  1. I would suggest staying on gluten and going and getting tested now. You have to be eating it daily for 12 weeks for the blood test, and 2 weeks for the endoscope. This clearing your doing is a sign that gluten is effecting your diet somehow, now if celiac disease or NCGS I do not know but you should be tested prior to trying out the gluten-free diet...
  2. https://www.celiac.com/forums/topic/91878-newbie-info-101/ We suggest a whole foods only diet starting off, first few months to boost healing, Drop dairy and oats if you can also for a month or so. You will keep having gut issues etc. for 2-6 weeks til your body clears of gluten, Literally it takes this long for your antibodies to come down from exposure...
  3. Shampoo, nail polish, hand soap, hand lotion, perfume, lip stick, mascara, other cosmetics....if you touch it then touch your food you CC it. Hmm condiment jars, spices are notorious for some to get CC in a batch, any medications perhaps the last lot you got was CCed? Is thee any contruction near by? Some wall plasters are made with wheat flour in them...
  4. http://www.ataxia.org/events/2013-Presentations/Sunday/Alaedini_2013.pdf Covers Gluten Ataxia and different forms and kind of reations to gluten, wheat, and gluten proteins, also covers nerve and brain damage associated with gluten ataxia.
  5. Gluten ataxia is SCARY the scariest thing is when your own body turns against you, you own mind turns against you, you mind loops, and you can not think straight. Then the long term nerve issues with loosing motor control, or loss of feelings....to this day I can sometimes grab a pan out of the oven and not noticed it is burning me til it is too late. Bad...
  6. I had some bleeding issues for over a year, mine were related to Ulcerative Colitis (seems to have developed from celiac). But I had it where any kind of sugar or carb, dairy, and a few other things would trigger a flare up and I would get inflammation and bleeding. Like streaks in the stools, dark blotches, and globs of clots. Was super anemic with iron...
  7. If your just starting after diagnosis, DO not eat the processed breads. You need to be on a whole foods only diet, no processed foods for at least a few weeks to a few months to boost your healing process. High starch gluten free processed foods will be like shooting yourself in the foot starting off, you have a high chance of crashing and making yourself...
  8. Most people swear by canyon house.....I just use Julian Bakery myself but I can not eat carbs, yeast, corn, soy, or dairy and they make almond and coconut breads....have to be toasted but I am content with them.
  9. Yeah the working out first thing in the morning makes the next 6-8 hours a alot more productive. It has to do with the endorphins and getting your heart rate up. I do 20-30mins HITT every morning before breakfast. Sorta have to kick yourself to get going but really worth it for the way you feel the rest of the day. On a side note I noticed that when...
  10. Might be something else in there, perhaps he ate something else with gluten, something was mixed in the chips, the chips were flavored or in a snack mix with pretzels. I get that way with gluten, but the last 2 times the gut issues render me unable to argue like that but I do go Mr. Hyde like =. Seems to be linked to my mental confusion that arises when I...
  11. I have since tested the Chocolate glazed doughnut, Jamaca me nuts (rum and Kahlua flavor), and caramel butter crunch along with the chocolate oatmeal cookie, apple cinnamon French toast, and cinnamon pecan brownie. ALL are negative for gluten unlike 2 other companies I tried. SO conclusion I would say all flavored coffee from https://www.christopherbean.com...
  12. Doing much better gut issues are cleared up but the numbness is very apparent....I pulled out the toaster rack this morning getting my toast and did not notice I did not let it cool. >.> front loading toaster, I pulled the rack out with my fingers to reach in and get my toast, Did not notice the burns til much later, unsure if bad or good thing when...
  13. There is that company for the meat one, there is 3 other companies that make grain free pizza options 2 are dough kits ot make your own pizza and one other one makes frozen couliflower crust with even vegan options for dairy free (I use them or the dough kits when in a hurry) Simple Mills, Julians Bakery both make dough kits/mixes grain free. Califlour foods...
  14. Did you know there is a commercial company that sells frozen pizzas made with chicken breast and Parmesan for the crust? https://realgoodfoods.com/product/mixedcases/
  15. I posted a grain free recipe in the cooking section, it comes out super doughy note it is best done with warmed ingredients so the cheese in the crust is melty when working with it, daiya makes it super melty but i prefer using julians as it sets better for more stable crust when done, but you have it heat it in a pot with the oil and liquid ingredients melting...
  16. Yeah I use dense almond, coconut, and cauliflower blends. More New York Style thin and crsipy or with more cauliflower and mixing a melted cheese into the dough you get a very doughy melty fork eating crust....the chewy airy hand tossed of gluten pizza,,,,never and I have been baking for years. PS You should stop working with gluten based flours period...
  17. Update tested the flavors chocolate oatmeal cookie, apple cinnamon French toast, and cinnamon pecan brownie. All came back negative, still need to test a few other iffy flavors but I would say Christopher Bean Flavored coffees are indeed gluten free. Set the grounds in water and let set transferred the paste to the testing capsules and vials. Added another...
  18. 1. Presliced were on sale at the grocery store at part of a promotion this week. 2. The presliced are washed already and supposedly ready to eat right out of the package. So I just rinsed them off and threw them in the water. I eat them because of the nutrient content and I love the flavor, they are quite high in Vit D
  19. Glutened by mushrooms again Just a package of presliced and washed mushrooms, boiled in water in a crock pot with coconut secret coconut amino for a broth. Got the lymph, puking, gut cramps, tripping and motor loss, and C right now, Tested the broth in the nima twice for positive It was made in the crockpot in a new liner so no CC issues or clean up issues...
  20. It is amazing how well your feel on a paleo diet free of grains and dairy right? PS there is a company that makes mayo out of avacado oil and egg whites if I recall. Coconut secret makes some ungranola paleo bars and coconut chocolate bars that are quite pure, the sauces they have are great for cooking very simple blends minimally processed. >.> I make...
  21. I have had them for years, but I do not think mine is related to celiac even after getting off gluten for over 3 years it starts off fine in the morning but they swell throughout the day, and by the end of the day the lines in the bottoms of my feet can not be defined and the ankles are a puffy. I found a few things seemed to help like compression wear, supplements...
  22. It is a autoimmune disease like celiac, diet, and antiinflammatory medications. Diet was a huge part of it, triggers for it are gluten dairy, soy, carbs, and sugars like glucose, fructose, and sucrose. Spicy food can be hit and miss depending on the spice. I kept on trying to eat small amounts of dried fruit, gluten-free grains, and carbs thinking it was...
  23. I wear red medical dog tags, with my allergies, health issues, blood type, emergency contact info etc on them. Figured they would check them if I ever lost motor control or collapsed due to exposure/cc out side my home.
  24. NOTE, any kind of CC sets you back, your body is creating antibodies as soon as it detects the gluten and these can take over a week to calm down and up to a month. All the time you body will be damaging itself on the inside. THEY do not suggest these kinds of ANTI GLUTEN pills to celiacs not even the new ones that just came. They are more intended to those...
  25. My last huge exposure with a meal containing gluten was back last June....Yeah I was vomiting and dry heaving so hard I was puking blood and black gunk, turned completely white and lost motor control collapsing in my door way and laid there for about 6 hours til I could get to the couch. I had a friend watching over me, side note my heart rate monitor registered...
