ARCHIVED Need gluten-free, Dairy-free, Egg-free Dessert Recipes
RiceGuy replied to Anya78's topic in Gluten-Free Recipes & Cooking Tips
Tapioca pudding is wonderful - add apples or apple sauce, berries, banana, pineapple, coconut, etc. Vanilla and cinnamon go great of course, as does lemon. You can make the pudding with just water, or any nut milk, soy milk, rice milk you prefer. Experiment and see. You could even use Stevia instead of sugar to make it extra-healthy too We're in pumpkin... -
ARCHIVED Monosodium Glutamate
RiceGuy replied to Tavi2's topic in Gluten-Free Foods, Products, Shopping & Medications
The manufacturers do have tricks to conceal the way they add MSG to products, so they skirt around the labeling laws. They will even boldly say "no MSG" and such! And yes, it IS responsible for some portion of the diabetes and obesity in America. Since the 1970's it has been used to actually make rats develop diabetes and obesity, so they can test drugs on... -
ARCHIVED Matzo Meal
RiceGuy replied to hannahsue01's topic in Gluten-Free Foods, Products, Shopping & Medications
Oh yeah. Good catch. It IS an ingredient - in a breading mix. But gluten-free breading doesn't need to use matzo, though I see the idea behind using it. I don't use breading on anything, but if I needed to I think I'd first try a gluten-free hot cereal. The "mighty tasty hot cereal" comes to mind, as does corn grits. Something like that might cook quickly... -
ARCHIVED Matzo Meal
RiceGuy replied to hannahsue01's topic in Gluten-Free Foods, Products, Shopping & Medications
That's interesting, though I doubt the manufacturer is strictly sticking to such traditions. I Googled and found sites providing matzo recipes for passover, and easily found some with no reference to the kind of flour to be used. Seems to me matzo should be easy to make with something like buckwheat, rice flour, sorghum, millet, or a number of other gluten... -
Fantastic! That is really encouraging to anyone struggling, be they a newbie or not.

ARCHIVED Manicotti Or Jumbo Shells
RiceGuy replied to IsAMom's topic in Gluten-Free Foods, Products, Shopping & Medications
A quick Google revealed Open Original Shared Link ricotta is gluten-free. Also in Open Original Shared Link it lists Saputo, and Bari & Stella Whey Ricotta cheeses are gluten-free. I'm certain a number of others are also. -
ARCHIVED Is This Okay To Eat?
RiceGuy replied to spunky's topic in Gluten-Free Recipes & Cooking Tips
I've never seen such warnings on the frozen veggies I've been using. Is it one of those kinds that include a seasoning packet? Nuts seem to always be somewhat suspect, unless you shell your own. Anyway, the amount of gluten required to trigger a reaction is microscopic, so it doesn't have to look like there's flour on it to be contaminated. As the saying... -
ARCHIVED Matzo Meal
RiceGuy replied to hannahsue01's topic in Gluten-Free Foods, Products, Shopping & Medications
I seem to recal reading that it's made with wheat. I'm sure Google can help though. It may be there are gluten-free kinds of matzo, but that would certainly be noted on the package. -
There are a number of online stores that have the B12 if your local health store doesn't have it. For example there's Open Original Shared Link, and Open Original Shared Link, , just to name two. Prices seem to vary widely, but a Google or Amazon search should turn up some good deals. As for other supplements, that's not as easy to suggest with specifics...

ARCHIVED When Should We Start Seeing Results?
RiceGuy replied to mom2two's topic in Parents, Friends and Loved Ones of Celiacs
I've found prunes to be effective, as well as apples. Just make sure she drinks enough water, especially with prunes, or any high fiber stuff that soaks up water. There are two basic types of fiber - soluble, and insoluble. You might find the info on Open Original Shared Link to be very helpful. Do look out for casein too, as it is in all sorts of stuff... -
I'd never trust fries from a fast food place. Too many chances for contamination while being prepared. If they are seasoned, I'd be doubly doubtful, and obviously if they are battered then no way. Surprisingly, Ore Ida offers both seasoned and "Fast Food Fries" that are gluten-free. Here's their gluten-free list: Open Original Shared Link

Though the B12 level seems good right now, I believe I read that the body will rob B12 from various organs, stored reserves, and anyplace else to keep the blood levels up, so the number may be misleading. You should check on that, as I'm not totally certain at the moment. If and when you find a supplement is desirable, from all the recent reading I've been...

