that you got glutened by ice cream. It can be so easy to overlook those ingredients, I know, which is why I'll often read them over, slowly, two or three times! Would a doctor's note to your workplace help at all?
  12. give it 3 months before testing - yes, while eating gluten at that rate. I know it sucks, but that's the recommendation for reducing your risk of false negatives. though you may be able to have the rash biopsied now to find out if it's DH. that could speed up the process.
  13. As long as you are eating gluten-free, you are not producing any antibodies to pass through the breast milk. Do continue breastfeeding.
  14. It could well be celiac. I would encourage you to: 1. get the skin rashes biopsied for DH 2. get a doctor to run the full celiac panel of blood work on you 3. regardless of the results, after all testing is complete, try the gluten-free diet (strictly) for three months You have nothing to lose by being tested, and potentially, quite a bit to gain.

  16. Rice is it's own plant... so it can't be made out of other things. "Brown" rice just means that the germ hasn't been processed off of the grain. What brand of rice cake was it? Cross-contamination is an issue for a few companies (like Quaker), but it cold also be an allergy to rice as well...
  17. Huh... I generally don't have that problem. Most likely, your batter was too thick. Try thinning it a bit. (It's hard to describe how thin pancake batter should be, but it should pour - kinda like well mixed yogurt.)
  18. That's a great idea! And you probably wouldn't have to work up for too long (maybe two weeks) to figure out if it will help you or not.
  19. I'm sorry to hear about your mom. :-( I would eat before the funeral, and consider bringing safe crackers, dried fruits, and nuts and snack at times other than the primary eating times, and just go about with self-certainty but without discussion.
  20. I'm afraid those two tests on their own, particularly with those results, can't tell you that he doesn't have celiac. It is fairly common for celiacs to be IgA deficient, so the negative anti-gliandin IgA doesn't tell you anything if you don't know whether or not he is overall IgA deficient. Additionally, a tTg and EMA test should have been run as well...
  21. Just for reference, walking isn't high impact enough to "jar those nerves" in the intestinal system. (I'm talking jogging at least 5mph for at least 20 minutes, kind of thing.) I can understand if something that involves high impact is a problem with the energy restrictions, but walking is the "one tylenol" equivalent to treating a migraine that should...

  25. Senna? Senekot (OTC brand) was recommended to me by my doctor, and it did indeed work. It's not a fiber supplement, but it helps get the bowels moving. You might also look into dandelion root (in a tea) or aloe, from what I understand of herbal lore. I've also found that exercise helps - something high impact, like running.
