Okay what is the secret to cooking/frying corn tortillas - like to use for tacos etc? I try to use a little oil to make them crispy and some of them soak it all up and others are dry. I feel like I'm missing the secret to making these crazy things lol

I'm a taco expert! First, be sure to get corn tortillas that are labelled "gluten-free," and I use Guerrero or Mission brand.

Heat a skillet (I use an iron one) until it is very hot, then add about a teaspoon of oil (I use light olive oil for frying), and throw the tortilla on it and move it around to soak up the oil evenly.

Watch the tortilla closely, and it will start to form small bubbles on the surface. Wait until those bubbles more or less form evenly across the surface, but not too long because you don't want to burn the cooking or down side. When you flip the tortilla add a bit more oil and repeat.

Of course this could be done without oil, but would be less authentic. Use the same procedure when making enchiladas, but I use even more oil when making them so that they won't stick to the pan, or to each other when baking.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
