  1. @Mer123, You may have vitamin and mineral deficiencies. Gluten containing products are required to be enriched with vitamins and minerals to replace those lost in processing. The gluten free counterparts are not required to be enriched. Since you've been off gluten containing products for a month, you are probably not absorbing sufficient vitamins...

  18. You could get the rash tested for dermatitis herpetiformis which only occurs with Celiac Disease. If your rash is DH, then you have Celiac. False negatives from improperly taken biopsy samples are possible. Or genetic testing can spot if you've got any of the most common, known genes for Celiac.
