Endoscopy in 9 days after being low-gluten for a year. What to eat?

I didn't suspect that gluten was the root of my problems. It was discovered that I might be celiac by my neuro. Prior to that I had such a severe loss of appetite I barely ate, coupled with an aversion to many foods (really anything processed, bread, cereals etc) that I probably only consumed gluten once or twice a week for nearly a year. Since I had the positive ttg igg I was told not to consume gluten so I've been off and on. I read that I need to eat it so the biopsy is accurate, but with my neurological symptoms I get scared and eat gluten for two days and then stop for a day or two.

So I have 9 days until my endoscopy  - what do I need to eat to help my diagnosis if it is celiac. I saw a recommendation of two slices of bread - does it matter what type - is white worse then wheat? I have eaten a considerably larger amount of gluten the past 3 weeks then over the past year, but probably only 4 days a week average.  Suggestions?

Katie, it is hard to give you advice when we are not "walking in your shoes".  But if I were to risk terrible symptoms if would be for artisan breads, pastries  and cakes and not some tasteless old white bread.

I like your line of thought. lol. Homemade banana muffins it is.

some persons have found it easier, especially with nongut issues, to eat the gluten before bed...

I saw my gi today and he said to not worry about eating gluten. I have abdominal pain in the small intestine area and referred pain in my back, indicating pretty bad damage. So I'll just go without the gluten and do the genetic testing if needed.

Not to mention my hips and knees are killing me and I have really bad calf pains and horrible bloating after just 3 days of glutening. I don't think I could live like this for a whole week.

I agree Katie, the gluten challenge isn't worthwhile for some people.  Regardless of your test results, I think you know the answer is not to eat gluten anymore.  I hope you recover quickly from the damage.

      What you’re describing is actually very common, and unfortunately the timing of the biopsy likely explains the confusion. Yes, it is absolutely possible for the small intestine to heal enough in three months on a strict gluten-free diet to produce a normal or near-normal biopsy, especially when damage was mild to begin with. In contrast, celiac antibodies can stay elevated for many months or even years after gluten removal, so persistently high antibody levels alongside the celiac genes and clear nutrient deficiencies strongly point to celiac disease, even if you don’t feel symptoms. Many people with celiac are asymptomatic but still develop iron and vitamin deficiencies and silent intestinal damage. The lack of immediate symptoms makes it harder emotionally, but it doesn’t mean gluten isn’t harming you. Most specialists would consider this a case of celiac disease with a false-negative biopsy due to early healing rather than “something else,” and staying consistently gluten-free is what protects you long-term—even when your body doesn’t protest right away.

      Yes, I meant if you had celiac disease but went gluten-free before screening, your results would end up false-negative. As @trents mentioned, this can also happen when a total IGA test isn't done.

      I found at Disney springs and Disney they have specialist that when told about dietary restrictions they come and talk to you ,explain cross contamination measures tsken and work with you on choices. Its the one place I dont worry once I've explained I have celiac disease.  Thier gluten free options are awesome.

      Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.
