The Gene test is a hit and miss many have celiac and not the gene and vise verse, frankly the human genome is still being studied and quite the mystery how some stuff works with some and not with others. I still consume egg whites myself from cage free when I can, I often get deals from the local farmers at the farmers markets.....they guys chickens are spoiled trust me, no cages they just roam. JackFruit, I buy Naked Jackfruit food service pouches, and season it exactly like you would sausage overnight chopped up in the seasonings, then run in a meat grinder. I just use Coconut secret, they make a product that using coconut aminos as a gluten and soy free option. It can be used exactly like soy sauce in all recipes. They also make a teriyaki and a garlic sauce that are great in stir fry.

Yep blood test, followed by a endoscope where they take biopsies and check for damage. Keep eating gluten daily til the testing is done. As to your question about dairy, dairy intolerance goes hand in hand with celiac disease. The enzymes to break down dairy are made by the tips of your villi which are damaged or gone. I have been glutened by strawberries, and mushrooms before, also by broccoli....as with the broccoli I called the company and that one had come from a facility that did sauced veggies. Seemed they used the same packing machines but cleaned them between runs. It could be the company follows similar protocols of using the same packing machines as a line... -
Unsure exactly...but why just one enzyme? I take Jarrow enzymes plus. Much better line up in my opinion, I also take extra bromeline on high protein meals, and sometimes papaya enzymes after a meal.

I still have issues putting on weight and could not put on weight but could maintain it with a low carb very high protein diet.
