  1. Frankly, I wouldn't have a lot of faith in what that naturopath says about ANYTHING if he would tell you such an ignorant, totally silly thing (i.e. that caffeine caused celiac disease). It's one thing to not know about something and admit to that fact, but to conjure up such an erroneous statement is irresponsible and dangerous to YOUR health.
  2. Hi Nikki...I see you are in the UK. I thought doctors in Europe were better at diagnosing celiac than they are here. Am I wrong? Is it just as tough to get a real diagnoses there too???
  3. South beach is kind of like Atkins, but allows a bit more veggies. In the begining phase it's basically Atkins, but in the later phases it incorporates more low fat dairy and more fruit. For someone eating gluten free it's great because there are no grains. Lots of protein, certain veggies, certain limited fruits, certain limited cheese & ricotta...
  4. I just got some Jennie's coconut macaroons from my health food store. They are soft and absolutely yummy...no gluten, no milk, no soy. All they have in them is unsweetened coconut, honey & egg whites. That's it! They come in a can with a plastic top to keep them fresh. They're also Pareve, for those of you who look for that! And the website is www...
  5. I guess I'm looking for something similar to milk. I used to try rice milk on cereal but didn't like it. I tried soy milk in coffee and it had an added flavor I didn't particularly like. I've never tried almond milk....does it taste a lot like almond? Or like almond flavoring? Otherwise, I'd like to find something to substitute that won't change flavor...
  6. Has anyone found a good substitute for liquid milk in recipes...something that doesn't affect taste or add some weird new taste to things?
  7. YUMMMM...thanks for posting this recipe. I LOOVEEE Indian food, and I've always loved pakoras!
  8. I just bought a Namaste Brownie mix, but when I got home I discovered you need to add a CUP of oil...yikes! I'm wondering if I could use something like applesauce for part of the oil. A cup is a horrendous amount of oil for something like that. Any ideas?
  9. This incomplete blood test just shows how utterly CLUELESS most doctors are. At the time I requested the test, I was having a lot of digestive and OTHER symptoms, and I told my doctor about wanting to get tested, and he was of course totally ignorant about what test to order. And he was also a bit reluctant to order the test because, after all, I didn't...
  10. Well, this is kind of interesting. I found an old blood test from 2001....at that time I had requested a celiac test from my GP, who really knew nothing about celiac disease. Anyhow, I just found the old results....at the time I didn't realize this paper was the celiac test because it doesn't say that, but with my new-found knowedge I realize that's what...

    ARCHIVED Casein?

Casein is the milk protein, and therefore, it would be a component of anything made from milk. That would include butter. Read labels....milk chocolate will of course have a high level of milk in it and much less cocoa. Milk chocolate makes me feel terrible, although I LOOVVVEE milk chocolate. If you get a fairly dark semi-sweet chocolate you can find...
  12. That's interesting what you said about how maybe my mom does OK because she doesn't have the casein sensitivity like I do. I hadn't thought of that. She was in terrible shape when she finally got diagnosed 40 years ago,she nearly died, but from the moment she gave up gluten she continued to have dairy and never had problems with it.....when she had her...
  13. Hey....what is "normal" anyway? From what I've read, gluten probably shouldn't be eaten by anyone. Humans are the only living beings that drink milk beyond infancy, and look at all the problems people have with dairy and digestion. The reason certain foods cause reactions in so many people is precisely because they actually shouldn't be in the human diet...
  14. For myself, I wouldn't worry about food prepared in the same facility, and probably not even the shared equipment, if that occurs with gluten products. I doubt I'd react to 33ppm items, although I'm sure my mom would, and she gets deathly ill from any minute contamination. I believe she also had a reaction to the Amy's once, by the way, and she was vomiting...
  15. I'd love to have some comments about the various Enjoy Life products, which things you liked, didn't like, etc. I hate to order things blindly.
  16. The "shared equipment" statement means a real no-no. That's a sure recipe for contamination, even though they supposedly clean the equipment. The "same facility" statement is definitely a legal thing to cover all bases in case of lawsuit, I suppose. My son is deathly allergic to peanuts, and we eliminate everything that has either message. It's nice to...
  17. If you've identified milk as a definite culprit, you're probably right. The question will be, is it merely lactose intolerance made worse by gluten damage or is it casein sensitivity. If you're not casein sensitive, then perhaps at some point the lactose intolerance will lessen or go away. If it's casein, it won't go away. That's my understanding at...
  18. Here's what I always found to be true for myself, given my own sensitivities: Almost ALL drugs I have ever had to take gave me more problems than they were worth. Even headache pills bother me...I've only found ONE that doesn't. I've had varying reactions to different things....so for 30+ years I have avoided taking anything I absolutely didn't have to...

    ARCHIVED Casein?

Boy, what a list! It's funny, too (or not so funny) when I think of all the YEARS I spent trying to find a reason for my asthma-like symptoms....yet, when I had intensive and very expensive testing for asthma they said "nope, not asthma". I even had more intensive testing with a heart specialist to track down the asthma again, and a chronic cough. Nothing...
  20. In the book "Wheat Free, Worry Free by Dana Korn, on page 95 is a long article by a doctor called "Why your doctor wont' test you for celiac disease." One thing this doctor mentions is that her only exposure to celiac disease was about 5 minutes out of 4 years of medical school in a class called Pathology. In this 5 minutes she was told that this "gluten...
  21. An allergist told me once that all of us, allergy or not, should really rotate most all foods, and particularly the problematic ones such as corn, dairy, wheat, soy etc. He said you should eat a food only once every 4 days or so. I do think you can reach some sort of "overload" state. I have a friend who loved and ate strawberries her entire life, and...
  22. I got my Enterolab results for the egg/yeast/soy test today and they were all normal levels, so that's GOOD. But I'm surprised about soy....it seems to always give me problems. Maybe with soy sauce it was always the presence of wheat. But after I'd given up milk awhile back, I tried a soy milk cappuccino and I got the WORST stomach ache and D almost immediately...

    ARCHIVED Casein?

My understanding is that an allergy is a different animal from sensitivity or intolerance. Your symptoms are much the same as mine. I thought for 20 years that I was lactose intolerant, which means a person has trouble digesting the milk SUGAR. I took lactaid, which actually didn't help all that much, but maybe a little. Just recently when I got myself...
  24. I'm not doing very well. I went gluten/dairy free on Nov. 25 and was really good until I got my Enterolab results back on Jan. 18. I was actually feeling pretty good by that time. My results weren't so surprising I guess (celiac & gluten sens. genes, casein sensitive). I was trying to accept eliminating all gluten and dairy forever, but ever since...
