  4. Just to be thorough here, there are numerous grains which do not contain gluten. For example; Buckwheat, millet, rice, amaranth, t'eff, corn, quinoa, and sorghum. Some people might end up with less fiber or protein when not eating grains I suppose. Unless they add other foods to make up for them of course.

  7. I think the recommendation to avoid dairy is wise. You can always reintroduce it later and see what happens. But initially the body needs to heal itself, and dairy is often a problem for Celiacs. The only thing I'd add, is once you've talked with your doctor, go gluten-free no matter what they said.   8. OK, well I think you are correct in saying that you are underweight. Would you say your frame is average or narrow? To judge bone size, consider things like ring size, bracelet size, etc. Any part of the body which is supposed to be fairly bony. It does sound like you've got a decent range of supplements, so I cannot see any large holes in that picture...

Another dairy free cheese is made by Galaxy Nutritional Foods, but they also use MSG in at least some if not all of their products.   14. I guess before I can make any suggestions, it is important to know whether you're low body weight is due to low muscle or low fat, low bone mass, or even low water retention.   19. Well, I'm not a DH expert, but it does look similar to what I had. I'm sure others on the board will be able to judge better. Mine was (thankfully) somewhat mild, and now generally doesn't show itself very much or often. Apparently, iodine can make it worse, so it is suggested to avoid foods high in iodine, such as kelp.   20. OK, I've read that too, and I did buy some. Seems to help to some degree. Not sure why you'd want to cook it, but when I had the yeasty beasties, I took caprylic acid capsules. Worked miracles.   21. Besides the sublingual methylcobalamin (B12), I'd suggest magnesium, and maybe vitamin D. Some others to consider might be calcium and zinc. If you google zinc deficiencies, you'll get the common symptoms, so you can see if they fit you. For the candida, I'd suggest caprylic acid. Curious, I have only heard of using apple cider vinegar for heartburn...

  23. Well, I had things turn out gritty until I started using millet flour, sorghum flour, buckwheat flour, etc. These are not gritty at all IMO, and I don't buy superfine or anything special. I'm sure they'll work in cookies. As for making them healthier, and lower in calories, try Stevia in place of sugar, and coconut oil in place of butter or margarine.
  24. I wouldn't worry much about your weight right now. Once you begin to heal, you'll be absorbing better, and that should help to get you closer to your ideal weight. Many do gain weight being gluten-free, especially if they had been underweight before. It is easy to obtain good fats too, but what you eat will depend on your particular intolerances/allergies...
  25. Absolutely. On this subject, I generally recommend powdered magnesium in orange juice. The powder form ensures maximum absorption, and the acidic juice enhances this too. BTW, cocoa does have a fairly good amount of magnesium, so I'm guessing that's why it might help.
