You might find as kareng mentioned your not getting the nutrients you needed take a step back and make sure your getting a full rounded diet. Many of us with celiac also have to supplement for various reasons 1. being gluten free foods are often not fortified. 2. ARCHIVED Gluten intolerance
Ennis-TX replied to Glmurray's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you react to oats then yes it would keep it up, if oat did not bother you before hand they might now, sometimes after extended gluten exposure your body develops new intolerance to foods. These can go away after time but for now you might have also developed a new food intolerance. Try keeping a food diary, write down everything you eat and how you feel...- 7 replies

ARCHIVED Gluten intolerance
Ennis-TX replied to Glmurray's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes, if your a celiac then your antibodies kept going up and up as you ate it more, celiac is a autoimmune disease where you body reacts to gluten like a virus or germ creating antibodies that end up being misguided and attack other parts of your body (to sum it up and simplify it). The antibodies can take 2-6 weeks to calm back down. Some of us like me and...- 7 replies

ARCHIVED 7 Months in, still having "off" days :(
Ennis-TX replied to Fbmb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
....NOTE next time use dairy free options lol, yeah I can say that would mess with NORMAL people with that amount of dairy.......I would be death bed sick after that much. I eat icecream dairy free/sugar free EVERY DAY, mixed with protein powder, almond butter, coconut yogurt and extracts....actually trying to make a business out of it selling it next to... -
ARCHIVED 7 Months in, still having "off" days :(
Ennis-TX replied to Fbmb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Going to be bluntly honest, I consider many on this forum to be more like family then my actual family. I lost most my friends and was outcast by my family due to my health issues. I have found acceptance here, understanding, people I can relate to, and a place I feel I belong and can be useful. >.> we should do a secret santa, meet ups, and events... -
ARCHIVED 7 Months in, still having "off" days :(
Ennis-TX replied to Fbmb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I get the off days,,,sometimes it is due to eating to much of something else I have a bit of intolerance to >.< I know I should not but sometime I do. Other times it is due to me not eating the right amount of a certain nutrient which I can easily fix. I find working out first thing in the morning and decent amounts for b-vitamin and magnesium supplements... -
ARCHIVED Struggling with food - Please Help
Ennis-TX replied to ConfusedCeliac's topic in Coping with Celiac Disease
There are plenty of meat, steak, stew, etc dishes you can eat with rice, You can also do fried rice Mexican or Asian style with spices. Tomato based soups, and sauces are nice, IF you can have quinoa there are plenty of options there for mixing stuff up, risotto or Congee is always nice, look up recipes for these. I used to make savory and sweet rice risottos... -
ARCHIVED Red Meat Intolerance Related to Celiac?
Ennis-TX replied to BarryC's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have not been able to digest red meat in years, it causes some gas, bloat, and comes out the back undigested. OR I puke it up 3-5 hours after eating it undigested. I find I can eat small amounts if I cook it low and slow til it practically melts and it has to be SUPER lean, Longhorn grass fed seems to work here, any kind of fats or oils from it seems to... -
ARCHIVED Daft questions!!
Ennis-TX replied to Shelley2's topic in Parents, Friends and Loved Ones of Celiacs
Will stick with making my own communion bread and having my pastor bless it like I have been for the past few years ......on a side note the whole hay things got me a few years back. I did no think about it either and was helping set up the decorations for the farmers market during the fall festival....yeah that was a huge mistake and made me paranoid about... -
ARCHIVED Can Melatonin Increase Antibodies?
Ennis-TX replied to kvirmani's topic in Related Issues & Disorders
Not noticed anything like that, I take foods that promote higher immune responses all the time I eat seeds and nuts that promote tryptophan and melatonin levels, I take vitamin C, Iron, Vitamin D and various other supplements. You mention some of your results where higher, are you talking about overall antibody count or just ones in reference to the... -
ARCHIVED Just a weird belly, or gluten?
Ennis-TX replied to Fbmb's topic in Coping with Celiac Disease
Hey man, it could be gluten or not, but as careful and as long as you have been on this diet I would say you have a higher chance of it being the stress, or perhaps you ate something else that disagreed with your stomach. I get these up and down days where some days a spice that did not bother me hits me one day with a bit more gas or a UC flare up. I think... -
ARCHIVED Best gluten-free bread
Ennis-TX replied to gluten confused's topic in Coping with Celiac Disease
If your just starting after diagnosis, DO not eat the processed breads. You need to be on a whole foods only diet, no processed foods for at least a few weeks to a few months to boost your healing process. High starch gluten free processed foods will be like shooting yourself in the foot starting off, you have a high chance of crashing and making yourself... -
ARCHIVED Debilitating fatigue
Ennis-TX replied to DrMommy09's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Few other thoughts for supplements, might look into a full spectrum of B-vitamins, they work together and many work in combination with other nutrients for your body. Also many celiacs suffer from magnesium deficiency, this can cause fatigue, muscle aches, constipation, nerve issues, tingling, and many other issuers. For those my normal suggestions are Liquid... -
ARCHIVED Gluten free stool related
Ennis-TX replied to Guelphgluten91's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Define spots? Like Bloody spots, just darker patches, or perhaps undigested foods? If undigested food I would suggest digestive enzymes, if blood it would depend on if dried dark tar blood or bright red as this would determine how far up it is and from there probably a colonoscopy to to find out where and what. What is your current diet? BTW it is very... -
ARCHIVED Best gluten-free bread
Ennis-TX replied to gluten confused's topic in Coping with Celiac Disease
Most people swear by canyon house.....I just use Julian Bakery myself but I can not eat carbs, yeast, corn, soy, or dairy and they make almond and coconut breads....have to be toasted but I am content with them. -
Yeah the working out first thing in the morning makes the next 6-8 hours a alot more productive. It has to do with the endorphins and getting your heart rate up. I do 20-30mins HITT every morning before breakfast. Sorta have to kick yourself to get going but really worth it for the way you feel the rest of the day. On a side note I noticed that when...

