  1. I you need a stiff, low dairy icing, I'd recommend a boiled white icing that has egg in it. Any public library should have cooking books on dessert topics and icings and the ingredients are gluten-free if you make it yourself. Ok, found my receipe, I think this is what you need: 2 egg whites 1 and 1/2 cup sugar 5 tablespoons water 1 teasp vanilla...
  2. Glad it worked out, have a nice Thanksgiving.
  3. Thank you for all the work you do for us so we can enjoy this board.
  4. Dani, we've had same experiences here in NJ. Take celiac3270's advice he's "in the know" about this stuff. We had 25+ years of this poop from doctors who were NOT in HMOs, so insurance wasn't the issue, in the end, it was a $25. per visit HMO GI who diagnosed my husband properly.
  5. Jen, You're right cooking with gluten sets up a bad precedence, but accepting that gluten-free is abnormal, and making your own separate turkey w/gluten-free Stuff you're setting up a "second-class" citizen future. My theory is to not ask "Is gluten-free acceptable?" Just consider gluten-free as normal and proceed accordingly. If you're going to argue...
  6. Thank you. I've been wondering about Tilamok cheese
  7. The alternative way to handle this is to get gluten-free bread cubes and make the stuffing gluten-free without telling him until he sees you eating it. But I am sneaky like that, I would try to get my way no matter what. Before my husband was celiac, I was always lactose intolerant and made dairy based desserts with lactaid drops, he moaned that it made...
  8. I hate when companies say "ask your doctor" -- the doctor doesn't make the product, so what would the Dr. know about it??! It's an easy out for them and it's not customer friendly.
  9. Kim, RE: Employment Practices cases Do you represent the employer or the employee? You are absolutely right that in most cases an employee wouldn't want to bring EEOC action as it might produce the reverse effect. My occupation is to sell EPLI and I tend to look at worse case scenario viewpoint so that I can tell employers what their could...
  10. Carriefaith: I had the same experience with Butterball. I am not the turkey purchaser for Thanksgiving but if I were there's another brand in our A & P that actually says on label "GLUTEN FREE." I don't remember brand right now, but know it when I see it.
  11. Discrimination has a key factor: Disseparate treatment. If the all the workers with diet problems are being treated (or mis treated) the same, then it's considered that the employer cannot reasonably accomodate them and it's OK. But if an employer is treating only one person of the group that has diet problems and that person keeps getting singled...
  12. Cyn As the mate of a recently diagnosed celiac, I can tell you that it could take a while for depression to leave fully. You might seem OK to co workers and friends but like my husband, I see the man at home and know the struggle he has to keep a positive outlook. I know he has good days and bad days. He's been gluten-free for two years now and...
  13. Recommend that you see dermatologist as those patches could be psoriasis or dermatitis and they could get infected and you could need an anti biotic as well as cortisone cream, etc. DH: Well, my husband had DH at hairline area and when he went gluten-free most of it went away -- so we assumed it was DH. If it didn't go away, he would have went to dermatologist...
  14. Yvonne, I have a baby brother who is 27 and I sincerely understand the hole losing a baby brother would bring in your life. My condolences to you and your family. It hurts to lose a piece of your heart. Deb
  15. Something is clicking my memory that the Swanson's broth has either wheat or unlabled starch.....
  16. My husband has weight issues, lost fat from face and can see all bones in face and lost butt and thigh girth. His arms are so thin too. All ribs are noticable. He tries to gain weight, but it lands around his waist now. His hernias (which were repaired more than once) hurt too much for him to lift weights. Seems that there's no answers for this.....
  17. Lisa You asked for advice and what we all think. I want to address the headaches. I understand your daughter is preparing to get married, did she recently go on birth control pills in preparation for marriage? I used to get terrible headaches from them when I took them (I've stopped them just a few years ago and the headaches never returned)....
  18. When someone gets the answer to the "gain weight in one place only" question please let me know. I have been working on this puzzle for over 30 years. All my life I've been bust size 2 sizes smaller than hip, no matter how high or low my weight got. Right now I am 14 on top, 12 in middle and 18 on bottom, I've been as low as 8/6/10 (only time in my...
  19. I recall when I purchased this same 365 Marinara sauce, the tag on the shelf at Whole Foods was blue "gluten free" & that's why I purchased it. The label states these ingredients: Tomato puree, diced tomatoes, onions, celery, mushrooms, red wine vinegar, Parmesan cheese, garlic puree, salt, sugar, expeller Pressed canola oil, basil, parsley, black...
  20. That's great. I hope the Acme near me (which is owned by Albertson's) follows their lead.
  21. Again, let me be clear..this is just based on our experiences and out opinions.
  22. I wish there was a "Doctor" score card or a "Doctor" baseball card. That would be something. My husband's current gastro earns an "A". It was never my intentionn to lump good with bad...I just want to get rid of bad and say that majority are variations of bad.
  23. I'm still very bothered by our experiences and I'm sure all can tell. It is a source of aggravation because my husband's health never came back, and he's a sickly shell of what he once was. During the years he was misdiagnosed there was no such thing as internet, there was no way to investigate stuff like today. We were young and didn't question...
  24. This will be our third gluten-free thanksgiving and I too had a memory blip: True or false: A celiac cannot have a turkey that's been cooked with gluteny stuffing inside of it? (I don't do the cooking that day and I don't remember what we've done for past 2 Thanksgivings).
  25. which is better, the CSA's handbook publication or the Clan Thompson? Lisa: Ok, let you know if/when I can get to go again...My parents have been vacationing down there 20 years plus ago and was thinking of buying property then, but didn't. It's full of enormus beautiful homes. My uncle & aunt will retire down there (we're in NJ) as it's their...
