  1. Well while I was tracking down a recent source of corn in my diet and a allergic reaction I was rerouted to a company that provides a form of maltodextrin to the company that made the offending product. Here I found some interesting statments about lableing that were slightly appalling, I find it funny they can label a corn fiber as "Honey" "Dietary Fiber...
  2. It is a autoimmune disease like celiac, diet, and antiinflammatory medications. Diet was a huge part of it, triggers for it are gluten dairy, soy, carbs, and sugars like glucose, fructose, and sucrose. Spicy food can be hit and miss depending on the spice. I kept on trying to eat small amounts of dried fruit, gluten-free grains, and carbs thinking it was...
  3. I actually have celiac disease, and Ulcerative Colitis, so in addition to no gluten the UC has flare ups to dairy, soy, carbs, and the sugars glucose, fructose, and sucrose. Essentially I have to eat a paleo no grain low carb diet. I went with a keto diet as I get the most energy out of it. I also have some other food allergies and intolerance. At least...
  4. 12 weeks is the standard for the blood test, >.> you might get lucky and get by with 6 weeks I think I saw someone post about doing that in the past couple of months.
  5. As to if the sting can lead to it, perhaps. Celiac disease is a autoimmune disease, it is commonly genetic and the gene can be inactive in some people for years til a shock to the immune system or body triggers it. I for one had a few incidents that made mine go form minor issues to full blown. I know of other members who have had it brought on by pregnancy...
  6. I wear red medical dog tags, with my allergies, health issues, blood type, emergency contact info etc on them. Figured they would check them if I ever lost motor control or collapsed due to exposure/cc out side my home.
  7. NOTE, any kind of CC sets you back, your body is creating antibodies as soon as it detects the gluten and these can take over a week to calm down and up to a month. All the time you body will be damaging itself on the inside. THEY do not suggest these kinds of ANTI GLUTEN pills to celiacs not even the new ones that just came. They are more intended to those...
  8. My last huge exposure with a meal containing gluten was back last June....Yeah I was vomiting and dry heaving so hard I was puking blood and black gunk, turned completely white and lost motor control collapsing in my door way and laid there for about 6 hours til I could get to the couch. I had a friend watching over me, side note my heart rate monitor registered...
  9. Was really bad ulcerative colitis. It was December and I was eating more carbs and sugars then before I knew. It was causing flare ups of inflammation, swelling, and bleeding of the intestines.
  10. I have Noticed this with the cooking, for some odd reasons lightly roasted almonds do not bother me at all, I get issues eating them raw opposite of what it should be, but this could be due to breaking them down a bit and making them easier on the stomach. And preroasted ones bother me guess they roast them to much? I do it at a lower temp in a convection...
  11. I would offer to do it in my bakery but I am in Texas. What I can suggest as someone with a corn allergy and celiac disease, is getting a new or disposable muffin tin. A new mixing bowel and wires wisk, and get Simply Mills Cupcake mixes, they have various ones they are all gluten free, corn free, and free of any grains to boot. Lay out some freezer paper...
  12. The protein powder thought might explain why I have a off reactions to some of the cheaper ones and have to stick to certain brands. I also do not have issues with Brussels, broccoli, cauliflower at all. Potatoe starch has caused me issues for years. I also have issues seeds and nuts from other companies aside from the ones I buy from. And I checked and the...
  13. I use Frontera Red Enchiladas sauce mixed in with jackfruit for vegan enchilada meat cooked up in a crock pot. I actually just made 2lbs of it just a hour ago.
  14. WE normally suggest you do not eat out several months after diagnosis and only eat a whole foods diet to accelerate your healing process and avoid contamination issues. As to your thoughts on that dish, I would say the soup itself has it and the sausage. I would avoid olive garden like the plague btw. pasta water, bread stick crumbs, crouton dust......bloody...
  15. Yeah with the bloat and constipation I suggest taking Magnesium Citrate for the constipation, I take it daily as a supplement via Natural Vitality Calm, but in higher doses it acts as a laxative. For the gas GasX and teas help, I found using Anise is a life saver with gas issues, Open Original Shared Link I buy wholesale from the company direct...
  16. OP did, and I did few years ago. And I just found 3 companies that admitted to using gluten in flavored blends and stress that someone with celiac should avoid all of the coffees they produce. Again sorta happens when you wonder from name brands or the whole K cup thing instead of a pot and grounds. I am just covering those bases. Again name brands and plain...
  17. I just ordered several of the most questionable flavored coffees from christophebean, and will be testing them when they come in, my results are not lab level and it is a high tannin based product which could throw off the results but I will try testing the grounds regardless for the, french toast, chocolate doughnut, and a few others using both a EZ-Strip...
  18. Out of the 7 companies I contacted about gluten in the flavored coffees, 3 got back to me saying not to use their products. As mentioned across line contamination with packing when a company does flavored blends is a huge cause for concern with these especially the K-cups. ON a side note ChristopherBeanCoffee just assured me their coffee is safe and...
  19. Noticing a trend here, foods I have to eat in limited amounts or I feel a bit crappy or nauseated are all on the high Sulfites list Open Original Shared Link This literally scares the crap out of cause if I end up having reactions to Sulfites on top of my current issues......yeah another level of hell. I find stuff like onions, garlic, have...
  20. IF he has been diagnosed and is living in a shared house it is going to really hard not to get CC contamination. I suggest reading the newbie 101 page, also it can take 2-6 weeks for the antibodies to calm down once on a gluten-free diet, assuming there is no cross contamination. NOTE gluten is a protein, like blood, you can get contamination off of residue...
  21. Are you also on magnesium? How are your potassium levels? Both these also effect nerve health. I get a tingling, followed by a feeling of hot needle tingling in waves when I am low on magnesium. (I tried to rotate off the supplement magnesium this week...lasted 2 days before it progressed to that). Anyway I take a complex in liquid form for combinations...
  22. Few companies make a enriched almond milk with 4x the protein. Good Karma makes a flax milk with pea protein in it. Soy can really mess with your hormones, in the long run, same with dairy. Just a thought. Also I always mix in a scoop of vegan protein powder with my almond milk much more effective with a complete amino acid complex.
  23. Should be, really depends on the company making it. I know both brands I have taken over the past month or so do not cause any gluten reactions (dealing with a abscess) NOTE it does cause nausea and can cause gas issues ESPECIALLY on a empty stomach.
  24. HOLY, yeah I tried that last year cause I saw it was a cane sugar soda free of corn (allergic)....I got really sick and thought it was cross contamination from the sushi I ate at a convention. Really? it was the should be gluten-free soda???? On the bright side I make my own now, mineral water, and cola flavored stevia drops or root beer extract from lorann...
  25. Baked goods by simple mills, are grain free and corn free. and lactose free, they have bread, cupcakes, waffles, pancakes etc mixes. As for meals Stir Fry, soups, omelettes, roast meats, grilled meat,s steamed veggies, grilled veggies, baked sweet potatoes baked fish. I am allergic to corn myself and have a bunch of other issues so I can not eat grains at...
