Clean grain to avoid cross-contamination?

I was given some whole organic corn. I want to run it through my mill and make flour. When asking about the processing of the corn, I was told, "Wheat on the other hand is processed on the same equipment as corn. We do have cleanout procedures which involves vacuuming clear the equipment, brushing/dusting, and finally flushing the system with 50-100 lbs of the material to be packed. I would not expect to find any wheat in the bag of corn you received. We do not test the finished products for the presence of unlike grains however." Would you trust that to be gluten free? Is there a recommended way to clean and dry before milling?

I would trust it, yes, to at least meet the <20ppm requirement for the FDA categorizing something as gluten free. But then, I'm not a super sensitive celiac and minor amounts of CC don't seem to cause a reaction in me. I think it is a positive sign that the source company was straightforward and gave detailed information about their cleaning procedures after running batches of gluten containing grains.

Yes, it sounds like it would be considered to be gluten-free based on their procedures.

I've been glutened by thinks marked gluten free, but with the warning about shared equipment. Contacted the company, similar clean out process to what you describe. I don't eat anything labeled that way anymore.

I should think it would. We're talking about whole kernel corn, right?

I agree.  The warning about shared equipment is vague, but the implication is clear: They are not sure.  So the responsibility is on me.

      @TempCloud  How are you doing?  I hope you aren't reacting too badly? I would most likely react like Trents.  That said, I have read accounts of some coeliacs not showing any symptoms after glutening, after a long break from eating gluten.  But should that happen to you, unfortunately it should not be interpreted as the 'green light' to go back to gluten.  I am afraid coeliac disease at the present is a lifelong condition, and so, too, must be the gluten free diet.  Here are some tips to try, to help you feel better.

      If it was me, within 2-3 hours I would be throwing up violently with excruciating abdominal cramps for 2-3 hours. When this phase was done I would go into the diarrhea phase for several hours. But every celiac is different in how they respond to getting "glutened".
