    Lemon Cherry Guacamole (Gluten-Free)

    This recipe makes a wonderful dip that can be served with your favorite gluten-free chips.

    Gluten-Free and Vegan

    Lemon Cherry Guacamole (Gluten-Free)Ingredients:

    • 2 ripe avocados, peeled, pitted and diced
    • 2 tsp. olive oil
    • 2 cups fresh cherries, pitted and halved
    • Juice of 1lemon
    • 1/4 tsp. fresh lemon zest
    • 1/4 tsp. sea salt
    • 1/4 tsp. freshly ground black pepper
    • 1/4 cup finely chopped fresh cilantro, plus more for garnish

    Instructions:

    1. Preheat grill to medium heat.
    2. In a medium bowl, gently toss cherries in olive oil. Place cherries into a large piece of tin foil and fold to seal foil at the top.
    3. Transfer cherries in foil to the heated grill; cook for 10-12 minutes or until tender.
    4. Meanwhile, in a medium bowl, mash avocados until it forms a chunky consistency.
    5. Remove cherries from grill; set aside for 2 minutes to cool then add to the guacamole mixture along with remaining ingredients; mix well to combine.
    6. Serve immediately. Garnish with additional fresh basil. Enjoy!

    Sounds like a delicious recipe! Just wondered whether I should use cilantro (as listed under ingredients) or basil (as mentioned in directions)?

    This recipe comes to us from Teresa Wendt.
    2 cups of Tapioca Flour
    1 egg
    1 tablespoons of oil
    1/3 cup of water
    ¼ cup of powdered milk
    1 cup of Parmesan cheese
    Mix dry ingredients with a whisk until well blended and lump free. Mix wet ingredients then combine with the dry. It should have the consistency of Play Dough. My oven temps vary so I usually set it on high and bake it until its light brown (400 degrees for 15-18 minutes).
    Note: This recipe can also be used to make bread sticks or pizza crust.

    As summer comes to an end, this fresh salad is a great way to capture the last of the sunny months. Citrus brings out the best in beets and compliments the sweet blueberries. The creamy dressing pairs nicely with other fruit as well, I like to make a little extra for my lunch or breakfast.

    1 pint blueberries
    2-3 beets
    ½ cup plain yogurt
    Juice from 1 orange, divided
    ¼ cup feta cheese
    2 tablespoons olive oil
    2 teaspoons fresh lemon juice
    2 teaspoons fresh thyme, minced
    Salt and pepper to taste
    Directions:
    Preheat oven to 400°F.
    Remove the tops and roots of the beets and peel them. Cut beets into ½-inch chunks and spread out on a baking sheet. Toss with olive oil and thyme. Roast for 30-40 minutes, until tender.

    Pecan Cauliflower Bites (Gluten-Free)
    This lovely dish makes an outstanding appetize, side dish with your favorite meal, or a nice h'orderve at a party.
    Gluten-Free and Vegan
    Serves 2
    Ingredients:
    1 large head cauliflower 1 tsp. ground cinnamon 2 Tbsp.  extra virgin olive oil 1/2 cup ground pecans 1/4 tsp. sea salt 1/2 tsp freshly ground white pepper 2 Tbsp. balsamic vinegar, for serving Directions:
    Preheat oven to 375 degrees F. Line a baking pan with tin foil. Cut cauliflower into florets or steak-like slices. Place into the baking pan. In a small bowl, whisk together remaining ingredients. Drizzle over cauliflower. Roast for 25 minutes or until golden brown. Place into the fridge overnight in a glass bowl, covered.
