People are very angry towards non gluten eaters....
Ennis-TX replied to Victoria1234's topic in Publications & Publicity
Many people think of it as joke.....I sell at farmer markets and label my stuff gluten free. Being made fun of, poked jokes at, laughed at, criticized...yeah it is daily the comments I get are crazy and fucked up. I have snapped a few times even (highlight of my life was turning to one person who insulted me and joked about gluten where I switched to japanese... -
How to prepare beans/peas/legumes to avoid lectins??
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
Why do you need to replace them? You just do not eat them, you do not need carbs Look up ketogenic diets, your body will change and regear itself. You eat tons of fats instead, your body changes from using carbs for energy to using fats instead. Takes a few weeks and you will feel like you have the flu while the transition takes effect. Then you start feeling... -
How to prepare beans/peas/legumes to avoid lectins??
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
AIP is Auto Immune Protocol, you avoid foods that are harsh on the immune system or known to cause issues for many. One of which is legumes like beans, peanuts, dairy, grains, of all kinds, etc, Most are a focus on Paleo where we eat only what our ancestors ate with a bit more restrictions. Various versions focus on different food groups like eliminating... -
The cross grain symbol for what I recall is the european gluten free symbol if it is the one I am thinking about. Things to do, get your rice, get a paper towel, and dump it out and look through it, remove any kind of foreign objects, other grains (you should not see any just a example if you see wheat throw it out) rocks, grass etc. Then using a bowl...

Look to seed/seed butters, seeds are hypo allergenic, butters and meals are easier to digest. https://www.mygerbs.com/product-category/seeds/ sells some check amazon for butters or make your own, I would load on the health fats with avocados. pumpkin seeds, chia, flax, etc. Try to eat some vegan protein powder. MY biggest thing for putting on weight is pumpkin...

Stick to meal bars and whole foods. THERE are some cruise lines and certain ships in that area that some have had great times on and others have damn near killed people with CC issues. Do your research but plan for best and worse case so you not left without a backup plan If you want to not get sick and have the best times, stick to stuff hard to mess...

celiac disease,cerebral palsy,finger tip numbness
Ennis-TX replied to Lisa Millett's topic in Coping with Celiac Disease
I have the gluten ataxia issues also, even tiny CC below 20ppm is noticeably as I start dropping stuff like crazy, and can grab hot things and not realize it. I had to get a temperature control mug 2 years ago cause I could not tell I was drinking stuff over 170F when brewing tea. Heck I can on a bad day reach in the oven and take out a pan and not even feel...- 2 replies

ONE day I will order from them, perhaps when either I get a peanut tester, or my peanut intolerance/allergy goes away. Can not chance it with nuts.com. Do You Have a Gluten-Free Emergency Food Kit?
Ennis-TX replied to Scott Adams's topic in Publications & Publicity
Yeah I got the cans of this in stock on a shelf in the back, http://www.thrivelife.com/dried-egg.html I just recently was shown the GlutenFreeemergencyKits site by admin on this post, I am looking at getting their vanilla powder (damn cheap compared to a spice shop). I am looking forward to getting some more freeze dried veggies, I used to buy from another... -
Foil line what your cooking, use covered dishes. Honestly I would not be that concerned unless your doing cobblers, casseroles, etc. Something that has gluten and will bubble and splatter, even then chance of CC are low. Run the self clean cycle between gluten dishes and gluten-free dishes if you wish to be safe. 500F will destroy the gluten proteins from...

Dairy free Pizza cheese alternatives?
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
Califlour foods plant crust is like a flat bread pizza grain free and dairy free, I top it with my own homemade cheese sauces or sometimes go cheap and use daiya cheese on it. I did a post with various dairy free alternatives for cheeses. The recipe section here has a recipe for making a flat bread grain free crust, a cauliflower crust, a recipe for using... -
Sorta is, you shop specialty brands that focus on gluten free, and other brands that do non gluten food you learn which ones to trust. In the US most companies are required to list wheat/gluten on the label as a ingredient/allergen after the ingredient list. They also while not required, will often even list if it is done in the same facility/building...

How to prepare beans/peas/legumes to avoid lectins??
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
Might consider my approach of a dairy free keto diet with very limited meat intake. I live off of omelettes with veggies, veggie stir fries nut based breads, nut butters, seeds, avocados, coconut, coconut wraps, nut based milks and cheeses instead of dairy, and I tend to have Kal nutritional yeast in every meal along with vegan protein powders to make up... -

Do You Have a Gluten-Free Emergency Food Kit?
Ennis-TX replied to Scott Adams's topic in Publications & Publicity
I have Julian Bakery Bars, Miracle Noodle MRE, I also have cans of freeze dried eggs. Gluten Free Emergency kits, Mountain House, Thrive, and Augason Farms (used to) have gluten free options of freeze dried foods. Make sure you check the box or look at the gluten-free versions of selections but they have like 5-10year shelf life. http://www.glutenfreeemergencykits... -
Any frying/baking substitutes for flour?
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
Almond flour is a VERY common one, look up recipes yourself, I have used coconut for a softer breading, works well, I have a customer at my bakery who claims she loves dipping her chicken in chia seeds then frying them...bit extra crunchy. I have used bean chips like Beanitos and Beanfields flavored chips pulsed in a food processor for breading (like using... -

Starting to really wonder.....
Ennis-TX replied to johnojohno's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Just needed to point this out while it seems the UK and perhaps even Canada they are. The US McDonalds has wheat in the fries. Second thought in the US you have to a take more careful with CC and chains, the kids go in and out of these like crazy and think gluten free is a kind of fad. I would avoid chains of fast food restaurants here if celiac. Sorry... -
Turkey, vacuum pack it, you can use it later for soups, stews, sandwiches, omelettes etc. Will keep for months in the freezer Dressing, You can use it in various ways my fun thing to do with it is moisten it back up a bit and load it into a waffle maker these can then be frozen or eaten when ever, dressing and sausage flavored waffles are AWESOME.
