It's a problem of semantics. The issue is that all people with intestinal damage, most of them pretty sick, are considered to be "celiac", while all people who are gluten-intolerant, from those who are clinically asymptomatic to those who are near death, are lumped in one category as though this is a meaningful characterization for making generalizations... -

Unfortunately it does happen, but not nearly as often as we are led to think. When I was pregnant 24 years ago, I read studies about this same thing, and naysayers were raising questions about the ballooning CS rate even back then. I had a natural birth with no anesthetic, just a little novocaine to sew up a small tear. I was very hard case. -

I think the hot pocket analogy is instructional for someone who has never heard of any of the other types. I was in a classroom, and the subject of savory pies came up. Every single one of the kids was going "Ew, ew, ew...gross!", like they'd never eaten hot pockets or pizza. -

But you can do this same challenge without scheduling expensive and pointless testing. In fact, if you stay gluten-free long enough, you will probably have an accidental glutening anyway, so you don't need to deliberately do this. If getting a positive test result means you're more likely to stay on the diet, then you definitely should not have the test... -

The doctor's wrong. If you test positive on any one test, you have gluten intolerance, and you need to be gluten-free. You got a positive biopsy, which means you definitely have celiac. Some people with positive biopsies don't have intestinal symptoms, but this does not mean it's safe to eat gluten! Start the gluten-free diet, and ask specific questions as... -

If you mix the water and flour cold, it will be fine. You may want to use a whip or a blender to do that. You could have saved that lumpy gravy by putting it in the blender. It's a learning process. -

Often you can substitute coconut oil (I buy LouAna brand at Walmart) for butter in cooking and baking. Olive oil is good for cooking, but not generally for baking. The sites selling these product and the labels on these products never mention celiac, but lots of people take this information to mean that spelt bread is safe. I've never heard of a college doing this to commuter students either, but it's just a reflection of the ways that colleges are getting creative in charging fees to students. They weren't expecting you to eat student meals. They were expecting you to gripe to your friends, pay the fees, and let them keep your money for nothing at all. -

I've always been a very light sleeper, and if my sleep is disturbed, I'm up for the duration. Often I find I can't get back to sleep when I'm hungry, and at night I may not recognize this. But just a spoonful of peanut butter helps to put my stomach back in the zone for sleep. One remedy I have heard is a hops pillow. I have no idea if it works. -

It looks like you're asking us to answer a great many questions that can only be addressed by running medical studies. Why is that? We can each only speak of our own experiences. I went gluten-free without any gastrointestinal symptoms, and I have not developed any autoimmune diseases to my knowledge, knock on wood. -

I can see that might work if the majority of celiacs were diagnosed and on the gluten-free diet, but right now the demand is pretty small. We're not talking small cost here. If a restaurant wanted to take the steps that would provide reliably safe food, it would cost a great deal of money and inconvenience to them, and it's reasonable to compensate them...
