No, I don't. In theory, it is possible to get wheat grass and barley grass that is technically gluten-free. Theory doesn't always pan out into practice, however, and this is one of those instances that I simply won't risk. -
Veggies with dips! (Guacamole, salsa, hummus, etc.) Deviled eggs. Pears and cheese (if you can do dairy). Marinated mushrooms.

There shouldn't be a problem, but if you want a good vodka, not made from wheat, try Ciroq. Some fancier bars may have it, and it's pricey ($35/750ml) but good (and made from grapes). You may also find that, with your intestines healing, the alcohol hits you harder than it used to. Mentally, the symptoms of having drunk ancohol and having ingested gluten... -
Have you seen an infectious disease specialist to cover infectious causes? For me, prior to going gluten-free, my temperature _dropped_ whenever I got sick - and it's almost never as high as "normal" anyway.

Distilled vinegar is gluten free. The distillation process does not allow a molecule as big and heavy as a protein into the final process. Now, your system in particular might not like the acidity of vinegar, so that's not to say it shouldn't bother you, but distilled vinegar with nothing added back to it is gluten-free. -

Guar and Xantham serve essentially the same purpose, for the most part, but guar is much cheaper. I've think we've heard some anecdotal evidence of other people on the board who've noted they don't do well with it. (Maybe it was another message forum...) -

Organic Food Bars have a number of gluten-free flavors, but check the ingredients - I'm not sure if they all have tree nuts. Open Original Shared Link Note that the "green" flavors are not necessarily gluten-free, though they like to put that on the label, due to the presence of wheat grass. -
Doggie - the best advice I can give is to eat simply. I don't mean boringly, I mean stick with whole foods, and unprocessed foods. The produce aisle, the meat counter, the aisle with beans and rice, and the spice aisle are all you need to make a lot of very tasty food. (Ooops, and the dairy case, if you can have dairy.) Cheese if you can have it. Soy yogurt's not bad depending on how sensitive you are. Almonds are a nice change from cashews. Hard boiled eggs. Making your own baked foods is also an option (bar foods that are like granola bars and have a lot of nuts and so forth). -

Gluten intolerance and wheat allergy are two different things. Gluten intolerance implies an IgG response to gluten, whereas a wheat allergy is an IgE response. A test for one cannot identify the other, and the two are independent (you can have one without the other). -

There are studies that show the benefits of weight bearing exercise exceed the benefits of getting RDA levels of calcium, in terms of bone density. There's just no substitute. :-) (I know, it kinda sucks... and with my knees, some of my exercise is swimming... But yoga also can offer a decent weight bearing exercise where, over the years, you also use... -

I just planned on four weeks where I wasn't going to be getting quite all the calcium, or other vitamins (though iron is covered by the meat) I needed. There's not a lot around that, but if you are getting plenty of weight bearing exercise, it's not as bad as it could be. The planning ahead idea is definitely the way to go. You will be thanking yourself... -
It helps that my husband and I specifically made room in other parts of our budget for having a large food budget. It's one of the things we made a conscious decision to be somewhat luxurious about. And I've got a load of gluten-free-friendly stores in the area I had been frequenting BEFORE going gluten-free. So I'm cheating, and taking every last advantage...

I quite agree. Sure... if you go by the textbook definition of not being celiac until your villi are flat, then you could have a positive blood test without the textbook celiac diagnosis - doesn't mean that you should still eat gluten though. -

Well, it's not that the broth is not gluten-free, it's that we may not know if it's gluten-free. Broth certainly can contain modified food starch, or natural flavors - two suspect ingredients. When I was in Ft. Wayne last week and hit the grocery store, they chicken (I think it was Purdee? I don't know... I dont' see it in CA a lot) said right on the package... -

Wow... there is virtually no statistical significance between chances of having celiac from having a second degree relative and from having symptoms. That is _fascinating_ and likely has some significant implications. I'll have to try to find the original paper! -

Yes, high temperature denatures proteins - and really, it doesn't have to get that hot - but it's not necessarily the tertiary or quaternary structure (the way the protein molecule twists and folds) that causes the intolerance, but rather the primary structure - the chain of amino acids, a portion of which may be recognized by the body. You can keep costs down by making foods that are naturally gluten-free. Fruits, vegetables, meats (not injected with broth), rice, beans, corn, dairy, etc... are all gluten free. There are plenty of italian (it's not just pasta on their table!), mexican, thai, chinese, and american foods that you can make naturally gluten-free - more, I'm sure, but those... -

Definitely not a good idea. Not strictly adhereing to the gluten-free is what increases the risk of complications later in life for celiacs. The continuing intestinal damage, which isn't given the opportunity to heal, can lead to increased chances of lymphoma. -
I know I'm not answering all your questions - I don't have time just right now - but thought I'd ask if you've seen any of the research looking at the possible environmental triggers? There's some evidence that a yeast infection of some variety triggers the initial immune response to gluten. There's also some evidence that there may be a bacterial link...

Yeah, I didn't mean to imply it's bad for you, more that I'm looney about artificial ingredients. ;-) As artificial sweeteners go, yeah, it probably is the most inoccuous. I wouldn't eat pounds of it a day - your digestive system won't like you :-) - but regular use won't be a problem for most people. (I'm sure there's someone out there who doesn't react...
