  1. Even though "allergic" is not strictly correct, you could say "I'm like allergic to wheat, barley.stuff like that", which would give him enough information to understand the situation without getting remotely technical.
  2. Lactaid only helps if your only problem with dairy is lactose intolerance. If you are sensitive to casein or some other component, the only thing that can be done is to eliminate dairy entirely.
  3. You might find it simpler to visit a supermarket and natural food store there, rather than bringing all your food in. I have stayed in a room with a microwave and refrigerator. I was boiling eggs in a cup, which just took a few minutes.
  4. I suggest you make stuffing and turkey and gravy at your home, and make up a casserole dish that can be reheated before the meal. That way you can have your own gluten-free turkey and stuffing without complicating their turkey.

What I usually make when I don't have anything in mind is a stir-fry of meat and vegetables, usually fried in olive oil and seasoned with garlic, red pepper, paprika, and black pepper, served over rice. Last night the meat was pork and the vegetables were onions, red peppers, and eggplant (sauteed separately).
  6. What size was the Betty Crocker cake mix called for (in ounces), and did yours give the same number of ounces of dry weight? From looking at your recipe, it looks like something that would produce a small single layer, while I know some of those mixes show layer cakes in the photo on the front of the box.   7. I have found olive oil keeps well in a closed cupboard for a year or more. The expiration date on the macadamia nut oil is for shelf life - until you open it.   8. Keep in mind that the diagnosis of "celiac" really isn't all that firm. It depends on who your doctor is what your diagnosis is. For some doctors the only thing that's important is the biopsy, and a positive biopsy gets a "celiac" diagnosis, while nobody else even gets a "gluten intolerance" diagnosis, regardless of how serious their symptoms are.   10. It's a bland oil. You definitely need to keep it refrigerated, I have heard that it does go rancid quickly at room temperature, while I have found olive oil to be quite stable. I don't know about reactions, as I don't react to tree nuts.
  11. Seriously, it sounds like this doctor's not going to stop running tests until the insurance company pulls the plug. Has anybody ever asked a doctor what they mean when they say the diet is expensive/costly/prohibitive? How expensive can it be compared to the testing he's put you through?
  12. Horrors, if somebody were to go on a gluten-free diet and not only find it's not costly, but end up not paying for expensive testing. Can't have that. Since when should patients have to tell the doctor how to treat them according to best practice? And how many people have tried this and had the doctor refuse?

  14. After reading this thread I went out and bought some. My non gluten-free daughter loved it. I liked the texture, thought it was a little lacking in flavor. I wouldn't pay retail price for it again. I think I could probably make a similar loaf based on the ingredients list and package recipe.

  17. I don't know about that, but I can tell you that when I was taking mixed tocopherols as a supplement, I found them ineffective, while the d-alpha ones were effective.

  19. So what you're saying is that you made two loaves, one with wheat flour, and the other identical except that you had substituted a gluten-free flour and added some cornstarch. Was there xanthan gum in the recipe or in the flour substitute?
  20. I bought some Enjoy Life cinnamon granola that was so horrible tasting I threw the box out after one spoonful, which I spit out. To me it tasted like rancid oil and brought back childhood memories of the scent of some sort of insecticide. Looking on the label, I could see it had rosemary oil in it, which I suspect contributed to the odd flavor.

  24. What I would like to see is some research showing whether babies in utero are exposed to the gluten their mothers eat, just as gluten passes into milk. I think prenatal gluten exposure could be responsible for early childhood celiac. How else could it be that some babies seem to be born already reacting?
  25. You didn't mention eggs, are they out? The important thing will be for you to eat enough fat. Fat should comprise at least 30% of your diet. Meat should not be very lean nor perfectly trimmed. It may take building up to this, but not eating enough fat will cause you difficulty in sticking to your diet and problems in the long run.
