  1. Hey - Heard on the news that there have been about 50 cases of E-Coli in the US traced back (apparently) to raw, bagged spinach. They aren't sure which brand yet, or even if the contamination is still going on, but they decided to release the information just in case. ("They" being the CDC, I think.) Anyway, just a heads-up. The said on the news...
  2. Marilyn - Just wanted to clarify a bit on my last post: If your blood work comes back positive, then you've got celiac, and you need to avoid gluten. But sometimes (up to 14% on the most accurate test, according to one of my husband's labratory magazines) people who do have celiac have negative test results. That is why I suggest that if your blood...
  3. I second the thyroid suggestion. Ask your doctor to run a full thyroid panel (if you decide to have that checked), not just a TSH, because the full panel can pick up problems the TSH misses. Also, try water exercises (if you can get access to an indoor pool - it is getting to be autumn, isn't it?). That should help avoid the "pressure on the knee"...
  4. Amy - If you are looking for some good recipes, try the cookbook "Saving Dinner" by Leanne Ely - it's not a gluten-free cookbook on purpose, but many of the recipes are "naturally" gluten free . . . and they are all delicious. Your local library may have a copy, and if not, you can request one. Also, there are a lot of dinner recipes on www.eatingglutenfree...
  5. Kristen - Check out the cookbook "Saving Dinner" by Leanne Ely - it's got a lot of GREAT recipes that are naturally gluten free. (Some of the recipes call for flour or suggest you eat things with whole wheat rolls . .. don't do that, naturally!) Also, check out the website www.eatingglutenfree.com. There are a ton of great gluten free recipes...
  6. Julie - With my pizza crust recipe, I almost always bake several at once and then freeze most of them in a gallon Ziplock. (They are about the size of a medium Boboli crust.) Then I just defrost one in the microwave for 30 seconds or so, top it with sauce, cheese, etc., and then bake it for another 15 minutes at 400 degrees or so. It works really...
  7. Marilyn - DH is like one of those Vinn Diagrams you had to do in Math class when you were younger. You draw a big circle and write "celiac" in it, and then draw a smaller circle inside the big circle and label it "DH". In other words, all people who have DH have celiac, but not all people who have celiac have DH. I have 1 mother, 3 aunts, 2 sisters...
  8. My first suggestion is to sit down and make a list of all the things you already eat that are gluten free. That way you don't end up eating steak and potatoes every single night . For great dinner recipes, check out the cookbook "Saving Dinner" by Leanne Ely. I believe she also has a website at Open Original Shared Link. She doesn't TRY to make...
  9. Oh, my gosh! I'm rolling!
  10. Sorry, sure this thread has gone far past this comment, but it made me laugh so hard when I read it that I just had to quote it again
  11. Congratulations on your sucessful party! I'm glad the cake was a hit, but mostly I'm glad you've got a successful "occasion" under your belt. Having a party go with a bang like that makes you realize that you can go gluten-free and enjoy it! Way to go!
  12. jules - Talk to your sis-in-law about apnea. Childhood apnea is rarer than adults having it, but it does happen. I've also heard that lots of people who are later diagnosed with sleeping disorders were first diagnosed with ADD or ADHD. (Inability to sleep well leads to inability to concentrate.) So if he has trouble concentrating, that might be another...
  13. Have they checked her blood sugar levels? That excessive thirst and frequent urination might be a sign of juvenile (Type I) diabetes. If they haven't checked it yet, INSIST that they do so. And if they have checked it in the past, insist that they do so again. This isn't something to take chances with.
  14. You know, your doctor saying that you will never be aware of accidental glutenings is wrong. My mom's main symptom after being glutened is irritability/anxiety. She starts bouncing her legs up and down and feeling "on edge". She felt that way all the time before going gluten-free, and it was several months after she went gluten free that she realized that...
  15. I'll tell you one thing, the longer the doctor's fingers are, the less it hurts to have him/her check you!
  16. "Rice krispy" treats made with cocoa pebbles with 1/2 c. coconut. YUM! They taste like those samoa girl scout cookies.
  17. In answer to your question number 1: My husband just brought home an article from one of his lab magazines that was about celiac. It said that most people (90% or more) who have celiac have the DQ2 or DQ8 genes, but there are some people who have a recombinant form of the gene that comes from having both a DR7 and DR5 gene (I'm pretty sure those were...
  18. It surprises me that you had midwives that were willing to do VBAC after 2 c-sections. Here (in Utah) they won't let you do VBAC after 2 c sections because of the increased risk of tearing your uterus. Midwives won't touch you.
  19. Find a post by nini and then click on her homepage link at the end of her signature. She's got a newbie kit that should help you. I've got a ton of recipes/tips if you'd like them. Just PM me and I'll send you a link. My daughter started eating gluten-free prior to her first birthday, so I've been through the age you're currently dealing with. The...
  20. I concur . . . recovery from vaginal birth is MUCH easier than recovery from a C section. And recovery from a natural (no drugs) birth is much easier than recovery from birth with an epidural. I've had all 3, and would so much prefer to do it the "natural" way. Of course, I have fast, hard labors, so when I did it naturally, I was only dealing with things...
  21. Here's the one I use. It's not very difficult, and it tastes just like "normal" cornbread. I usually use the larger amount of sugar . . . but if you want less, go for it! gluten-free Cornbread 1 c. corn meal 1 c. featherlight flour mix 1/2 tsp. Xanthan gum 2 - 4 Tbs. sugar 1 Tbs. baking powder 1/2 tsp salt 1 c. milk 1/4 c. oil 1 egg ...
  22. Sweetfudge - I'm here in the Provo/Orem area. PM me and lets get together and bake bread . . . sometimes watching someone do it helps you figure out what's going on when you do it yourself. Or just look for me at the GIG meeting tomorrow night - we can set up a time then. In the meantime, here's a big list of Open Original Shared Link. And...
  23. Hey! I'm SO GLAD you were able to find out what was wrong! Good for you for pursuing it! Sometimes it takes a lot of courage to insist that you know something is wrong when your doctors keep pooh-poohing the whole idea. I hope your docs will be able to do something right now to aleviate your pain. Best Wishes! Betsy
  24. And it's not terribly difficult to find turkey breasts, so if you had to cook your entire meal, at least you wouldn't be left with 20 lbs. of turkey "leftovers" And if you cook it for yourself at Thanksgiving, you can save some of it (in the freezer, of course) for the family bash at Christmas time. You can also cook apple pie filling or pumpkin...
