  1. I fit all the descriptions of a nightowl and I usually sleep 8 hours a night, but after 1 or 2 AM. But the sleep doesn't seem to help. I wake up as tired and shaky as I went to bed. I was just wondering if the 11-2 idea was based on a preset universal rhythmn that we can't escape, whether we are nightowls or early birds. Are there any medical professionals...

  3. Celiac and other allergies have apparently done a number on my adrenals. Is it just anecdotal rumor that adrenals do most of their repairing while deep sleeping between 11 PM and 2 AM, or is there solid science to back that up? If it IS true, what if a person is a nightowl? Could that be one contributing reason for adrenal burnout? How would a nightowl...
  4. Creative Soul, How long did it take for you to see results after eliminating everything? Did you have any trouble with accidental glutenings or cross contamination along the way?
  5. All of these regimens sound great and well thought out. It sounds like you all are really working at it. Here's my question. So do you feel good on a daily basis? Do you feel you are reaping the benefits of your self discipline? I do not feel good, pretty much all the time - it seems no matter what I try. I'm still searching.
  6. Still wondering.... How bad are the baked goods when you just leave these questionable things like xanthan or guar gums out? If they aren't absolutely necessary, the solution is to just go back to baking simply. Things might not be quite as springy and hold together quite as well, but it would sure be better than putting up with a 'reaction' I would think...
  7. When I emailed enterolab awhile back, that's exactly what they said. They said they were planning to submit his research to a publication (one of the major medical journals) by the end of 2006 or shortly thereafter. But they said it could take 6 months for the journal to respond and publish it. If that is what has happened, then he is now at the mercy...
  8. Is xanthan gum or guar gum absolutely necessary? What if you just left them both out? Do they effect the texture that much?? Just asking.
  9. I had similar results to you, plus even malabsorption. I still came up negative on the blood tests.

If these companies are not stating the sources (wheat, soy, corn, etc.) of their ingredients on their labels because they are ASSUMING that they won't hurt anything, then that's not OK in my opinion. Some of us ARE super sensitive, at least when first going gluten free, and wouldn't dream of buying something processed from...

  13. I certainly hope it's not enough to be a problem. But I'm one of those who has not gotten better yet since going gluten free several months ago and suspects cross contamination. So I'm checking under every rock.

  15. I have never heard that about the padding on the feet. I couldn't figure out why the bottoms of my feet hurt so much lately. Where did you hear that and why does it happen? Anyone know?
  16. Andrea, Question on the sliceable cashew cheese. Is there a way to get less air whipped into it? It is great, but might be better without the air bubbles that give it a spongy texture. Maybe I did it wrong. This is such a blessing when you can't have dairy anymore! Thanks!
  17. The agar agar I used had no particular smell. It's sad to say, but I probably wouldn't trust something that honestly smelled bad. But I'm no expert on agar agar. Sorry. Maybe someone else knows for sure.
  18. Rice Dream 'claims' that although the rice milk contains gluten, their vanilla ice cream does NOT. Sure would be nice to be able to trust them. But ultimately, a food manufacturer or restaurant is only as reliable as the integrity of the people who make the food. Scarey thought. I should try eliminating it altogether just in case. I have so few treats...
  19. I'm also curious if the gluten-free diet would help someone lose weight even without worrying about CC, or if the diet only works for weight loss if you're 100% gluten-free. Nancy
  20. My family won't be tested either. In our case it would require Enterolab type testing and money is an issue there. But the main reason is that they honestly don't want to know. I'm afraid it will have to wait until they get sick enough to be out of choices. Another sad reason is that they honestly think this is all a bunch of hooey.
  21. Sorry, it's been posted before, but I have forgotten. Would someone please clarify exactly what constitutes a "first degree relative" or a second or third, etc.?   22. I've never been very successful with Chebe either. I just think tapioca flour needs to be mixed with something else in order to not have the texture of rubber bands and appear underbaked. I did make successful bread sticks with Chebe once. But I added the cheese and eggs. I can't anymore. So to be fair to Chebe, maybe it works fine when you add exactly...
  23. I laboratory tested as having a casein intolerance and was told it was genetic and permanent just like gluten. The same with eggs. They are all 3 inherited, genetic protein allergies. Can these kinds of casein allergies and egg allergies be temporary? I was told not.
