Definitely go get your thyroid levels checked. It is very common to go HYPER-thyroid before the thyroid decreases function to hypo. That could explain why you lost so much weight before, even though you were trying. Thyroid issues are common for people with gluten issues as well! MOnica -

Mine depends on what it is. When I inhale raw flour or such, it is almost immediate. I wear a surgical mask when I am baking for my kids functions and such. But if it is a more cooked form, it can take 24 - 48 hours. Hope things improve for you soon! Monica -

One of my faves is Amy's rice pizza with Cheese and then my husband doctors it up! Puts either sausage or hamburger on it with various veggies and then extra cheese! YUMMY I make sure he makes a normal pizza for everyone else that is just about the same to make sure my kids don't touch my pizza! LOL I like to take the extra for lunch the next day! ... -

Those are good ideas for alternatives. Since I don't make them often (mainly around holidays or such) I will stick with the corn syrup, especially since it is only 1 tsp. But yes, if anyone else does the others, please let us know. I am very interested in how it would go. Monica -

I have been making these cookies for a long time. They are a huge hit with gluten free people and other non-gluten free people. I love them...but I would be concerned about eliminating the corn syrup...my fear, they would become very crumbly and would fall apart very easily! Monica -

Does you oven run a tad hot? I find with my oven (brand new using convection style) it actually takes 11 minutes. I don't like them crisp either. I like mine more soft and chewy. You may want to cut back on the brown sugar. When I make them, I don't pack the brown sugar at all. Makes them a little softer! Monica -

If my children request these for breakfast, I will sometimes allow it. I mean the protein and such, heck they are better than donuts or cereal! Everyone loves these. I just mix up what I mix in with them. Like now, the halloween M&M's would be cool. I have yet to find someone who doesn't like these! Monica -

I cannot tell you how many people have BEGGED me for the Peanut Butter cookie recipe I use. 1 cup PB 1 cup Brown Sugar 1 egg 1 Tsp Baking soda 1 cup chips Bake at 350 for 9 minutes.
