ARCHIVED Raisin Cinnamon Bagel Recipe
mamatide replied to mamatide's topic in Gluten-Free Recipes & Cooking Tips
Have you ever used coconut milk as a substitute? I have in cakes and it turns out well and not as coconutty as I would have thought. -
ARCHIVED How To Freeze Homemade Pizza Crust?
mamatide replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
I recently tried the pizza crust recipe in Annalise Roberts' cookbook and the recipe actually recommends that you make it in advance (several hours) of eating it - or freezing the crusts (instructions for wrapping are included). The crust is substantially different in texture from the one on Carol Fenster's website (savorypalate.com) in that it's fluffy... -
Not a problem! You can still make pizza with extra tomato sauce and toppings (no cheese) - I did this for a recent gluten-free/CF birthday party and it was good. Or spread pesto on the crust instead of pizza sauce. I added feta cheese but I'd imagine that an assortment of exotic mushrooms and some sausage meats would be fantastic as well. Good luck...

This is the pizza crust I use most of the time and it doesn't call for any eggs... The website also provides diagrams. Good luck, Open Original Shared Link mamatide

I contacted Carol Fenster, Ph.D. and her publishers to get permission to share this recipe with you all because it is a wonderful recipe for real bagels that are hard to distinguish from the "real thing". They were pleased to give us permission to share this recipe in our forum! I hope you will enjoy this as much as we do in our home. Here you...

Thanks! Sounds delicious. Question for you - I see you got the recipe from a Gluten-free Casein-free site but was wondering if I can just make them with regular milk? Do you think it would make a difference? Also, can anyone suggest a substitution for the bean flour? I don't stock that but do stock sorghum, arrowroot, white/brown rice, corn, millet...

ARCHIVED Secretiveness
mamatide replied to BFreeman's topic in Parents, Friends and Loved Ones of Celiacs
You know, you talk about being "outed" by others and I already see this in my 5yo. My DH(usband) is always outing her Celiac disease. I think it's quite innocent really but I can see my daughter's face drop when he does it. I've been meaning to talk to him about that but didn't quite know how to broach the subject... any ideas? mamatide -
ARCHIVED Pamala's Chocolate Chunk Brownies
mamatide replied to imsohungry's topic in Gluten-Free Recipes & Cooking Tips
Can you eat dairy? You should really try these brownies (scratch). I've made them several times and everyone raves about them - just don't tell the kids that they have beans in them! I got the recipe from Canadian Living Magazine. Too-Good-To-Be-Gluten-Free Brownies Note: look for adzuki (or azuki) beans (small sweet red beans popular in Japaneze... -
ARCHIVED I Made gluten-free Cinnamon Raisin Bagels
mamatide posted a topic in Gluten-Free Recipes & Cooking Tips
Who would have thought that I could make gluten-free bagels that taste, well, like bagels? I recently purchased Carol Fenster's "Wheat-Free Recipes and Menus" and tried the bagel recipe in it (she also has a bagel recipe in her Gluten-Free 101 book but it wasn't as yummy-looking - different formulation). While the bagels aren't all that think, they... -
ARCHIVED Mom Of Newly Diagnost Toddler Seeking Help
mamatide replied to AmyTopolski's topic in Parents, Friends and Loved Ones of Celiacs
When we went gluten-free for my 5yo daughter back in April the others in the house were continuing to consume gluten in the house. Before long I became the "crumb-nazi" leading the inquisition every time I saw a toast plate in the living room - who ate this? where did you eat it? did you wipe off your clothes? did you wash your hands? did you clean... -
I can't seem to find the recipe I used before that was so good (in mine you had to cut the corn off of cobs and mix them into the batter that way) but this recipe is very close to it. The bacon drippings are key! And from what I can see it's gluten-free - cornmeal is usually gluten-free right? Open Original Shared Link Good luck! Sounds delish.

Here's a new one. Hollow poop. Like a hollow log in the forest... I thought I'd seen it all... Anyone else?

ARCHIVED Any Gluten Free Restaurants In Bangor Maine?

