    Flour Tortillas (Gluten-Free)

Reviewed and edited by a celiac disease expert.

This recipe comes to us from jmreed in the Open Original Shared Link.

    Ingredients:
    2 cups brown rice flour
    1 teaspoon xanthan Gum
    1 teaspoon sugar
    ¼ teaspoon salt
    2 eggs
    3 cup water
    2 tablespoon olive oil

    Celiac.com Sponsor (A12):
    Directions:
First mix all the dry ingredients into a bowl. Add the wet ingredients and mix well. Pour 1/3 a cup of the mixture into a good nonstick medium sized frying pan (I have also made these on a griddle but that requires picking up the griddle and tilting it to make larger rounds). Tilt the pan in alternating directions to cover the bottom of the pan. Cook on medium-high heat until the edges begin to pull up from the pan. You will need to pull up on the edge (fingers work better than a spatula - but be careful) and flip the tortilla. If the tortilla breaks try cooking it longer before flipping or you may need to use non-stick spray on the pan. Flip the tortilla ever 2 minutes or so until it puffs up like a balloon. After each tortilla you will need to let the pan cool down a little before starting the next one(Otherwise you get holes in the tortillas - I use 3 pans and alternate between them). Let the tortillas cool for 10 minutes or so and they will become flimsy. This recipe makes approximately 12 tortillas.

I am on a Candida diet and can't have sugar or xanthan gum right now. Could I omit those ingredients and still have it hold together and taste okay?

You don't really need the sugar and for the xanthan gum, replace using 1/2 teaspoon guar gum or 1 teaspoon milled flax seed or 1 teaspoon coconut flour.

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

I like to think of eggs as a “chameleon food;” dress them up any which way you’d like, and they make an excellent breakfast, lunch, or dinner. The same goes for this spicy
Mexican spin on ordinary sausage and eggs.
Canned beans are an okay substitute but Serrano chilies are small and don’t take long to roast. You can remove the seeds to reduce the heat, but the flavor from fresh roasted chilies adds a smoky dimension to the dish. Leftover rice can also be added in with the beans and chilies for added texture and filling, but to prevent the eggs from getting too dry, I would add another medium sized tomato. This is a simple recipe but serving it family style alongside a basket of tortillas creates a charming authenticity.

    4 large eggs
    ½ pound chorizo sausage,...

This version of a cold Mexican soup will refresh both your palate and your culinary repertoire. It makes great base, and holds up nicely to other flavors. Adding roasted chili or jalapeño peppers or cherry tomatoes gives it a surprising bite. For a more rustic texture, omit the blender altogether. Dice the tomatillos into small chunks, and work the avocados well with a wooden spoon or fork. This soup makes wonderful meal on a warm day.
    Ingredients:
    3 ripe avocados
    5 ripe tomatillos
    3 cups chicken stock
    3 tablespoons fresh cilantro, chopped
    2 gloves garlic, chopped
    1 ½ cups heavy cream
    2 teaspoons lemon juice
    Salt and pepper to taste
    Directions:
Bring a pot of water to boil and cook tomatillos for five minutes, until tender. Roughly chop and add to a blender a...
