I also found nightshades to really bring on joint and muscle pains, which would last for weeks. As for easing the symptoms, from my experience, magnesium and vitamin B12 have cured it. I no longer experience any of the debilitating pains I had. Completely gone! So in my case it was due to nutrient deficiencies, which I presume allowed the toxic alkaloids...

Since you had been using the hemp milk for months, without a specific gluten-type reaction, I'm not so sure it has much to do with your hair and apparent malnutrition. Many of us find it necessary to take nutritional supplements in order to make decent progress. A search will locate numerous threads on the subject. As for the coconut milk, and other non...

ARCHIVED Was I Glutened?
RiceGuy replied to Cheryl-C's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Just a guess, but maybe the CC was from a different kind of gluten-containing grain than the usual. I mean, there are several types besides wheat, barley, rye, and oats. -
ARCHIVED Is It Possible To Get Withdrawal Symptoms
RiceGuy replied to smile's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Narrowing down a food sensitivity can be tricky. But I think I'd start with the top allergens, and of course anything which you've been eating more of since going gluten-free, or haven't eaten much if any until going gluten-free. The top allergens are wheat (obvious), dairy, soy, corn, eggs, tree nuts, peanuts, and shellfish. Nightshades are another common... -
ARCHIVED Is It Possible To Get Withdrawal Symptoms
RiceGuy replied to smile's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Although there are certainly withdrawal symptoms for many people, I've not heard of a rash or acne being a symptom of withdrawal. Perhaps it can happen, but you may want to consider some of the other top allergens as possible culprits. Things like dairy, soy, corn, eggs, nuts, etc. Some people break out from yeasts. The gluten-free diet has a way of allowing... -
There are two basic types of carob - Virginia Roast, and Dark Roast. You may prefer one more than the other. You may also like to add some mesquite powder to it, as well as some vanilla. BTW, ever try raw, unpasteurized, unfiltered Apple Cider Vinegar to resolve the heartburn? Many swear by ACV for eliminating heartburn, even curing it. Also, HCL w/pepsin...

Not sure about a maker, but there are instructions for making soy and/or other milk which doesn't require anything special at all. For soy and nut milks, it often involves using cheese cloth to strain it. I think the basic idea is to cook soy flour in water, strain it, and add vanilla and sweetener if desired. A little xanthan gives it a nice creamy consistency...

ARCHIVED Not Rising Enough & Which Beater To Use?
RiceGuy replied to WVSweetie Pie's topic in Gluten-Free Recipes & Cooking Tips
Beating for too short a time may lead to uneven distribution of the ingredients. But I am not aware of any real problems from beating a little longer or a little faster. The suggested 3-4 minutes should be sufficient. Too long can allow the dough to cool more, and thus may require a little extra rise time. It may also allow the dough to lose additional moisture... -
ARCHIVED Not Rising Enough & Which Beater To Use?
RiceGuy replied to WVSweetie Pie's topic in Gluten-Free Recipes & Cooking Tips
I've found that over-rising will lead to exactly what you describe. It can't continue rising as much as wheat dough. If it goes too high, the binders simply cannot hold the bubbles any more, and they begin to collapse. Keep in mind that some of the rise should occur during baking. I find that the softer the dough, the more of the total rise should occur during... -
ARCHIVED Gluten Free Forum Will Freeze
RiceGuy replied to Simona19's topic in Board/Forum Technical Help
Tough to say. There are potentially many possible reasons. When it happens as you try to reply, does it freeze while you are typing, or only when you click the button to get the reply form? Have you tried a different browser? Have you checked to make sure your browser has all applicable patches and updates? -
ARCHIVED Pain In Upper Legs And Hips
RiceGuy replied to bincongo's topic in Related Issues & Disorders
First, the tests for B12 are known to be inaccurate, and the serum level does not represent intracellular levels. Also, the level which is considered "normal" depends on who you ask. And in Japan, the recognized minimum level is quite a bit higher than in the US. Vitamin B12 is necessary for the production of both serotonin and melatonin, as well as a number... -
ARCHIVED Pain In Upper Legs And Hips
RiceGuy replied to bincongo's topic in Related Issues & Disorders
What you describe sounds all too familiar to me. It eventually got to the point where I could no longer walk at all. The pain became intolerable. Thanks to some posts on this board, I narrowed it down to vitamin B12 and/or magnesium. After about a month of B12, there was some improvement, but I had the sense that there was more too it. Once I added magnesium... -
ARCHIVED Vitamin D Levels In The Tank
RiceGuy replied to quincy's topic in Coping with Celiac Disease
I do know that consuming fat with the vitamin D helps, since it is a fat soluble vitamin. Actually, "vitamin" D is in fact a hormone. Perhaps coconut oil would help you with the fatty acids, since it has a large portion of MCFAs, which take an entirely different route of absorption than other fats. I've found it to be very helpful. There are other nutrients... -
ARCHIVED Vegan gluten-free Pumpkin Pie?
RiceGuy replied to SGWhiskers's topic in Gluten-Free Recipes & Cooking Tips
I just made a gluten-free, egg-free, dairy-free, vegan, soy-free, corn-free, pumpkin pie a few days ago. It was also sugar-free thanks to Stevia. Except for the crust, it can even be a no-bake pie. Was thinking of posting the recipe. So, I guess I'd better measure everything next time so I can post a recipe that'll work without guessing. Hope you can wait... -
I have found digestive enzymes to be helpful in appreciably reducing the bloating. Look for the kind derived from microbes, since they can withstand the acidity of the stomach. Some formulas are better than most, which are typically cheap and not very effective IMHO. Some also contain gluten, even though the label may claim gluten-free. This is because barley...