ARCHIVED Question
RiceGuy replied to mbg98's topic in Gluten-Free Foods, Products, Shopping & Medications
Well for what it's worth I'm gonna take sublingual B12. So far the methylcobalamin form appears to be the best overall. It's cheap enough to give it a try and as long as it doesn't have other vitamins with it, no known toxicity level, so practically no chance of overdose. Side effects from whatever sweeteners they use, such as sorbitol might be something... -
ARCHIVED Canola Oil... Used It For Frying
RiceGuy replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
I don't know if I'd trust it myself. From what I've read, canola isn't exactly all that great to begin with. As I understand it, oils tend to degrade, turning rancid when exposed to heat and light. I recall that the rancidity is due to the formation of free radicals. Just like olive oil, canola oil is not exempt from this, though the degradation will differ... -
ARCHIVED Detoxification
RiceGuy replied to Heater's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't know about seeing gluten in the bloodstream directly - maybe her words for something else. But my impression is that she might have been getting some gluten unknowingly. If so then she still could be. I didn't do any detox-specific stuff, but I would hope eating healthily will enable your body to move stuff along as best as may be expected under... -
I've found avoiding casein a snap compared to gluten. I did miss the cheese at first, and still do a little. But I know there's the soy stuff which I think I'll be fine with once I know my gut is better prepared. Right now I'm just trying to give it as easy a time as I can to quicken the healing process. The way I see it, the quicker it heals, the sooner...

ARCHIVED What Margarine Is Glueten And Lactose Free?
RiceGuy replied to Rodney's topic in Gluten-Free Foods, Products, Shopping & Medications
Hmmm...can you explain further? Because last I knew carbohydrates and sugars are two separate things, and would get listed separately. The typical margarines usually have whey. I just did a quick Google, and the first site I found says whey is largely lactose. <EDIT> From the US Dairy Export Council: Typical Composition of Whey Protein... -
ARCHIVED What Margarine Is Glueten And Lactose Free?
RiceGuy replied to Rodney's topic in Gluten-Free Foods, Products, Shopping & Medications
Welcome to the board! I really like the margarine from Open Original Shared Link. It's actually better than I thought it would be. The part I like is that it comes in a stick, not that fake, watered-down butter-wanna-be junk in a tub. It's also non-hydrogenated, has no trans-fat, and a bunch of other good things. It even works for baking and frying. They... -
There is a company called Galaxy Nutritional Foods that makes gluten-free cheeses in both soy-free and casein-free, as well as other varieties. Their casein-free products appear to be lactose free as well, and include mozzarella, sour cream, cream cheese, and a few other things. All the cheese substitutes I've found thus far either have soy or casein, and...

ARCHIVED Glutened By Unknown Sources
RiceGuy replied to RiceGuy's topic in Gluten-Free Foods, Products, Shopping & Medications
I just found this on the Elmer's glue site: Is Elmer's glue gluten free? All of our products are gluten free except for the Elmer's Finger Paints. The finger paints contain wheat and oat products. So it seems the children could get glutened in art class too. -
Wow. I also thought the last few meat products smelled disgusting to me! I likened it to something between a cat and a rabbit. Is that the "gamey" smell people talk of?

ARCHIVED Glutened By Unknown Sources
RiceGuy posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Hi everybody. Something occurred to me for which I have yet to find a definitive answer. Many on this board report getting glutened, and feel it is cross-contamination in a bag of some baking mix, a box of gluten-free cereal, etc. Well, suppose it's not CC, but the darn glue on the box? Then whenever you open the box of cereal for example, you'd be getting... -
ARCHIVED Convenience And The gluten-free Diet
RiceGuy replied to elfkin's topic in Gluten-Free Foods, Products, Shopping & Medications
The thing that comes to mind about your situation and ordering online is the delivery time. If nobody is around to receive the packages, what would happen? Perhaps if the shipping office (UPS or whomever) is open late enough, they could hold the packages for you to pick up, though you'd have to check. As for prices, I find that online prices tend to be pretty... -
ARCHIVED Manicotti Or Jumbo Shells
RiceGuy replied to IsAMom's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes, according to their website, they do make large shells, and their Open Original Shared Link shows them stuffed. -
ARCHIVED Where Can I Get Bulk Gluten Free Baked Goods
RiceGuy replied to a topic in Coping with Celiac Disease
I haven't tried to make gluten-free pancakes, but seems like an easy one compared to something like a gluten-free bread that simulates a wheat bread. I suspect you'd save a ton of money by purchasing the separate ingredients and making your own mix. There's practically no end to the recipes you can locate online, and I'm sure many members here have suggestions...