We're looking to take a short trip, one possible destination is Bangor Maine. I can't seem to find anything online about gluten-free or Celiac-friendly restaurants there? Can anyone help me? mamatide -
ARCHIVED What Do I Feed Him?
mamatide replied to jayhawkmom's topic in Parents, Friends and Loved Ones of Celiacs
If it were me, I'd give him whatever I was eating (but processed in a blender of course). Stew. Spaghetti Sauce and gluten-free pasta. gluten-free cereal (cheerio-type stuff gluten-free of course). Mashed avocado is a GREAT food. Beets. Carrots. Mashed potatoes. So so much. Skip the processed baby foods and look to your own kitchen. You'll save an... -

ARCHIVED Celiac Disease + Child Abuse
mamatide replied to Jay Silverman's topic in Parents, Friends and Loved Ones of Celiacs
I've often thought of this, especially when people say that my DD is very fortunate to have me for her Mama since I pursued a diagnosis and went 100% gluten free for her, finding ways to make her transition as normal as possible, making my own bread, making her feel better about standing out... etc. Then I think about people I know who would put their... -
ARCHIVED Can Kids Go Nuts When Gluten Removed?
mamatide replied to Mia H's topic in Parents, Friends and Loved Ones of Celiacs
Hi Mia, Sorry you're going through this... just wanted to share that my DD most defintely got worse than ever in the first week of gluten-free (and if it were me I'd leave the tapioca in her diet until you give gluten-free a little longer) - she was rolling around on the floor wailing in pain from her bloated belly. She was NASTY (and I mean nasty). ... -
ARCHIVED An Almost-great Experience At Swiss Chalet In Smiths Falls
mamatide posted a topic in Gluten-Free Restaurants
My DD (5yo) has been gluten-free since April 1st this year and a treat for her was to go to a gluten-free restaurant whilst on vacation last week. We had all good intentions to go to Outback but when we arrived found it was closed for lunch so we ix-nayed that and went to Swiss Chalet. I did everything right - called first and talked to the manager who... -
Hi all, New Brunswicker checking in. Anyone ever check out the Moncton celiac association chapter? The website makes the gang all look pretty aged... mamatide

ARCHIVED Colorations Play Dough In Canada?
mamatide posted a topic in Parents, Friends and Loved Ones of Celiacs
The only site I've found online that lists colorations play dough requires a US zip code to order. Before I coerce a US friend to order and then mail me some, I thought I'd ask here whether anyone had managed to order some or purchase some in Canada? Before you suggest making my own, I did just that and ended up with a rubbery mass that my 5yo said... -
I thought all panties were gluten free... now I have to check my drawers LOL!

I'm waiting for blood tests to check myself out for Celiac disease. We're pretty sure (through very positive dietary response) that our 5yo DD has it and I've had symptoms that could be attributable to Celiac most of my life. My question - my stools often have little bits of food in them. Like small (1/4 cm or smaller) bits of very green lettuce (I think...

ARCHIVED Deep Fryer?

ARCHIVED Best gluten-free Pie Crust And Flours
mamatide replied to floridanative's topic in Gluten-Free Recipes & Cooking Tips
Thank you!!!! Thank you!!!! Thank you!!!! It's the end of strawberry season here and the family's been asking for a strawberry-rhubarb pie non-stop. I make, like, 2 pies a year (this one and pumpkin in the fall) so I'm not exactly a seasoned pie maker. This piecrust was fabulous! I didn't have any crisco so I used butter (naughty, but heck it's once... -
ARCHIVED How Soon After Starting A Gluten Free Diet...
mamatide replied to andersonfam06's topic in Parents, Friends and Loved Ones of Celiacs
My DD is 5 years old and we are 3.5 mos gluten-free. She's gained 1.5 lbs so far. More importantly however, she just LOOKShealthier - her shape is changing. No more bloated belly, and a sold 1/4" on each thigh. The other changes make us pay less attention to the scales. Incidentally, she was completely beneath the curve at 1yo as well. It took us until...
