  1. Thanks everyone! I'm still a bit confused and will probably continue pulling out all of my ingredients every time I bake. I'm usually a fairly bright person...but I just don't quite get this yet. Maybe I will soon. You all definitely gave helpful responses...I'm just waiting for that little bell in my head to go "ding" and suddenly I understand...
  2. Oh, bless your heart. I hope you weren't like me and bought Ener-G bread as your first gluten-free bread. Although Ener-G does have some good products, most of us (note I did not say all of us), think Ener-G breads make a better brick than bread. Like others have suggested, Kinnikinnick, Chebe, etc. make good pre-made bread or mixes. And for...
  3. Hey everyone, I have all of the flours I like to use when baking, and my pantry is pretty well stocked as far as gluten-free baking is concerned. Anyway, I was going to combine my flours that I typically use (say 1 cup brown rice flour, one cup white rice (or a bean) flour, and one cup tapioca flour). I really want to have my own mix...instead...
  4. Oh, now...you're injured...no need to hobble anywhere. Go to the store, and get in one of those motorized carts and have people put the groceries in the little basket for you! This is a true story...I almost got flattened by a family of motorized shoppers in Wal-Mart one day. They came up behind me like they were racing. I would have been injured...
  5. In your topic you asked, "why do I do this?" First of all, it's a habit and eating gluten is all most of us have known as "normal" our whole life. I'm sure that those people in "whatever-country" who eat chocolate covered grasshoppers would have a hard time giving them up...it's normal to their culture, and they crave them. So, "why do I do this?"...
  6. Well, the topic pretty much sums it up...my baby loves the beat of rap. The other day he accidently turned the TV to a rap music station...and let me tell ya...my boy can dance! It is hysterical! He starts off bobbing his head (looks like a duck), then he starts marching, then swings out his legs...meanwhile, his arms are bouncing and he's tries to...
  7. My hubby and I made gluten-free fried chicken strips! Boy were they great! I put one egg and one cup milk in a bowl. Then, in a ziploc, I put: 1/2 cup each rice and tapioca flour 1/2 cup cornmeal (gluten-free) paprika, salt, pepper, garlic powder, and onion powder to taste 1 tsp. baking soda 1 tsp. baking powder Placed boneless...
  8. YUMMMMM! Did you come up with this recipe yourself? I am printing it now! Thank you so much for sharing! -Julie
  9. I just bought a new Carol Fenster cookbook. One of the things I want to try first is the carrot cake. I'm hoping it is really good...if it is, I'll post it for you. I have made her Zuchinni muffins, and oh my goodness, they were delicious!
  10. Excellent resources Hathor, thank you! -Julie
  11. How ya feeling peacenlove, Have your bladder spasms calmed down? Take Care, Julie
  12. Good for you! I just wrote today..yesterday ...recently in a post that I made gluten-free pizza and brownies from "scratch" and they turned out. It absolutely made my day! So, I totally understand, and actually, with gluten-free baking, that was not a "little thing" you did. I ate Amy's frozen meals for the first month I was gluten-free (that's how I...
  13. Hi there! I have a question. Do you know of a good gluten-free vegetarian website? Technically, I'm no longer a vegetarian, but I am not fond of meat at all... and 90 percent of the time, make it only for my hubby. I don't really want "exotic" dishes with veggies I've never heard of before. (Mainly because I don't live close to a health food...
  14. Again, thank you all for your support. I am feeling a little better. I made a yummy gluten-free pizza and gluten-free brownies...all from scratch! (well, I didn't milk the cow...but I did read the recipe) And yep, I LOVE country music. Although I appreciate and like many songs from all genres. I'm not that fond of rap; however, my 1 year old...
  15. Ok...this is not my favorite topic...but yep, ME!!!!!!!!!!! I suffered a long, long time. I once took mag. citrate and 2 enemas to get myself to "move." If I gluten myself, the first things to hit me are fatigue, joint pain, and the big C. I only get D if I have a stomach flu or something. As long as I stay gluten-free, I don't have the...
  16. No, Betty, your problems are just as important. And they are not minor, if in your eyes, they are not minor. Everyone gets equal support. If you are scared and hurting, come vent and get the support you need. Prayers headed your way. Blessings and a hug, Julie
  17. Betty, My prayers go out to you. I had a hernia repair when I was a toddler, but praise God, have never had another one. My best wishes to you. I would like to thank everyone who replied. You all are wonderful support. There are two country music songs that kind of sum up my feelings on all of this health chaos; I often think of them whenever...
  18. Hey everyone, For anybody who reads my posts/replies, you all know I'm a fairly "upbeat" optimist. But I just need to cry, vent, or something...truth is I'm scared. Illness in my family and death at an early age (30's) is very common. Cancer affects nearly everyone in our family: My grandmother, grandfather, mother, great aunts, etc. ...
  19. I just had a thread a few weeks ago about muffins I ruined (totally dry and tasteless) from a mix. Thank you for this recipe! I've got a few "from scratch" recipes for muffins...I'm definitely going to stick with these from now on! -Julie
  20. Yep, I have the same issue with the bloating b/c of IC. I often can't zip my pants all the way...when that's the case, I just put on a long t-shirt to hide my underwear (It's nobody's business if I'm wearing bikini cut or my "granny panties" that day!) Good luck to you, Peacenlove, bladder spasms can indicate any number of things. Make an appointment...
  21. O.k...got my cookbook Wheat-Free Recipes and Menus; 2004 Carol Fenster, Ph.D. pg. 210-211 (11 years of college drilled "document your source" into my head). Baked Doughnuts 2 C gluten-free flour blend 2 tsp xan. gum 1 tsp. gelatin powder 1 1/2 tsp baking powder 1 1/2 tsp baking soda 1/2 tsp. salt 2 tsp. ground cinamon...
  22. HA! How funny...that's me...eating donuts and drinking a Diet Coke in order to "keep down the calories." I'll be glad to post the recipe. Give me 'til tomorrow. I think the recipe is in Carol Fenster's cookbook. When I go downstairs to cook dinner, I'll find it. Happy cooking. -Julie
  23. Wow! Thanks everyone. I've been craving some pancakes, and the kind that my mom made were very thin and not too "bready." I will definitely give your advice a try! Many thanks. -Julie
  24. Hey everyone, I just had to share this because it cracked me up. The other day, my hubby and I decided to buy liners (looks like a trash bag) for our kitty litter box. Well, I came home and was scooping out the old litter, and I decided to use the new liners. As I read the box to see if there were any tips on cleaning up cat poop, I found the...
  25. O.k....here's my 2 cents worth (and I've discussed before that I was no science major in college)...so I make no promises as to the accuracy of what follows. I had my last bag of xan. gum in my pantry in an air-tight container. It lasted a couple of years. Then, it started to stink. Because it had never stunk before, I assumed it had gone bad. ...
