Drinking Beer is like drinking antifreeze Funny thing we had a poster here who had kids that also had celiac, they got sick and thought they got glutened by a meal......it was salmonella poisoning, let that set in. Unsure what your going for here honestly, Gluten free baking is a mix of science and a art. I was giving options to take said expensive flour and make it firm up a bit more as that seemed to be your initial question. NO, just that will get you a dryish crumbly mess like a dried out muffin or a biscotti. Adding almond to the other flour and less liquid would firm it up. Coconut flour as a solo flour with eggwhites will work, almond requires binders, oils, and a lot of times a mix with another flour....plus the price....coconut flour is like $3-4 a lb and a tiny bit absorbs... -

I have had tale tale signs of this disease since I was a little kid, it was not diagnosed til it got really bad (I was 23-24) with various other complications. Turns out stuff I used to consider "normal" were actual symptoms and complications from the disease. I would ask for a complete blood test again, you have to be eating gluten for the test to be accurate, now I would also mention the blood to your doctor and mention you would like a endoscope and biopsy to confirm celiac (some the blood test does not show it but the villi damage can be observed via the biopsy) AND due to the blood as for a colonoscopy also... -

Glorious thing about cast iron.....pretty much the only cookware you can very efficiently and easily decontaminate them. You can destroy the gluten protein at over 500F.....as mentioned by kareng the oven self clean cycle. It is like blood ie a protein.....very, very high heat destroys the protein chains that make it up. -

I normally just use coconut flour and egg whites for my flat breads....eliminates most carbs also. Seems to work well and holds up nice. I posted the recipe in the recipe section.
