ARCHIVED Hunger!!Ennis-TX replied to M-SMOOTH's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease I do not really eat carbs, I am on a ketogenic/paleo diet. I also hardly eat meat as I can not digest it. I have scoops of vegan protein powders through out the day, different brands and blend to get a complete blend. I eat a whole bunch of nuts, seeds, and smaller amounts of leafy greens, and low carb vegetables. I also consume massive amounts of egg whites...

ARCHIVED "weak" celiac disease?Ennis-TX replied to Morisith's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease IF you do have celiac it will slowly erode and degrade your health if you ignore it. You will develop more issues, you will get worse and worse with nutrient absorption and you own body will slowly attack your insides and damage you intestines causing more and more complications. I did not get mine diagnosed right for years til I got a bunch of other complications...

ARCHIVED International travel and packing food in checked bagsEnnis-TX replied to sarkay85's topic in Traveling with Celiac Disease This should be of some help Open Original Shared Link NOTE some country's forbid certain foods to be brought in, normally these are exotic and odd ones but some health food bars do contain stuff they might find questionable. Do also check with your destination. But from the look of this you can bring just about anything in your checked luggage. carry...

While not a refractory celiac that I know of, I am a hyper sensitive one, reacting to inhaled contamination at stores, and very slight CC from flour that might have touched something it seems. I also have UC and can not eat carbs/sugars, in large amounts or risk flares ups so I eat a ketogenic/paleo diet. Other issues prevent many other foods from being consumed...

ARCHIVED stomach painsEnnis-TX replied to noelle voll's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease Other food intolerance are very common with this disease. It results from damage to your intestines, complications with your damaged and confused immune system, imblances in enzymes, etc. Some of these will go away after a few years others are permanent. I have many myself, finding certain ones caused by different things. I developed the following Allergies...

ARCHIVED Suggestions?Ennis-TX replied to Victoria1234's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms Actually on a ketogenic diet, nothing but fats and protein no carbs, no fruits, no grains, no sugars. I consume massive amounts of protein and moderate fats. I am actually slowly putting on weight....but I am 127-129lbs and 5'11" I have less then 18% body fat. Once you hit ketosis you body burns fat for energy not carbs. So if you are late on a meal, forget...

ARCHIVED New and ConfusedEnnis-TX replied to hazelleviosa's topic in Parents, Friends and Loved Ones of Celiacs Not a medical practitioner or anything but my mother would tell me stories that make alot of sense now that we know. Back when I was a baby, they learned quickly I did not stomach most grain based baby food or dairy. She says they had to feed me sorghum porridge, and some kind of special non dairy formula mix with sorghum malt. There are way to many...

ARCHIVED Truly Gluten Fee (i.e. no cross contamination)Ennis-TX replied to loskers's topic in Gluten-Free Restaurants I went to San Antonio for my birthday. Only place I trusted was a sushi restaurant that is VERY allergen friendly. Think it is called sumo? Other then That I brought a bunch of microwave cookware, omelette makers, steam trays, and a small griddle. And a bunch of veggies, egg whites, my own gluten-free birthday cake I made myself. Made a bunch of steam pouches...

ARCHIVED Horrific alcohol reactionEnnis-TX replied to Stephanie kate's topic in Coping with Celiac Disease A Distilled gin should be safe, but perhaps you should have a non grain based alcohol? Like a rum which is made from molasses, unflavored just to be safe. I use Admiral Nelson, or Bacardi if I have to in cooking alot. Used to drink them quite a bit before some other gut issues came up. My old personal favorite used to be 1-2 shots of rum in a root beer,...

Unsure what the frack this has to do with my original post....I was referring to how we had a few days in a row with constant negative post. Mostly about little stupid issues like increased risk of heath disease, diabetes, and all these health issues about the gluten-free diet saying it is not good for you and many stating it is dangerous. Fact is many of...

ARCHIVED MTHFR gene defect - anyone familiar?Ennis-TX replied to Mermaid's Mom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease As posterboy stated in my case the stuff made my stomach issues much worse. But stemming from another discussion with him I found large amounts of digestive enzymes helped out most of my stomach issues with digestion. Had to mix it up with extra bromelain and a blend. Then upped to 1.5 dosage taking some before and some after the meal.

