    I have found sometimes it is best to give them EXACTLY what they ask for. In this case they wanted letters, so I had to show them just how dumb and large their request was. Asking for the name and address of their professionals was simply in kind of them requiring one of me! hehehe

    Me too! My thyroid called it quit, I am hypo so no sugar for me and yes, in the first week of being gluten free, I packed five additional pounds (I think all on my caboose). I do have more energy though and just last night slept for a solid 8 hours. I am exercising more and hope that after a month of this gluten-free diet that the weight gain stops....

    So again, they are passing the buck to the supplier. If I understand correctly, they first stated that the gluten (from wheat) comes from the oil, yet wheat is not mentioned in the oil section, it is listed in the actual fry ingredients section.     gluten-free, Since starting my gluten-free diet (only a week and a half now) I have started in with the "charlie horse" like cramps in the muscles in my legs as well. The treatment is to go gluten-free, after being gluten-free for a while, your tests will come back negative, but if you go back to gluten foods, guess what, your tests will once again be positive.
