    Sugar Glazed Holiday Nut Mix (Gluten-Free)

    Celiac.com 12/21/2016 - Here's an easy, tasty recipe for those sugar-glazed holiday nuts that everyone's always going so crazy about.

    Ingredients:

    • 2 egg whites
    • 2 tablespoon water
    • 1 pound pecan halves
    • ½ pound cashews
    • ½ pound almonds
    • 2 cups white sugar
    • 1½ teaspoons salt
    • 1 teaspoon ground cinnamon, to taste

    Directions:
    Heat oven to 250 degrees F (120 degrees C). Grease one baking sheet.

    In a mixing bowl, whip together the egg whites and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.

    Add nuts to egg whites, stir to coat the nuts evenly.

    Remove the nuts, and toss them in the sugar mixture until coated.

    Spread the nuts out on the prepared baking sheet.

    Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

    Remove and place onto a wax paper, or paper towel-covered pan or plate.

    Allow to cool sufficiently before serving.

    Butter and fresh tarragon were once my go-to dressing for carrots, but my flaring sweet tooth recently pulled me in a slightly different direction.     Cinnamon and Rosemary Roasted Peanuts (Gluten-Free)
    This recipe makes a great snack that is perfect when you have a few guests over.

    Gluten-Free and Vegan
    Ingredients
    2 cups peanuts 1 tsp. fresh lime zest 1 tsp. fresh lime juice 1 Tbsp. ground cinnamon
    1/4 cup fresh rosemary, very finely chopped 2 Tbsp. extra virgin olive oil
    Directions
    Preheat oven to 350 degrees F. In a large bowl, combine all ingredients.
    Spread peanut mixture on a baking sheet with parchment paper. Bake for 20 minutes. Remove from oven; set aside to cool.

    Cashew Cumin Roasted Fennel Snacks (Gluten-Free)
    This recipe makes a great, healthy snack that is perfect to tide you over between meals!

    Gluten-Free and Vegan
    Serves 4
    Ingredients:
    4 large fennel bulbs, sliced into 1/2 inch pieces, reserving fronds 2 Tbsp. olive oil
    Juice of 1 lemon 1/2 tsp. lemon zest 1 cup ground cashews 2 tsp. cumin 1/4 tsp. sea salt Directions:
    Preheat oven to 375 degrees F. Lay fennel fronds in a large baking dish lined with tin foil; top with fennel bulb pieces.  Sprinkle with olive oil, lemon juice, lemon zest, cashews, cumin and sea salt. Bake for 25-30 minutes or until golden brown. Remove from oven; set aside to cool for 2 minutes before serving. Serve warm with a dollop of hummus, guacamole or salsa. Enjoy.

    Endive with Goat Cheese, Bacon and Pomegranate Seeds (Gluten-Free)
    Celiac.com 09/22/2016 - These simple endive appetizers will have your guests screaming "fancy!" while they happily make the plate disappear. Endive leaves and a few simple ingredients turn out one of the easiest, tastiest, most elegant appetizers.
    Ingredients:
    Endive leaves Goat cheese Bacon, crisp Pomegranate seeds Balsamic vinegar Roasted cashews, pecans or walnuts, optional Directions:
    Heat a broiler.
    Place endive leaves in a pan and top with goat cheese and crumbled bacon.
    Place pan under broiler for a moment until cheese begins to melt a bit.
    Remove and top with pomegranate seeds and drizzle with balsamic vinegar.
    Garnish with nuts, as desired.
    Serve warm.