ARCHIVED Positive blood test, but told "probably not celiac"
Ennis-TX replied to sstar's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Well I would say positive on the blood test would show you have it but we do call the endoscope and biopsy the golden standard and very good show for positive damage from the disease. The reference to GI is for the endoscope you need to keep eating gluten til you get that over with. But looks like you have the disease if you got the blood test positive. -
I sometimes debate being a ass about it and eating in dangerous places or poisoning myself to make a point....never done it. But I recall what happened last time I got straight gluten poisoning at a restaurant....I rushed home and it hit me right as I was making it in the door a hour later....lost motor control and dropped to the floor. Bit later started...

ARCHIVED Urthbox
Ennis-TX replied to AnLi's topic in Gluten-Free Foods, Products, Shopping & Medications
Yeah, this happens a lot and is why many of us stick to gluten-free certified foods and certain brands. The gluten free but may contain wheat is a legal thing they do to cover themselves in case someone gets sick. Note these are more targeted at the gluten free bandwagon people then the medically required. Oh and with urthbox one of my friends had a... -
ARCHIVED tongue inflammation, reflux, GI bleeding, depression
Ennis-TX replied to at1992's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have celiac and UC, before the UC diagnosis I was eating carbs when I could small amounts of fruit, rice, beans, low glycemic sugars like maple, agave, coconut. I was having constant bloody stools. After the UC dianosis and the inflammation they found I stopped eating carbs, grains and sugars moving to a ketogenic diet of nuts, seeds, leafy greens, avocado... -
ARCHIVED Gluten Free Food but not certified
Ennis-TX replied to AnLi's topic in Gluten-Free Foods, Products, Shopping & Medications
This is why many of us stick to our own "Trusted Brands" of things we know are safe, and only buy stuff with the offical certification for gluten free. NOTE also in the US they do not HAVE to tell you their facility also processes wheat on the label, just if the actual product contains it in the ingredients. But many will just to avoid legal mumbo jumbo if... -
I make my own mini loafs of a simple almond, coconut, apple sauce blend for dense, bland bread gluten free, and have my pastor bless them. I then keep them in the freezer and bring a piece with me for communion.
