Pudding Spice Cookies
1 cup soft butter or butter flavor Crisco
¼ cup sugar
¾ cup brown sugar
1 tsp vanilla
1 pkg instant Jello pumpkin spice pudding
2 eggs
2 ¼ cups gluten-free flour mix
¾ tsp xantham gum
1 tsp baking soda
Hershey cinnamon chips
2 tsp cinnamon
1 tsp ground ginger
½ tsp ground nutmeg
½ tsp ground ginger
Pre-heat oven to 325 F.
In a separate bowl, stir together flour, xanthum gum, baking soda & spices.
Combine, with a mixer, butter & sugar. Add vanilla & pudding: beat until smooth. Beat in eggs. Mix in, a little at a time, the flour mix. Stir in chips or nuts.
Spoon & press onto an ungreased cookie sheet. Bake about 8 minutes.
If you use a mix, like Pamela’s, leave the xanthum & baking soda out.
You can switch up the pudding & chip flavors & omit the spices. Like chocolate pudding & chocolate chips

I like nonsense, it wakes up the brain cells. Fantasy is a necessary ingredient in living. It's a way of looking at life through the wrong end of a telescope, which is what I do, and that enables you to laugh at life's realities. -- Theodor Geisel
