Well I am off to search for some more coffee, this has a interesting thing I would love to check. I am going to find flavored coffees in K-cups and ground. I am going to check with several companies and see if I track down some gluten free ones. Lets face it a chance at indulging in the forbidden flavors we can not have in a gluten free beverage form does...

He actually has a point on the coffee concern, with all the "Artisan" coffees and flavored blends out there now days, ESPECIALLY if you get preground where they use the same burr grinder. OR god forbid you use the bulk beans and grinder at a grocery store. You have a high chance for CC with gluten. I have mentioned this over the years but I HAVE gotten...

Ennis-TX replied to Feeneyja's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Considered them actually. Or if you live or are stopping by the DFW area I fix people meals and do chef work for people at times, just need a week advance notice. -
ARCHIVED Night
Ennis-TX replied to M-SMOOTH's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I second this on the enzymes and probiotics, also with gas I found Anise can help with gas. ANISE, not Star Anise two different things, I find it very effective and order from spicely Organics who have gluten-free certified spices. Open Original Shared Link Open Original Shared Link -
ARCHIVED Night
Ennis-TX replied to M-SMOOTH's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
When lying down it is easier for gas bubbles and food to move along your intestines. If your having gas, inflammation, etc. These would be more noticeable laying down, perhaps try taking pepto bismal before bed, not eating 2-4 hours before bed, and if you can try laying down for 10-20mins mid day. -
ARCHIVED Blood in stool?
Ennis-TX replied to Ildiko's topic in Parents, Friends and Loved Ones of Celiacs
It could just be many other things, if you see blood in the stool you should take her to the doctor if you keep seeing it or if it is alot. If it is black tarish she really needs to go see a doctor, this would indicate bleeding in the small intestines, esophagus, or stomach. If it is bright red streaks this would indicate it is in the last section of the... -
You mentioned this got much worse when you moved into a new apartment. IT could be a immune response to something in the building, mold, allergy, chemicals. I think your immune system could be reacting to something else in your environment. This could also be many other things, I got to admit I do find it odd about single food triggers, unseasoned and everything...

The constant constipation is normally caused by a magnesium deficiency, IT can also be caused by gut flora, not enough liquids, not enough or the right ratio of insoluble and soluble fiber. Do you have bloating, and distention with it? If so it could be a irritant is causing inflammation in the colon or intestines preventing it from working properly. My...

I have been CCed by coffee from a local blend where they used toasted barely ground in with the grounds to give it a desert flavor. I use FreshRoastedCoffee now days just fine with now issues and get a low acid one like sumatra. Your issue might stem from a contaminated machine or coffee mug more then the coffee being contaminated. Or you might be reacting...

ARCHIVED Anxiety and Celiac and Meds
Ennis-TX replied to AmandaD's topic in Coping with Celiac Disease
I found no amount of meds helped with the anxiety, depressions, or any of the mental issues. Seems they were caused by malabsorbtion of certain nutrients/and gluten reactions. I found supplementing with magnesium and taking Liquid Health Stress & Energy and Liquid Health Neurological Support helped more so with this. I also consume a diet high in nuts... -

ARCHIVED Need advice on some rice please
Ennis-TX replied to Natalie1993's topic in Gluten-Free Foods, Products, Shopping & Medications
You said Co-OP as in a local group co-op and not a natural branded rice? What kind of packaging is it in? I would personally be hesitant. GFD has mentioned where alot of companies that do multiple lines of grains can get the random gluten containing grain mixed in batches of non gluten containing grains. I have seen this with lentils, rice, quinoa, and even... -
ARCHIVED Gluten Challenge - Any Relief!?
Ennis-TX replied to EmMothRa's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have recently discovered that Anise is great for gas. It is a spice I order from spicely organics and certified gluten-free. Look up on it might be worth it and ordering some on amazon. Goes nice in tea, baked goods, eggs. NOTE ANISE not Anise Star two different spices. Open Original Shared Link I buy wholesale from the company direct and got... -
The amount of sheer carbs and starches in it put it against what my truck stands for and against my cooking ethics. I have certain rules I will not break in my cooking or foods I give to others. I am going with a new marketing idea of "Loaded Toast" Toasted the bread put a condiment, 2-3 toppings and melt cheese over it. I will try these out for sampling...

Only 1 comment on taste, the others were "Sandwich is too small" "It falls apart to easy" "The sandwich is messy" on those 3 the taste was give a range from good to "Had a odd nutty flavor but not bad" I think I might use it instead of for sandwiches but use it for topped breads, like toast it with 2 ingredients and cheese. and serve it as topped...

Tried test menu options today serving some people for free. On feed back most the menu is staying but the sandwich got some bad reviews, the bread being too small, off taste, few other complaints, When used as toast for a side it came off well received......SO I am going to remove the sandwich option and go for bowls, pasta, stir fry, pizza, and breakfast...

Yeah Gluten was a huge trigger for me and bipolar, and made my ADHD go crazy. Since recently removing all grains I found it completely removed itself. I tend to be more happy go lucky, no cares, quite mentally active once the ketosis kicked in. As for nutrients/supplements for your mind I take two things. Liquid Health Stress & Energy and Liquid...

Yep before my diagnosis and major issues I had worked in a concession stand for 8 years. I have plans and know how for getting foods out quick.

ARCHIVED Gluten Challenge - Any Relief!?
Ennis-TX replied to EmMothRa's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Welcome my fellow paleo friend lol. Yes I might suggest you take the smallest amount of gluten needed for the test and take it at night before bed to help sleep it off. You only need like half a slice of bread a day or a few wheat crackers. Pepto bismal, and teas for digestion might help sooth it. Welcome to the forums and sounds like you have a plan... -
The whole sell the truck at anytime is a option I told them. As the base quotes for everything are under 75k with me giving it room and asking for a 85k from investors to set it up. I can potentially recoup the whole thing by selling as a turn key business for over 120k as I see them going for down here. I honestly just love to cook, I love helping...

Yeah I really need some help with that part of it. My mental issues from the mix of brain damage, ADHD, and Autism lead to some odd issues with the legal, money, and advertising department. I think I spent like 3-5 hours yesterday trying to figure out how to program a sandwich into the point of sale software, just to realize I was doing it wrong. Seems doing...

Only found d 2 in the area that will work with my current complications. They did not mention payment plans will double check with this. I have no issues with tarter etc. I do not consume sugars, I brush a hour after each meal and mouth wash (you supposed to wait a bit after eating I was told or you could damage your teeth) Just for some odd reason...

Update, black area on x rays, I need to get a root canal. Can not afford the $920 and I shopped around and did my research with coverage options and financing. Pain is the tooth is capped and it raises even the best options prices and limits who will work on it. Ran out of anti biotics infection came back a week later I am making do with the same stuff...

ARCHIVED Bloating, gas in the evening?
Ennis-TX replied to elevenluke's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Used to get this when I ate anything with carbs/sugars, but this I later learned was from UC and it causing flare ups. I also get this as a after effect from dairy, peanuts, soy, and a few other intolerance of mine but I first normally get really bad stomach issues. Try a elimination diet and see what it might be, would be my main suggestion. You probably... -
ARCHIVED "weak" celiac disease?
Ennis-TX replied to Morisith's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
"Tamari" sauce is made gluten free in most cases. NOW for a soy and gluten free alternative I really do suggest Coconut Secret Coconut Aminos, they also make a teriyaki sauce and a garlic sauce that are all GREAT in stir fries PS check the cooking section here I have posted some great cheesy bread recipes both a cheddar biscuit and a garlic...
