    This is a wonderful soup for a cold Winter's day, enjoy it with your favorite gluten-free crackers!

    Serves 4

    Creamy Vegan Lavender Spinach Soup (gluten-free)Ingredients:

    • 1 Tbsp. Earth Balance Vegan Buttery Spread
    • 1 large sweet white onion, diced
    • 2 cups fresh baby spinach
    • 2 large zucchini, diced
    • 2 tsp. fresh mint, finely chopped
    • 1/3 tsp. orange zest
    • 1/2 cup quinoa, cooked
    • 4 cups green tea, brewed
    • 1/4 tsp. sea salt
    • 1/4 tsp. black pepper
    • 1 ripe avocado, peeled, cored and diced
    • 1/8 tsp. curry powder
    • 1/8 tsp. dried lavender
    • 12 macadamia nuts, crushed

    Directions:

    1. In a large saucepan over medium-high heat, melt butter.  Add onion, spinach and zucchini; cook until onions are translucent, approximately 5 minutes.  Add mint, orange zest and quinoa; cook for another minute.
    2. Add green tea; reduce heat to medium.  Cover and cook for 20 minutes or until quinoa is tender.  Add sea salt, pepper, avocado, curry powder and dried lavender.
    3. Add spinach and green tea mixture with macadamia nuts in a food processor.  Puree until smooth; serve immediately.
    4. Enjoy!

    Makes about 2 cups
    Ingredients:
    1 cup gluten-free buttermilk
    1 cup gluten-free mayonnaise
    ¾ teaspoon salt
    ½ teaspoon onion powder
    ¼ teaspoon garlic powder
    1 tablespoon dried parsley
    ½ teaspoon dried marjoram
    ½ teaspoon dried thyme
    ½ teaspoon cider vinegar

    Directions:

This soup is easy to make, hearty, nourishing, and delicious. It is wonderful fresh off the stove, or you can make it ahead of time and freeze it for later.
    Ingredients:
    2 pounds butternut squash, peeled, split lengthwise, seeded, and cut into 2x2-inch chunks
    2 tablespoons extra-virgin olive oil
    2 Granny Smith, Braeburn, or Golden Delicious apples, cored and split in half lengthwise

    Stuffed chicken soup with ginseng, what the Koreans call Sam Gae Tang, is a delicious, fragrant soup that is surprisingly easy to make.
    In Korea, it is commonly made during the hot summer months, when Koreans like to drink hot soup or stews. The Koreans believe that hot and spicy liquids help the body to regulate itself and stay cooler in the summer heat.

    In this easy summertime salad, sweet and tangy balsamic glaze balances nicely with juicy watermelon, pungent feta, slightly bitter arugala to deliver a delicious salad with an air of sophistication.
    Ingredients:
    8 ounces baby arugula 10 cups seedless watermelon chunks ½ cup sliced red onion 8 ounces feta cheese, crumbled ½ cup chopped cilantro, as desired 2 tablespoons balsamic vinaigrette Directions:
    Arrange arugula over large platter.
