Yep I already called my local HEB to ask about having them stock the Polish Kielbasa, Ennis where I live is a Czech town. >.< yet none of the kielbasa in this town is safe for me to even use for flavoring. I am so looking forward to making a nice broth out of it, going to then use it for seasoning stir fries, making sauces, and just for soups. -

I react to the Aspartame, and Acesulfame Potassium in them. I turn into Mr. Hyde with them. Something in them makes me super aggressive and angery all the time snapping at people. Very similar to how gluten used to effect me. As a alternative try using lemon juice, and a sweetener that is not known to have mental effects on people, I love Sweet Drops stevia... -

While I slept on this thought there was a few things not mentioned, for about 2-4 months I had issues with some foods which are now stables. I became intolerant to pea protein, pumpkin seeds, sunflower seeds, bananas. Hmm with the almonds roast them DRY on a baking sheet 275-300F on bake in a oven for 19-21mins for desired level of roast. Few things addressing the last few post, 1. try taking a vitamin C supplement, I drink a liquid form in a drink, with the iron the vitamin C works to help your body absorb the iron. I found no matter how much I took it would do nothing to my levels til I used vitamin C then I significantly lowered my dose and my levels normalized. 2. I feel you... -

US Alternatives are guar gum which comes from a root, locust bean gum, and in baked goods psyllium husk powder can be used. I have to be careful with xantham gum also seems it causes stuff to clump and float in my stomach and does not digest, I tend to puke up a odd film when I eat too much. -

Celiac disease does not go away, you do not out grow it. Unsure if the D/C manifestations were due to a shock to the system or if actual celiac. I would personally wait a few more years and perhaps try a gluten challenge again when she is a tad older. Everyone is different in how they react and your symptoms evolve and change over the years. I am always snacking on nuts, seeds, almond butter, and protein shakes, full fat, and high fiber foods help you stay full longer. I use vegan protein powders like NutraKey V-pro , MRM veggie elite , etc so no issues and dairy free. When you have very strong and violent reactions to gluten....try eating something high in gluten in the doctors office and letting them witness the effects (I was out of it for the next day or so and do not recall much of it) . I was already gluten-free for awhile and a challenge was practically suicide so I just was a ass about it and proved my point eating... -

The delayed reaction could be many things, I would say it was your antibodies slowly ramping up then peaking out. Odd though with the delay did you get constipated? How regular are you? While not catholic (I am Methodist) I do take communion. I have arranged with my pastor to bring my own loaf and get it blessed once a month or so. I then keep it in the freezer at home and bring it to communion or take it in my house. This has worked out great for the last 3 years, and enabled me to participate in it without issues. -
