Yeah I can relate on the nerve issues, they take the longest to heal if celiac is the case. I am highly allergic to corn....I feel your pain in a way. Personally I avoid pure soy as the distress it does to my gut and body. Soy lectin sometimes is in a few things and I try to avoid but it is damn near impossible. The mucus and phlegm sounds like a allergy or food intolerance. Try keeping a food diary, record everything you eat and how you prepare it, seasonings, sauces, and cooking methods. Yeah I am in a small town and the only gluten free baker in it, only have 3 other celiac regulars, otherwise a few health nuts, and my keto bread I came out with last month took off with a group of diabetics. my competition is gluten bakers and old ladies at farmers markets. Welcome to the forums and the club you never really wanted to join. To address your cancer issues, I am under the understanding that your chances of getting cancer significantly decrease once you start the gluten free diet and stay on it. Funny fact many of us on this diet are forced to eat cleaner and healthier foods if we stick to the whole foods approach... -
Welcome to the forums, glad you finally figured it out. I can relate on the anger and weight issues. In high school college I was huge, and had very little energy. It depends on if you can do it, I would suggest it. That peace of mind knowing it is it, and the offical dia will help with acceptance by family if you have some issues with that (some of my extended family still think it is a joke). AH a bread machine, why do people insist on yeast breads, when you can make a great quick bread just as fast and lower carb and not risk a candida infection . I have used Simple Mills pizza crust in a springform pan to make a Chicago deep dish style crust. Grain free, loaded it with sauce and non dairy cheese and half of it with a burger sub.

Depends on where your at, I am a pretty dang good baker and all the baked goods in my bakery are grain free and gluten free. But I only serve locally. Older post, please check dates, but to address your question the symptoms many of use have with a gluten exposure seem to always evolve especially if we have a good amount of time between them.
