Im beyond frustrated on so many levels. I have always checked labels , have to read everything. Allergic to everything foods and medications. My skin has sores, my body aches my eye is effected, im actively dealing with all these lovely issues, sibo positive, ibs, high blood pressure now dealing with depression because my new doctors after 25 years of many test dancing around my disregarded celiac disease that I was half ass told im 1994 by endoscopy and colonoscopy stating to stay away from wheat and Ill be fine Im not.I had to reprove my disease with another endoscopy and colonoscopy. Had blood work with new gi and of course blood work shows fabulous, nothing wrong. Im not eating the foods im not supposed too.Im stressed and fired of fighting of my disregarded celiac.

I am so sorry you're going through this. It's completely understandable to feel frustrated, stressed, and disregarded after such a long and difficult health journey. It's exhausting to constantly advocate for yourself, especially when you're dealing with so many symptoms and positive diagnoses like SIBO, while still feeling unwell. The fact that you have been diligently following the diet without relief is a clear sign that something else is going on, and your doctors should be investigating other causes or complications, not dismissing your very real suffering.

      @iceman2026x, are you certain that CC from spices has been causing celiac reactions in you or is this part of a "shotgun" approach?

      Different people might have different answers, but for me I don't worry too much about cooking oils and salt. I read the labels to check that there isn't some kind of warning but that's about all. I'm not overly worried about pepper either. I eat a lot of black pepper. I buy Costco Kirkland whole pepper and grind it as I use it. A pre-ground pepper would give me more concern about cross-contamination. I buy most of my seasonings from Penzeys. Almost all of their offerings are gluten free and they are pretty good about labeling the few items that have some gluten. There are other choice out there but that's what I do. In this post and your prior post you seem to be very worried about some of the easiest things for a gluten free diet (except for seasonings, which can be tricky). Living with a gluten free diet is a marathon. All of us make some mistakes along the way but then we adjust and keep going. It should get easier for you as you get experience with it.

      Would love to get some input on this. Still trying to figure out what is causing my general fogginess. Thyroid labs all looked perfect, latest labs are borderline normal (I think). Please help!
