ARCHIVED Dairy Free And gluten-free Butter?
penguin replied to VydorScope's topic in Gluten-Free Foods, Products, Shopping & Medications
No help from me on the butter issue, but as far as the shortening-in-cookie thing, Alton Brown had a Good Eats episode called "three chips for Sister Marsha" (can't tell I'm a fan, right?) and at least one of the recipes used shortening. If you could catch that episode, he'd explain all of the wonders of using different fats for different results. I think... -
ARCHIVED What Is Your Most Annoying Symptom?
penguin replied to erin24's topic in Coping with Celiac Disease
EXACTLY! My face going numb and having the rest of my head on the ceiling is really annoying, especially at work. DH doesn't appreciate it either, my attention span goes from zero to negative... The D is pretty annoying also, nothing like abandoning your cart a half hour into your wal-mart trip to ruin your day. And stinking up the place... -
I know about all of the other sad posts, but since it's Friday and all, I thought I'd try to bring a bit more fun back to the thread... I HATE it when Sonic forgets to put the marischino cherry in my dang cherry coke! Hey, the little things count too!

ARCHIVED Nice Response From Nestle...
penguin replied to AmandaD's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow, nestle! Forgive me for tossing out baking chocolate because I thought the ingredients looked funny... I <3 Nestle! I'm going to have to try those cookies! I'm famous for my cookies... Let's hope it rings true for gluten-free, too! -
ARCHIVED Positive, Negative, Really Confused
penguin replied to moonunit's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Why is it that gastroenterologists are all part of the MEDICAL DIETY club? Pisses me off. My internist (my normal doc) is the one who diagnosed me. She said that going to a gastro was unnecessary, given my funky bloodwork and dietary response. Think about it- your PCP is the one who sees you the most often, sickness and health, and knows your... -
ARCHIVED More Questions On This Milk Reaction...
penguin replied to VydorScope's topic in Related Issues & Disorders
I'd really reccommend not chugging milk...drinking it slowly is probably a better idea, IMO. Even if it's skim milk, it's still kind of rich... Drinking milk fast will make anyone sick. Also, as far as Zyrtec is concerned, I'm allergic to tree nuts (oral allergy syndrome) and my reaction is NOT lessened by allergy meds like Zyrtec or Claritin. Someone... -
ARCHIVED Help Me Find Something To Drink...
penguin replied to penguin's topic in Traveling with Celiac Disease
Yeah, Austin is a huge party town (6th street, anyone?) and they're doing that stuff here this weekend. Massive scandal. The cops are undercover and can arrest any patron who is drunk, a bartender for giving someone drunk drinks, or bar employees who are drunk on the job. It's pretty much BS, they say that you're not exempt from the public intox laws because... -
ARCHIVED Help Me Find Something To Drink...
penguin replied to penguin's topic in Traveling with Celiac Disease
I'm a fan of hard liquor, because beer always made me sick. The punishment was always way harsh for the crime... I don't drink rum, because of a conference incident in college... I'm bringing my own absolut with cranberry juice and 7up for the hotel... Are margaritas safe at bars? I used to drink long islands, but I don't know if they're safe... -
Well, my friend's bachelorette party is in Dallas this weekend, and we're going to a club (thanks, Lollie!) and doing bachelorette type things... I'll preface my next statement by saying that we are all over 21, and nobody is even thinking about driving anywhere that night. There will be some danger in wearing heels, however Anyway, does anyone...

ARCHIVED Need Info Urgently!
penguin replied to Estelle's topic in Gluten-Free Foods, Products, Shopping & Medications
Regular grocery stores don't have tons of gluten-free stuff normally, but Cali is a good place to go if you're looking for alternative diet food! this site should help you a lot: Open Original Shared Link It's gluten-free in San Diego, which isn't anywhere near Palo Alto, but a lot of their resources have to do with chains that are all over the state... -
ARCHIVED Idea - How About A gluten-free Convention
penguin replied to Nantzie's topic in Introduce Yourself / Share Stuff
I am SO DOWN with the gluten-free Iron Chef! Kick ass! -
Women are taught to be very demure about their pooping. As far as my grandmother is concerned, nobody poops! (though I wouldn't be surprised if she doesn't, she's pretty grumpy ) In college I had people thinking that I was in the bathroom all the time because I was throwing up. Everyone knew I was sick, they just didn't know about the D. Erm, I didn...

Glad I could be of service The baker's catalogue is fantastic, they even have some gluten-free baking stuff, the company that runs the catalogue is King Arthur Flour (my fav before celiac). They're a great company!

Here you go! Open Original Shared Link Knock yourself out! They've got pans for EVERYTHING! Hamburger buns, hot dog buns, donuts, scones, fancy bundt pans... Hope that helps! Oh, and for hamburger buns, a cheaper option is to save your tuna cans, clean them, and use those as pans! Make sure you put them on a cookie sheet first!

ARCHIVED Non-soy Non-dairy Milks? Whats Safe?
penguin replied to VydorScope's topic in Gluten-Free Foods, Products, Shopping & Medications
Things like broth help to make up for the lack of dairy in cooking savory things. Not sure about what would work for baking. -
ARCHIVED Milk - Alergy Vs Intolerence Vs ?
penguin replied to VydorScope's topic in Related Issues & Disorders
I had both the blood IgE tests and the skin tests, and both were negative. The allergist said that he can do all the skin and blood tests, but the proof of an allergy or intolerance to foods is an elimination diet. Worth a shot, right? Ask the dr tomorrow if there's anything he can suggest. Vincent, I thought at first that we were similar milk wise... -
ARCHIVED How Can You Tell The Difference?
penguin replied to MallysMama's topic in Coping with Celiac Disease
I stand corrected, all the history I had read about Celiac didn't mention anything before Samuel Gee in 1888. I just looked more in depth to the history, and I'll be damned, you're right! Funny how you can miss entire centuries of history... True, but it's all semantics, isn't it? If you don't ingest the gluten to begin with, you don't have the... -
ARCHIVED How Can You Tell The Difference?
penguin replied to MallysMama's topic in Coping with Celiac Disease
To answer your first question, the "celiac affliction" was recognized in the late 1800's, and it wasn't until the 1950's when there was a wheat shortage in the Netherlands that a doctor linked it to gluten, because the celiac kids were getting better without wheat. There are other diseases that are newer, but the problem with celiac is that is has been thought... -
ARCHIVED Amy, I Thought You Were My Friend!
penguin replied to penguin's topic in Gluten-Free Foods, Products, Shopping & Medications
Marsha lady just sent this to me, boy are they on top of things!!! Chelsea, Thanks for getting back to me so quickly. The product you ate was manufactured on October 26, 2005. We made 25,000 meals on that day. I checked the Consumer Services Database that we use to track any problems with products and nothing has been reported for this lot (or for... -

I'm in Austin and I don't have a GI, but Dr. Sara Bartos is my normal dr. and she dx'ed me based on funny bloodwork and positive dietary response. She's good, very common sense. EDIT: I posted this before she got all pissy and left. No offense Janine, if you actually continue to read this, but a positive Celiac test is like a positve pregnancy test....

I'm not Jewish, but as a Catholic who faces the "wheat or holiness" debacle, I can sympathize. I found this: GLUTEN FREE MATZOH BALLS 4 eggs 3 Tablespoons chicken fat/ margarine 1 tsp salt 1/4 teasponn xantham gum (I omitted) 1 cup instant potato flakes 4 tablespoons chicken stock Beat eggs and fat, add salt and gum to potatoes...
