From what I've read, serum B12 levels won't show a deficiency until you're in deep trouble, since the body will rob the vitamin from tissues and organs, in order to keep blood levels up. It sounds like she may be dairy intolerant. This is very common with Celiac too. Even if she's not dairy intolerant, the digestive system may not be up to the challenge due to damage from Celiac. The rice flour in many gluten-free recipes can be replaced with sorghum and/or other flours. Buckwheat works nicely for pancakes. Gluten-Free crackers are easy to make, and can turn out well with numerous types of flours. -
Your suspicions may very well be correct, as DH is not always symmetrical. But even if it isn't DH, it doesn't mean you aren't sensitive to gluten. Many members here have and do experience odd rashes, blisters, and other manifestations on the skin. Welcome to the board!

If you haven't tried a digestive enzyme formula, it might be worth doing. Just make sure it is derived completely from microbial sources. It didn't mean there wasn't any natural food left in the store at all. Just that the next shipment containing such items wasn't due until Friday. Stores generally don't wait to run out of something before ordering more, but sometimes sales exceeds expectations.

If the digestive enzymes aren't derived from microbes, they may be getting destroyed by the time they get into the small intestine. Also, many enzyme formulas lack certain types of enzymes which other formulas have. So it may be that you aren't getting the right kind, or enough of, the specific ones you need. Sounds to me like you'd benefit from taking magnesium, co-enzyme B vitamins, potassium, vitamin D3, and perhaps zinc. Some other nutrients which benefit the nervous system include phosphatidyl serine and choline, both abundant in lecithin. Though multivitamins can have many nutrients in one pill, they often lack meaningful potency for some of those nutrients...