ARCHIVED MTHFR gene defect - anyone familiar?Ennis-TX replied to Mermaid's Mom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease The whole acid thing with HCL is hit and miss, I tried it and it got 10x worse it seemed. But I have a bit of a different kind of acid problem we can get into later. The whole gene aspect is intriguing, I really wish I knew more about mine, my birth mother still refuses to release medical records and I can only contact her via the adoption agency. Nor...

What is up with the news feed spamming stuff about negative effects of the gluten-free diet? I know it can be unhealthy if you do it wrong and eat a bunch of gluten-free processed foods and junk. And most of us here have to be on a gluten-free diet and know how to do it right. But the news feeds here keep on pumping out the negative side of our medically...

Yes my standard Paleo Cinnamon Cake, Paleo muffin options will be there from my current bakery, along with my almond butters for breakfast. I am working out trying to choose a iced product to use also. I have priced out most everything and priced my goods to get enough income off them to pay for the permits and fees. Yes I even calculated the license...

NOTE Policy is GRAIN FREE, DAIRY FREE, also avoiding soy, peanuts, and a few other foods. I dream of doing this so I can work my dream job in a culinary business...

ARCHIVED Celiac & post-thyroidectomy - fatigued ALL the time :)Ennis-TX replied to sdlane's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease Yeah I do swear by supplementing, I would suggest looking at various B vitamins, magnesium, iron, vitamin D, E, and perhaps some others. I use a liquid form by Liquid Health called Stress & Energy and the Neurological Support from them for b-vitamins, half a serving each 3 times a day. And a rotational use of Natures Vitality Calm and Doctors Best Magnesium...

ARCHIVED GliadinXEnnis-TX replied to Charli61's topic in Gluten-Free Foods, Products, Shopping & Medications Nice it works for better then me, I recall trying it.....still sick for hours puking. And has given me a personal vandetta against this company and it making people think it is a "Miracle Pill" that allows you to eat gluten. I will keep advocating against it til they state it is not safe for people with celiacs to use this and eat gluten foods. NO ONE...

ARCHIVED Suggestions?Ennis-TX replied to Victoria1234's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms I know dairy is very tempting....but for god sake man try the dairy free options >.> I pig out on dairy free ice cream, coconut yogurt, and dairy free cheese, like it makes a good chunk of my diet. >.< I also found a dairy free cream cheese extract....that stuff ends up in everything just that hint of cream cheese flavor to eggs, dips, porridge...

ARCHIVED The new copper square pansEnnis-TX replied to Brenda Colemam-Thomas's topic in Gluten-Free Recipes & Cooking Tips Cast iron is not really something I would suggest for most people to use without special work, You can put your cast iron cook ware in a oven and run the cleaning cycle temps over 550F can break down the proteins that make up the gluten.....You can also like wise destroy DNA and hide blood evidence this way. General rule Gluten is a protein like blood.....

ARCHIVED Is it sometimes to late to reverse damage, and how do you know?Ennis-TX replied to Kristen Bennett's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms It will take a month or two before you notice any major healing, the gut and energy issues you should notice major changes in 6 months and if you keep completely gluten free no cheating and rare CC issues you should notice mostly healed gut issues in 2-5 years. Neurological symptoms are different, they are very slow to heal, 3 years in and I am just now...

So I have been looking over my food journal for the past few months and noticing other intolerance that I am sorta in denial about. I used to have issues with carbs, sugars, fruit, etc. issues like bloating, and bloody stool. I denied these and blamed it on bad gut bacteria til I got my UC dia. and had a medical reason to remove them from my diet. A food...

We always say check the ingredients, even if it used to be gluten-free manufactures constantly change the recipe and you have to check the ingredient list on foods to be sure. I think that might be the case of why you find the product on the suitable list. Here in the US anything with barley extract or barley malt is not considered gluten-free. We have had...

ARCHIVED Ice CreamEnnis-TX replied to Laurad-'s topic in Gluten-Free Foods, Products, Shopping & Medications Before my UC dia, I used to use So Delicious and NoMoo for dairy free and gluten free options when I ran out of my own homemade icecream. Now days I keep a stock of Wink Frozen deserts for emergency when I run out of my own. It is Gluten Free, Sugar Free, Dairy Free, and Soy Free.
