  7. where in salt lake do they buy the flour? we are about 3 hours from salt lake, and i have a sister in riverton and another in sandy (i think). since you're from that genreal area----are there any good sources of gluten-free products in logan or ogden? they are even closer. oh yeah, i have a sister in layton, too. christine

  10. susan, i made our old favorite choc chip cookie recipe and used bette hagman's featherlight mix and some sorghum flour, and a little bit of potato flour and xanthan gum-----they turned out really good---almost like "before". i don't remember the exact amounts----i was winging it. christine
  11. store bought goat milk is probably not going to taste very good. but, if you milk your own goat and feed it grain, (no weed munching) you might not even be able to tell the difference between it and cows milk. i have an old cream separator out in my garage waiting for the day that i get a goat again. christine

  13. actually, they only have to list wheat----not other gluten containing grains, but i *think* that it is not very likely to find the other gluten containing grains hidden under another name. barley will usually be listed as malt, and oats are usually listed either as whole oats or oat flour. i don't think rye is used in that many things. there may still...

  17. ped gi called me today with my son's test results. he said that he does not have active celiac, but that he does have the gene for it. he has HDL-Q2---or is it HLA-DQ2? he said that he should be tested for celiac about once a year. i understood from what he said that we should also test if he started having symptoms, or if he was having regular blood work...

  20. we must be pretty lucky---our ped gi seems VERY well informed about celiac, it's complications, and it's actual prevalence. christine
  21. your son is IgA deficient, so he needs to have a completely different testing done to know if he really has celiac. IgA deficiency is something that can go along with celiac, in fact, celiac can actually cause IgA deficiency. someone with celiac is 10x more likely to be IgA dficient than the rest of the population. one of my boys is IgA deficient. our ped...

    i have often wondered if the chemicals in our foods are responsible for the increase in so many of our maladies-----it was interesting to hear our ped gi suggest the same thing----i've never heard a doctor express that line of thinking. christine p.s. there's always baking soda for brushing your teeth!