ARCHIVED Anybody Have Problems With Gelatin?
RiceGuy replied to Tidings's topic in Gluten-Free Foods, Products, Shopping & Medications
I use agar agar in place of gelatin. Works quite well. As for supplements, Country Life and NOW Foods make many which use vegetarian capsules made from plant cellulose, not gelatin. Chicken feet...yuck! I don't even want to contemplate all the disgusting things those chickens walk on in those chicken coops. -
ARCHIVED Uprisings - Reaching New Heights In Gluten-Free Baking
RiceGuy replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
My apologies for the late reply. Well, since the sweet potato flour I buy is produced from white sweet potatoes, not the orange/red variety, it will undoubtedly be different to some extent. IMHO, it wouldn't work similarly enough to enable following the rest of the recipe. If nothing else, it would account for a considerable amount of the water, and determining... -
ARCHIVED Uprisings - Reaching New Heights In Gluten-Free Baking
RiceGuy replied to RiceGuy's topic in Gluten-Free Recipes & Cooking Tips
OK, so I've played around with this recipe some more, and I think the results I now get are better. I've found that bean flours can work just fine as part of the blend, without sacrificing height. They just require more water to allow a complete rise. For the most part, the advantage of bean flours in this recipe is better browning. But the additional protein... -
The best tip I think I could give is to use pure Stevia extract powder in place of sugar. It is completely natural, zero sugars, zero calories, zero carbs, and zero on the glycemic index. It does not feed yeasts at all. It will require a bit of getting accustomed to, as it is extremely sweet. Less than a teaspoon can replace an entire cup of sugar, depending...

ARCHIVED Bloating After 10 Months Of gluten-free Diet?
RiceGuy replied to glutenfreeinminnesota's topic in Coping with Celiac Disease
I agree with what i-geek has said. I would add that I've found digestive enzymes to be very helpful to reduce the balloon belly. I'd suggest the kind derived from microbes. Not only do they tolerate the natural acidity of the stomach, but it'll help avoid possible barley-derived enzymes. -
ARCHIVED Where Next? Still Tired
RiceGuy replied to GfreeMe's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The suggestions you've been given thus far are all good. I do think it would probably be very helpful to try some supplements. A strong co-enzyme B-complex, magnesium, sublingual methylcobalamin tablet, and a multivitamin/mineral formula would be where I'd start. Possibly zinc too. How's your iron and ferritin levels? For the tiredness after eating... -
ARCHIVED Bipolar? Need Advice.
RiceGuy replied to crimsonviolet's topic in Related Issues & Disorders
You won't have to give up ice cream. Just the ones made with dairy. Try coconut milk ice cream, such as Open Original Shared Link or Open Original Shared Link. The supplements are something you can begin right away. Whether you'll still need them if you start the EPP may depend on what that product contains, and what you're deficient in. -
ARCHIVED Black Rice Flour
RiceGuy replied to kimis's topic in Gluten-Free Foods, Products, Shopping & Medications
I wonder if you're referring to Open Original Shared Link flour. That's the only product I'm aware of which resembles what you're looking for. I agree with the idea of using a coffee grinder to make your own. I've had success with it as well. -
ARCHIVED Healing Process- Fatigue, What To Do?
RiceGuy replied to MegRie's topic in Coping with Celiac Disease
Fatigue is very common when first going gluten-free. It can be due to gluten withdrawal, nutrient deficiencies, or both. Some other possibilities may include additional food intolerances. Hidden gluten can also be a culprit. Avoid scratched non-stick pans, cast iron pans, wooden utensils and cutting boards, strainers, colanders, and other items which have... -
ARCHIVED Puffed Rice Cereal
RiceGuy replied to Frances03's topic in Gluten-Free Foods, Products, Shopping & Medications
I don't trust Arrowhead Mills either. Got glutened by their flours, so that was it for me. I was looking for puffed millet and amaranth recently, and also didn't find any. For the puffed rice, suppose you take some rice cakes (Lundberg makes them gluten-free), and break them up? Either by hand, or maybe in a blender of food chopper? While looking...
